The clove flavor was a little heavy but we got used to it. The broth excelled after adding some heat from the jalapeños and sriracha, along with some hoisin. The vermicelli bowl was a large portion and had all the typical fixings except mint, which I missed. The egg rolls were crisp and savory. Female server was sweet but they don't seem to be trained or have experience. She had trouble using the handheld machine while taking our order. If I could give this place five extra stars, I absolutely would. We arrived around 2:00 PM for a late lunch, and the restaurant was packed. Despite how busy it was, the young waitress and young waiter did an incredible job running the show. They greeted us right away, took our order immediately and our food arrived surprisingly fast. While we were there, a difficult situation unfolded with another customer. He insisted on taking an entire table for four by himself. When the waitress politely suggested that he use a table for two instead, he became very aggressive. She handled the situation with remarkable professionalism, stayed calm, spoke respectfully and never let it turn into a scene. The young waiter was right there supporting her and together they handled the situation calmly and professionally. Watching them made me realize how challenging it can be to work in customer service. I ordered one of the pho dishes but maybe it was a busy day but the wait time was pretty long at around 15-20 min. Once it finally arrived, the Pho was good and for ranking Pho compared to other pho spots you'd typically see in East side SJ, I'd give this a 4 out of 5 because if they put more anise in it, it would've been excellent. Cost of coming here was average to slightly high at around 14-15 dollars but if you want the Pho Dac Biet, it comes up to $20 which is pretty steep. I also noticed afterwards eating here, I was pretty thirsty afterwards. Overall, I'd have to say this place was alright. One visit and it's already up there on my list. Ordered #3 pho tai (rare steak pho) and a side of beef balls with regular noodles. There's an option to get fresh noodles. Good broth - tasted clean and wasn't bland, salty or that oily. For the vegetable plate, they automatically cook the bean sprouts. It was 8:15pm and it's about 15 minutes away, so we were hesitant to go since they close at 9pm. Called to check and they said not a problem at all. A few others came in after us and got seated, and we saw others get turned away (because it was already past closing time). We didn't feel rushed at all - good customer service! With the high ratings on Yelp and Google, I came in expecting this to be one of the best bowls of pho in the area. It also looks fairly new, so I was excited to give it a shot. I'll start with the positives because there are definitely some. The fresh noodles are fantastic. Easily some of the best I've had in San Jose. They have a great texture and hold up beautifully in the broth. The portions of meat are also generous, and the beef itself is high quality and flavorful. If you're someone who judges pho by the noodles and amount of protein, you'll probably leave happy. That said, the broth is the heart of pho, and this is where it lost me. First, it wasn't served piping hot. I could sip it straight from the spoon without blowing on it. For me, pho broth should arrive almost boiling, continuing to cook the thin slices of beef and staying hot throughout the meal. Flavor wise, it was also far from traditional. The broth was heavily seasoned with dark, roasted spices. I picked up strong notes of star anise, clove, and nutmeg, and the overall profile felt more intense than balanced. Instead of being light, clean, and refreshing, it came across as dark, meaty, and over spiced. It just didn't have the delicate depth I look for in a Vietnamese pho broth. I burped up cinnamon/spice the next day. Not good The oxtail wasn't as tender as I expected, and the beef meatballs had an oddly floury texture and flavor that overpowered the meat. I also would have liked more onions and was surprised there wasn't any culantro. Small detail, but I also missed having extras like fermented garlic or fresh chilis available at the table to customize the bowl. Even the decor felt a little disconnected from the food. It wasn't bad, just not the vibe I expected when walking into a pho restaurant. Overall, I can see why people like this place, especially for the fresh noodles and generous portions of quality beef. But for someone who believes the broth makes or breaks a bowl of pho, this one didn't hit the mark.
