I'm not going to lie, I didn't have high hopes for a steak place in a food court type venue. But this place was amazing I even thought to myself, how old is this meat and how long has it been sitting here. But omg it was so fresh and tender It's conveniently located inside rodeo 39. They have plenty of free private parking. Plus you can explore tons of other places after you eat here We went up and asked the girl behind the counter for some recommendations. We went with the ribeye cut and then you get one butter / sauce and two sides. (42 dollars) We also ordered a butcher burger, fries and two drinks. The total came to around 60 dollars. Which to be honest the steak was just as good as any steakhouse. And worth the price alone. When our food was ready we got a text and went back up to the counter to get it. One of the workers helped carry the food out to our table. I like how I can pick the meat and see it in the case, the service was great, i like that I can see the people cooking it as well, I think the price for steak is extremely reasonable especially when it comes with two sides, it literally took about 10 minutes for our food which was great and it's a great location for food lovers. I'll definitely be back again
1. The burgers were delicious and made well! 2. The spot has fun casual vibes since it is located inside a public market! 3. The staff were friendly and informative about the wait time! It took less than 10 mins! 4. There are shared indoor and outdoor seatings in the market! 5. The shared parking lot can get crowded after noon on the weekends! Note: They will ask you for your phone number to text you when the order is ready! Therefore, you can just explore the market until pickup! Photo: 2x Garlic Smashburgers
On our way to the airport we stopped in this complex that had a plethora of eats and Bearded Tang Brewery. We decided on primal cuts. We ordered the smash burger fries as well as the Korean wings. The guy behind the counter was very spacey not really paying attention to his surroundings, but it was quick service so I wasn't really worried about it. The smash burger fries were simply but full of flavor. Both my wife and I could have had a couple orders of them. The wings on the other hand were a bit squishy and very very saucy. They had a decent flavor, but I tend to look for a good crunch and a thin flavorful layer of sauce. We were craving wings so they served their purpose. If we're ever in the area again we would love to try more things. But there is also so many more places in this little area!
PREMIUM PATTY. Craving the taste of umami burger but unfortunately the chain no longer exists. I sought primal cuts truffle butter burger and it satisfied the craving. The truffle burger was buttered up with truffle butter. Had a few mushrooms and raw onions that made the flavor pop. The patty was a decent size and not dry at all. If I had any impulse control this would be a complete meal, but I had to get the fries. The fries were drenched in truffle oil but not in a good way. The flavor was there but there was about a cup of oil sitting in the box of fries. I had to squeeze the oil out of each fry. I didn't know whether it was truffle butter or frying oil. It was a bowl of cereal. I didn't get a drink since their selection consisted of canned soda and a few premium bottled sodas. Something about canned drinks just doesn't taste the same. Despite the fries, overall it was worth the try for 24 dollars.
Staff is friendly and down to earth. Ordered the OG, but lettuce wrapped, no bun. You get charged extra for lettuce wrap....and it is NOT worth it! They used the inner leaves, so it's like thin strips of lettuce versus (in and out) other styles that literally WRAP your burger. I like that you can specify how your meat is cooked, but unfortunately they don't know how to cook the meat. It was warmer than blue, but def not medium rare. No seasoning on the meat. Probably won't be back for another $15 burger (no fries, no drink)
I'm impressed how good the butchers burger and shoe string fries were. Did no sun dried tomatoes and killed it without the bottom bun. Shoe string fries are in my opinion the best type of fries and primal cuts delivered. Customer service is pretty great. Forget in n out and come here you will not be disappointed.
Tried the garlic smash and regular burger. It was okay... would say in n out is better in every metric (not even factoring in price). I will say that the burger meat portion was solid. I would go somewhere else if eating at rodeo39
Credit Cards: They're accepted Restrooms: Restrooms found inside Rodeo 39 food hall. Visitation Rights: 1 time, but I can see myself coming here more often if i'm in the area. Location: Located inside the Rodeo 39 Food Hall next to the restrooms. Parking can be found in shared lot, but might take a while to find a spot depending on the time you go. Ambiance/Decor: Modern looking food stall with minimal seating. You can find available tables and chairs through out the food hall though. Entertainment: Sit at the bar and have a peak at the meat masters at work while they make your food. Service: Service was good. Food came out at a decent time. Food Of Choice: Shared the Butcher's Burger (comes with fries) which consisted of aged angus beef, swiss, garlic aioli, arugula, caramelized onion, and sun dried tomatoes on white bun. The butcher was very good. The meat patty was moist and tender and the fresh ingredients meshed well. Primal Cuts For Thought: Would love to come back to patronize the shop when I'm in the area.
This steak sandwich was yummy but felt like it was missing something, maybe some more meat or arugula/onions. The bread is pretty thick but it's not too dense. The aioli was yummy tho, and the steak was nicely medium rare. The truffle fries were good but the truffle flavor was very mild and missing parmesan cheese.
Located inside Rodeo 39, Primal Cuts is a must try! Came with a bunch of family and friends and they all raves about this place. My husband and I got the Ribeye Steak with truffle butter and got fries and mashed potatoes as the sides. For $30-something dollars, the quality is phenomenal! Honestly, it was better than some of the pricier ribeyes we've gotten at some restaurants. It was SO juicy and flavorful (the truffle butter is a must if you like truffle). We're from out of town, but if we're ever back in the area, we will definitely be back here!
Eh. It's ok. I was craving a burger and Primal Cuts is the only spot that sells burgers in Rodeo 39. I ordered the OG Burger which comes out to $15 with tax. At that price I was expecting an above average, decently sized burger. Instead, the burger was quite small (very thin patty -- see pic), and quite frankly, mostly bread! The patty itself was cooked well and the complimentary ingredients (pickles, onions, cheese) were solid, but there was nothing "wow" about it. I wish the serving was bigger and the patty thicker (or give two thin patties with cheese in middle). The bun was fine. For $15, you can get something better at Rodeo 39, where there are so many options. Honestly I would have been just as happy with In-n-Out across the street.
After several return visits, it's safe to say that I won't eat here again. The food is truly a joke. One of those meals that you force yourself to finish just because you paid a good amount for it. I've tried the ribeye and picanha cuts that have been overcooked, bland, and almost inedible. The steak looks great on their social media posts but when you account for rest time and it will continue to steam when packaged, no matter what temperature you request, it will come out well done. No part of the steak was medium rare and when you're paying $40+, that's not acceptable. The quality of steak they use is not great either. The ribeye is so thin, that it's almost impossible for them not to overcook it. Quality reminds me of what I used to get from Albertsons meat section. If you can't cook steak to the right doneness, I'd recommend using a thicker cut or just taking it off the menu. I ordered the Butcher Burger again this time and it was not good. I couldn't even finish it because it was dry, bland, and stale. Fries again, not special. The last time I ordered side of broccolini and asparagus which is an additional price to upgrade. Inedible. Basically served raw broccolini because could not even chew it and they didn't trim the stem that's woody. If you can't even cook simple vegetables correctly, I don't think you should be in business in my opinion. If you're thinking about trying this one out, I'd save your money and try another stall. I felt like I was being robbed paying $60+ for a meal that was not a good experience eating.
Ordered a garlic smash burger and made it a combo, adding fries and a can of soda. The best part of this place was that the associate was really sweet! However, the food itself was below par. I was supposed to be texted when my order was ready, but apparently their system wasn't properly working. When I walked back around toward this place, the person who took my order hand-delivered my bag to me. I'm not sure how long the order actually took to make, but I walked around the food hall, then returned to Primal Cuts about 15 min after placing my order. I was surprised to see that the cheese on the burger was not melted at all. I suppose that means my burger was not very hot when it was made (by the time I got my food, it was mildly warmer than room temp). The patty itself didn't look very smashed... it was comparable to a McDonald's beef patty in appearance. The bun didn't seem toasted, so it kinda felt like they barely microwaved a patty, then slathered a bun with the garlic sauce and put it all together with a piece of totally unmelted cheese on top before packaging the food. The portion of fries was generous, though. I think that was the most filling part of the meal. It was nice that they left the box open so it wouldn't get soggy. The ketchup was a bit lacking for me, though. I know they make their own ketchup, but it needed a more acidic punch for my tastes. Anywho, the total came to a little over $14 (with tip), which wasn't worth it at all.

Rounded up from 3.5 stars for a great happy hour deal! Wings are $5 on Wednesday's, which was a steal for 6 pieces of wings. Service was friendly at the counter. There is plenty of seating in Rodeo 39. They offer three types of wing sauces - buttery buffalo, Smokey jalapeño, and sweet BBQ. We chose buttery buffalo, and it had great flavor. My only wish was that the wings came out crispier. We plan to ask for them crispier next time since we can't pass up such a great wing deal! read more
This location is inside rodeo 39. This Yelp brought me here because I was craving a smash burger. Got a double patty smash burger for about $10 and then their shoe string fries $4.5 total spent $16 and change. Taste is good, 7 out of 10. Shoe string fries were hot and their ketchup was soooo GOOD! Like fresh tomatoes, crushed together the way it probably should taste Overall, not bad in terms of taste. But $16 for a burger and fries seem a bit steep. No drink even. The burger wasn't even anything huge, like the palm of my hand for reference. read more

I got a smashburger and tallow fries. Both were really good. The smashburger isn't huge but was a good size for me. Definitely one of the better smashburgers I've had recently. If you are hungry maybe get a double patty. The fries are crispy. You get a generous portion and the coating/seasoning is tasty. Absolutely would return. Came out to about $15. read more

I've been coming to Rodeo 39 for awhile now and finally tried the primal cuts smash burger. I got it with the garlic aioli and wagyu patty for an extra $1. You can really tell a difference in the meat compare to other places. It was juicy and flavorful, potato bun was perfectly warmed and it didn't have too much sauce or cheese. Honestly this is one of my favorite smash burgers I've had. I would put it top 5 in OC for sure! read more

This was the most underrated place I have been to. It is located in a food hall. You walk up and it's like a butchers counter and you order your food. They sell out of various cuts often so the filet was not available. I got the NY strip and it was unbelievable! It was cooked perfectly, seasoned wonderfully and presented well. It came with mashed potatoes and another side of your choice. I went with the heirloom carrots. They were on the hard side but still very tasty. The food took awhile to come out and the lady who took my order was not the friendliest but nonetheless, I would come again. You could eat for weeks on the amount of place sun that food hall, I'm really glad I tried this place. Damn good steak! read more

I like Primal Cuts. I got the 8 oz New York Steak with Mashed Potatoes and Heirloom Carrots, it was delicious. This review is long overdue as I tried them almost a year ago. From what I remember, the food was definitely tasty, however, it didn't blow my mind. It was a good portion of food for one person. Usually, if what I eat tastes really good, I will remember it. However, if it was decent but didn't blow my mind, it's not as memorable. It's not as memorable as other casual steak places I've been to. I would definitely be open to trying them again. They are located at Rodeo39 Public Market, a newer food and shopping hall! I've come here many times since they opened almost three years ago but this was my first time trying this place. They have a free parking lot. This plaza is pretty busy any time of the day so you might have to drive around to find parking. I just park a little further out. Service is friendly. There is open seating at the market/food hall, inside and outside. I like the casual, yet modern vibes. I don't think this place has it's own individual dining area, so you order the food, pick it up and take it to eat elsewhere at the market. I think the food here can be a little overpriced depending on what you order, however, some items are fairly priced. read more

This location is inside the Rodeo 39 complex. Since I do not live close by and only come to the area occasionally, I typically get food at this place when I'm here. The first time I ate here, I had the ribeye steak with mashed potatoes. It was pretty good, but my favorite item is the truffle burger with French fries. The burger is always cooked perfectly. The staff is friendly and very helpful, especially if it's your first time there. I highly recommend that you try the truffle burger. You will not be disappointed. read more
Let's start with the good: Butcher's burger was sooo delicious! Would have been perfect if the bun was toasted. The flavor profile was phenomenal - garlic aioli (yummo), caramelized onions, sundried tomatoes & arugula with swiss cheese, so delish! The angus beef patty was cooked perfectly to my liking. The bad: my order came with somewhat cold fries so that was a downer. Service has lots of room for improvement. Not as friendly when compared to staff at Oi or Shootz. And my order did not come with napkins. read more
Located inside Rodeo 39, you should know that it is a battle to find parking! Just be patient and eventually one will open up. I came on a Saturday night at 7pm and found plenty of parking space. I ordered an 8oz New York Strip with truffle butter and two sides of mashed potato and mushrooms. There are other side options to choose from as you get two to pick from. The mashed potatoes were delicious and something I still crave to this day. The New York strip was a good 3.5/5. The reason being is due to my overcooked meat that I asked to be medium rare. Thus, the meat came out chewy and a required some strength to cut with the knife. I'm not a fan of that which is why I prefer medium rare. I would come here again, but I do hope it is made to my preference next time. Still highly recommend to try at least once. read more

We got to try Primal Cuts for the first time and had the Truffle Butter Burger, Aged Angus Beef with truffle butter, smoked Gouda, raw onion and primal steak sauce. I substituted the fries for asparagus and ordered a side of their house made aioli The service was quick, they text you when your order is ready! And the ambiance in Rodeo39 is great for a trendy spot to hangout with friends. read more
My friend was raving around this place. Came through and ordered the top sirloin (medium RARE) with garlic butter and a side of mushroom and broccolini. Waited 20 minutes which was fine but my order was given to my friend. If it were a stranger they would've sucked! Worst part of the entire experience was that my steam came out WELL not medium well, or medium, or medium rare like I asked for, but well :( read more

They definitely know how to do burgers! This is THE place for premium burgers with amazing primal cuts! Prices are reasonable for the quality of food they're serving up and they're conveniently located inside a bustling food hall. As youngins who are suckers for value, my brother and I tend to gravitate towards their Smash Burgers! They're perfect for when you want a quick bite that's not too bougie, but still delectable. You can opt for either the Classic or Garlic Smash Burger (Their garlic aioli sauce is just mwah!) and it's 1 for $7 or 2 for $12. Amazing value and even better food! read more

Primal Cuts is located in one of OC's most popular food halls, Rodeo 39, is a vendor that focuses on meat! They have high-quality meats of various cuts and most people go for their steaks but they also have great burgers as well that you can order! You can see the steaks that they have in the display counter and how long they've been aged as well! I came here for dinner several days ago and ordering was simple with the staff being nice and courteous as always. Their prices are a bit more on the expensive side considering the portion you get but the quality of food you get is really good! You choose a cut of meat that you want with 2 sides and a choice of either garlic or truffle butter. They have several sides that cost $2 extra but I went with the mushrooms and mashed potatoes which didn't cost extra and I chose the 6oz Picanha as my meat and truffle butter! I paid around $18 for my meal and it takes about 10-15 minutes for them to make your meal which isn't too bad. It gives you time to walk around a bit and shop before you eat. Picanha (4/5) - the meat is very flavorful and was cooked as I requested to medium rare perfectly although I did find that it was a bit too chewy for me due to the big amount of fat on most of the pieces that I got. The truffle butter worked melted really well into the meat and I think for next time, I'll get a different cut to try! Mashed Potatoes (5/5) - some of the best mashed potatoes that I've had. Very flavorful and full of buttery, rich flavor! Button Mushrooms (4.5/5) - cooked perfectly and with a delicious sauce, I would reorder this side again for sure! I would say for feedback, that they could offer metal knifes in order to cut the meat a bit better as it takes a while to cut with a plastic knife! Overall, I enjoyed my meal and I will for sure be coming back again to try their burgers and other cuts of meat! The service has always been great here and I would say they are one of my favorite vendors at Rodeo 39! 4/5! read more

Really good steak especially for being inside a food court. Paid about $45 for a rib eye with French fries and asparagus. I got the truffle butter flavor and it was a good choice. Ordered my steak medium rare which they did do. Over all a great experience but just a little on the pricy side for a no frills steak. read more
So it's funny, we brought our pup with us to Rodeo 39 and she's not allowed inside so my fiancé and I took turns walking in and ordering our food. I went first, found Primal Cuts and thought it looked really good. I ordered the Picanha with garlic butter and a side of mashed potatoes and mushrooms. Since I had to wait for my food, I went back out to let my fiancé in and order what he had wanted and it turns out he ordered the exact same thing! I guess it really did look good lol. So he found out because I received a text saying my order was ready and so I texted him asking to pick it up for me while he was inside. That's when he realized he exactly mirrored my order, down to the sides. He figured we should try more sides so he asked staff if he could still change his side orders to carrots and broccolini and they kindly did. Picanha was delicious. I ordered mine medium and he got his medium rare and both were nicely cooked. Garlic butter was very good. If I had to rank the sides it would be 1) mashed potatoes (sooooo good!) 2) mushrooms 3) broccolini, and 4) carrots (due to inconsistent cook) Would come back to try the other cuts and the burger! read more
Got the NY steak cut with a side of fried and broccolini, which they charged $1-2 extra for just the broccolini. You get two sides of your choice. Steak was cooked medium. It is a little pricey for what you pay for, but the meat was good and the sides that come with it leaves you full and satisfied. We had to wait quite a bit and the text to notify that the food was ready never came through, so we had to walk over and check a couple of times. The meat was tasty, a few pieces of the meat were not medium, more like medium well or well done. Overall, it was a good meal. Would come back and maybe try it medium rare instead! read more

I ordered the Ribeye and O rings and the steak was as tender as can be. I had them put the Cowboy Butter on it and the rings were perfectly done. The service was fantastic and we found a table for all six of us. If you're at Rodeo 39 stop by Primal Cuts for a great meal. read more
One of my go to spots at rodeo 39! I've had 5-6 items from here & enjoyed everything so much. Favs - New York w mushrooms and broccolini! Pricing is moderate to high, I would say compared to other all the food vendors they're on the fancier pricey end. Usually service is great & food comes out quick but today 5/6/22, the burger took over 45 mins!!! Omg way tooo long it wasn't even crowded. No one else was waiting. Burger isn't worth the $ I would get the steak. Fries were ok today 5/6/22. No photo of burger & soggy fries. Was starving. read more

Located inside Rodeo 39 food center, parking can be a hit or miss depending on how busy it is. But not too bad! The meal was worth it's price for sure! I think there's a minor price increase to when i came in today ( 10 JUNE 2023) compared to some menu images from 2 months ago. It is quite busy on weekends, there were only two people working. One cooking, and another on register who was also helping the cook pack the orders and calling them out. They were both killing it, wish I got the gal on registers name, but she did amazing handling the crowd! Be sure to stay nearby if you are ordering when it is busy since they do not have the buzzers! and be patient, they're doing good work with the people they have! I ordered the Butcher's Burger - aged angus beef - swiss - caramelized onions - sun dried tomatoes - garlic aioli and Shoe String Fries + house made ketchup I love that the burger was not overcooked, I enjoy a medium/rare patty. So tender and juicy! The condiments of caramelized onions and sun dried tomatoes were so perfect and a fav - i love the sweetness from both the onion and tomatoes. but also the slight acidity the sun dried tomatoes added, as it cut through the richness of the beef. the fries are shoe string, so the texture a bit reminiscent of mickey d's fries. but taste like a potato and not a fast food fry. overall satisfied! i wanna come back and try their og burger!! read more

Got another burger today and the bottom bun was very soggy. The meat is so bland this time. Very disappointing read more
