I do like having varied textures in the pho dac biet from tripe, tendon, and meatballs; however, if you only want brisket, then you can get your bowl of pho for about $1-2 cheaper. I also like to get a side order of pickled onions to give a nice acidic kick to my meat and soup. We also usually get an order of their pork and shrimp spring rolls ($8 for 2) and they're OK.
