    Staff is friendly and down to earth. Ordered the OG, but lettuce wrapped, no bun. You get charged extra for lettuce wrap....and it is NOT worth it! They used the inner leaves, so it's like thin strips of lettuce versus (in and out) other styles that literally WRAP your burger. I like that you can specify how your meat is cooked, but unfortunately they don't know how to cook the meat. It was warmer than blue, but def not medium rare. No seasoning on the meat. Probably won't be back for another $15 burger (no fries, no drink)

    On our way to the airport we stopped in this complex that had a plethora of eats and Bearded Tang Brewery. We decided on primal cuts. We ordered the smash burger fries as well as the Korean wings. The guy behind the counter was very spacey not really paying attention to his surroundings, but it was quick service so I wasn't really worried about it. The smash burger fries were simply but full of flavor. Both my wife and I could have had a couple orders of them. The wings on the other hand were a bit squishy and very very saucy. They had a decent flavor, but I tend to look for a good crunch and a thin flavorful layer of sauce. We were craving wings so they served their purpose. If we're ever in the area again we would love to try more things. But there is also so many more places in this little area!

    PREMIUM PATTY. Craving the taste of umami burger but unfortunately the chain no longer exists. I sought primal cuts truffle butter burger and it satisfied the craving. The truffle burger was buttered up with truffle butter. Had a few mushrooms and raw onions that made the flavor pop. The patty was a decent size and not dry at all. If I had any impulse control this would be a complete meal, but I had to get the fries. The fries were drenched in truffle oil but not in a good way. The flavor was there but there was about a cup of oil sitting in the box of fries. I had to squeeze the oil out of each fry. I didn't know whether it was truffle butter or frying oil. It was a bowl of cereal. I didn't get a drink since their selection consisted of canned soda and a few premium bottled sodas. Something about canned drinks just doesn't taste the same. Despite the fries, overall it was worth the try for 24 dollars.

    I'm not going to lie, I didn't have high hopes for a steak place in a food court type venue. But this place was amazing I even thought to myself, how old is this meat and how long has it been sitting here. But omg it was so fresh and tender It's conveniently located inside rodeo 39. They have plenty of free private parking. Plus you can explore tons of other places after you eat here We went up and asked the girl behind the counter for some recommendations. We went with the ribeye cut and then you get one butter / sauce and two sides. (42 dollars) We also ordered a butcher burger, fries and two drinks. The total came to around 60 dollars. Which to be honest the steak was just as good as any steakhouse. And worth the price alone. When our food was ready we got a text and went back up to the counter to get it. One of the workers helped carry the food out to our table. I like how I can pick the meat and see it in the case, the service was great, i like that I can see the people cooking it as well, I think the price for steak is extremely reasonable especially when it comes with two sides, it literally took about 10 minutes for our food which was great and it's a great location for food lovers. I'll definitely be back again

    Tried the garlic smash and regular burger. It was okay... would say in n out is better in every metric (not even factoring in price). I will say that the burger meat portion was solid. I would go somewhere else if eating at rodeo39

    This steak sandwich was yummy but felt like it was missing something, maybe some more meat or arugula/onions. The bread is pretty thick but it's not too dense. The aioli was yummy tho, and the steak was nicely medium rare. The truffle fries were good but the truffle flavor was very mild and missing parmesan cheese.

    I'm impressed how good the butchers burger and shoe string fries were. Did no sun dried tomatoes and killed it without the bottom bun. Shoe string fries are in my opinion the best type of fries and primal cuts delivered. Customer service is pretty great. Forget in n out and come here you will not be disappointed.

    Credit Cards: They're accepted Restrooms: Restrooms found inside Rodeo 39 food hall. Visitation Rights: 1 time, but I can see myself coming here more often if i'm in the area. Location: Located inside the Rodeo 39 Food Hall next to the restrooms. Parking can be found in shared lot, but might take a while to find a spot depending on the time you go. Ambiance/Decor: Modern looking food stall with minimal seating. You can find available tables and chairs through out the food hall though. Entertainment: Sit at the bar and have a peak at the meat masters at work while they make your food. Service: Service was good. Food came out at a decent time. Food Of Choice: Shared the Butcher's Burger (comes with fries) which consisted of aged angus beef, swiss, garlic aioli, arugula, caramelized onion, and sun dried tomatoes on white bun. The butcher was very good. The meat patty was moist and tender and the fresh ingredients meshed well. Primal Cuts For Thought: Would love to come back to patronize the shop when I'm in the area.

    I've been coming to Rodeo 39 for awhile now and finally tried the primal cuts smash burger. I got it with the garlic aioli and wagyu patty for an extra $1. You can really tell a difference in the meat compare to other places. It was juicy and flavorful, potato bun was perfectly warmed and it didn't have too much sauce or cheese. Honestly this is one of my favorite smash burgers I've had. I would put it top 5 in OC for sure!

    I tried their Picanha and their burgers both are so good. The service is really fast and the workers are really nice. I will stay Rodeo 39 is sometimes a hit or miss with entertainment.

    Located inside Rodeo 39, Primal Cuts is a must try! Came with a bunch of family and friends and they all raves about this place. My husband and I got the Ribeye Steak with truffle butter and got fries and mashed potatoes as the sides. For $30-something dollars, the quality is phenomenal! Honestly, it was better than some of the pricier ribeyes we've gotten at some restaurants. It was SO juicy and flavorful (the truffle butter is a must if you like truffle). We're from out of town, but if we're ever back in the area, we will definitely be back here!

    OG Burger ($15) mostly bread...

    Eh. It's ok. I was craving a burger and Primal Cuts is the only spot that sells burgers in Rodeo 39. I ordered the OG Burger which comes out to $15 with tax. At that price I was expecting an above average, decently sized burger. Instead, the burger was quite small (very thin patty -- see pic), and quite frankly, mostly bread! The patty itself was cooked well and the complimentary ingredients (pickles, onions, cheese) were solid, but there was nothing "wow" about it. I wish the serving was bigger and the patty thicker (or give two thin patties with cheese in middle). The bun was fine. For $15, you can get something better at Rodeo 39, where there are so many options. Honestly I would have been just as happy with In-n-Out across the street.

Not wanting to choose one of the two eateries I chose each of the past two years, I went with The Stand to see if I can give them the 4th star that I've been trying to give them for the past year or two. The final verdict? No, unfortunately. This year, I was in a rather unique situation where I also had the option to double my party size, and The Stand had catering packages that would feed both party sizes: The Feast for 10 to 20 people, and The Big Feast for 20 to 40 people. But don't think The Big Feast is twice the size of The Feast; rather, the only difference is an additional platter of 20 half sandwiches/wraps. Otherwise, both will have a platter of 20 half sandwiches/wraps, a large gourmet salad, a large side, and a cookie/brownie platter. After much deliberation, I went with The Feast with Meyer Lemon Broccolini and a Sidekick of Chinese Chicken Chop Salad with Chips & Guac. I chose all this to avoid the need for flameless heating kits since I wasn't sure how they'd work. I was drafting an email to the catering team to add some supplementary instructions I overlooked initially, but after the FIRST15 to 20 minutes following submission of my order, Sydney from the Catering team gave me a call to ask for clarification on some details based on my email communication. Really appreciate how punctual she was at this, and she was happy enough to send out an updated invoice. However, I learned from Sydney that the Meyer Lemon Broccolini would need a flameless heating kit even though the catering website did not mention that. In fact, during my email communication prior to placing my order, I pointed out that the Meyer Lemon Broccolini and Red Ginger Green Beans weren't listed as vegetarian despite being vegetables, and they confirmed they were indeed vegetarian, but not vegan. I noticed these oversights were immediately addressed after I brought them to their attention. However, their website still indicates their cookies are vegan when they are not; I'm not going to bother with another email at this point lol. I had given them two weeks' notice for my order, knowing that the catering team can change it on their end. I didn't want just one flameless heating kit, so I decided to switch out the Chips & Guac for the Mac & Cheese, which is about $13 more. I arrived about 10 minutes before my scheduled pickup time, and I saw my catering order out in the open on a table where any customer could just grab it and go. Luckily, there were only a few customers inside, and when I stopped by my order, Kim came out to greet me. We recognized each other even 8 to 9 months after those technical difficulties spelled out in my last review update. I asked her to review my order with me before leaving, but when she said "Chips & Guac", the abstract record in my mind came to a screeching halt. I asked to see the invoice, and it was the older version from before I made the switch. I later found out they had printed my invoice too early even though their catering team said I could decide as late as the day before. Luckily, Kim checked the kitchen and needed only about 5 more minutes for the side of mac & cheese to be ready. She also let me keep the chips & guac even though she initially said she could swap it out, so that was nice at least. I also appreciate how they waited until my arrival to make a custom grilled cheese sandwich for my vegetarian guest, who enjoyed said sandwich. I also asked to put that guest's name on the box so I could tell easily. However, my abstract record cacophonously halted again when Kim asked me to pull up to the front door so they could load my order into my car. I had parked close by and previously requested for at least one employee to help me carry my order to my car. Also, I didn't want to block the right lane of the frontage road through the town center, so Kim and a team member helped carry the order to my car. My guests enjoyed the food for the most part, and I used this opportunity to invite them to visit The Stand with their family/friends on their own time (and dime lol). My order included an abundance of sauces and dressings, and I also appreciate how there were label stickers on each half sandwich/wrap in the platter. However, I would highly recommend a different means of labeling these sandwiches/wraps. As an example, I tried to grab a Chimichurri Steak Wrap only to find out it was actually a Falafel Wrap, which was the only vegetarian option in the platter. Good thing I got my vegetarian guest that grilled cheese sandwich! Lastly, if you've managed to make it to the end of this review, I'll let you know there's a discount code for customers placing a catering order for the first time. You actually read it in this review somewhere. Missed it? Sorry, I'm not giving it out like that. You'll have to re-read the review :)

The ambiance is new and clean, I know it's a year or so old now, but it's clear they keep the place up. Lots of seating, and the restaurant is attached to the bar so it's about as close as the kitchen is. In all I was really pleased with everyting about this place and I would certainly return. :)

The patties were a little salty, but upon reading the other reviews, I see that the owner pre-marinates the patty meat. The prices were also steep for just the burger, and I thought my order would come with fries on the side, but that doesn't take away from the quality of the food.
