Which means, a lot of bubbly/crispy crust and the "stuff" is loaded in the center of the pizza (although way better coverage on trip #2). It's not my gf's preference of pizza, and really, not mine, but these guys do it so well. And, highest of ingredients! They definitely don't cut corners. I've tried: =========== * Truffle cacio de pepe pizza: wow. That crispy guanciale was to die for [$25, 4.5 stars] * Special sausage & pepp, totally delicious. [$28, 5.0 stars] * Meatball Pizza w/ricotta [$24, 3.5 starts] -- great crust and ingredients, didn't love the flavor of tiny meatballs. * Caesar salad: tasty but small for the price. [$15, 3.5 stars] They do serve draft beers and wine. Yes! I met Marino, and he's a wonderful and jovial guy. Limitations: ========== 1. Our server was fantastic--prompt, helpful, friendly, and made us feel completely taken care of. We started with the fried artichokes, which were PHENOMENAL. Seriously, don't skip them! We also ordered the Blu pizza, which was savory, interesting, and completely unexpected in the best possible way. We paired everything with a bottle of red wine made specifically for Della's, and it was perfect with the meal. And a huge shoutout to the busser who went above and beyond! My partner accidentally left his wallet behind, and before we even realized it, he came running out to catch us and return it. He saved us a panicked trip back and we were so appreciative! Great food, great wine, and genuinely wonderful service. Della's is absolutely top tier and will be on our must-visit list whenever we're back in Paso.

As soon as you walk in, you can smell the wood burning, smells great. The inside is small but not cramped, it's modern and cozy. They have a nice bar, it seems cute for a date night or to grab cocktails with a few friends. Pretty simple menu, they specialize in wood-fired pizzas and cocktails. We got the seasonal salad, which was solid. This rotates based on what's in season - it had nectarines, tomato, burrata - nice and clean, but the portion was pretty small. We also got the chicken cutlet, which came covered in a salad-type mixture. The salad topping was actually great, I would've eaten this as a salad by itself, but the chicken cutlet didn't have much flavor or seasoning. The sun-dried tomatoes in the topping helped add flavor, but on its own, the chicken was very thick and bland. We also got 2 pizzas, Girl Crush and Chicago Fire. These were thin crust pizzas, and while the dough and the toppings were good, there was WAY too much cheese on them. I say this as a cheese lover, but the pizzas were weighed down so heavily by the cheese that it was very difficult to pull slices apart. The ratios just seemed off. Flavor wise, we preferred the Girl Crush. The lemon fragrance is pretty strong on the Chicago Fire, so it overpowered the other flavors. Lastly, we ended with the classic tiramisu, which was good - nice and light, not too sweet. Food was just okay, our server Adam was great!!

Beer and wines are featured, good ones too. They pretty much have it all here, really. I ordered a small garden salad tossed with blue cheese, no housemade dressings here.
