But by the time we left, most of the tables were taken. Service was excellent with our orders prepared correctly. The conventional wisdom around these parts is that Pho 75 has the best pho, but I think Gao's delicious chicken broth just might have an edge over Pho 75's broth. The shrimp crepe was amazing. With the perfect texture it was delicious. Next time here I'm going to order this baby. We also ordered the crispy party wings. They had a perfect level of saltiness and the wings were only lightly seasoned with five spice. Lastly, we opted for the Vietnamese coffee. Gao's coffee is so tasty. Paired with condensed milk it's excellent. Love it!

Tater tots with bahn mi is weird. Looks like the chef is trying things out. Dan told us they're looking forward to the bar area opening soon. We'll come back for that.

Prices are SUPER high, portion sizes are small, and most of all (because I don't mind paying more for delicious good quality fresh food!) the taste, flavor and quality of my dish (one of their "Specialties" so you would expect perfection) was god-awful. Read on. This place is located in the 3rd floor eatery of the Tysons Galleria mall. Came with a friend on a Wed right around noon. We decided to sit outside of the restaurant (which is full service) in one of the public seating areas (beautiful, plentiful!) so I walked up to Chao Ban to place a to go order. I ordered the "Let Your Shoulder Lean" specialty for $24 - grilled lemongrass pork shoulder with veggies and rice and a sauce which SOUNDED so good. And I ordered a $4 can of Coke - ridiculously overpriced. All told a $30+ to go lunch meal. Ridiculously priced in hindsight. See my pics of my meal - the carry out carton was tiny. The food was dense and heavy which had me hopeful that I'd be getting good vslue for my $30+ but in the end, it was disappointment all around. The pork shoulder - though there were 2 pieces - was superrrr thick, tough and soooo dry. WOULD NOT RECOMMEND. Thing about it is that this is a CLASSIC Vietnamese dish I've had many many times - BUT NOT LIKE THIS. SORELY DISAPPOINTED. From their menu (see my pic), I don't know what else I would have ordered - the entree list was sorely short and limited in choices. And seeing the place pretty much empty at 12noon on a weekday when all the other restaurants in the eatery were busy and buzzing, well, that should have been a BIG HINT. Not a fan at all and giving this place a 1 STAR mostly because being a high end eatery in a high end shopping mall means they have to live up to MUCH higher standards for their offerings - instead I see them as a HUGE RIP OFF. Let's see how long this place survives.....

For awhile, Pho 75 has been my favorite, and I've tried all of the pho spots around here including West Coast. I wasn't sure what to expect of Pho Thin, I've had Northern Style in San Francisco but not here. I think a lot of the complaints that I see here are that it's not authentic Northern Style, I know that Northern Style is more broth based and sometimes they don't allow for any condiments. So whenever I start off with a new pho bowl, I always first eat some spoonfuls of the broth, nothing else. The broth here is deep, rich, and complex. It's soulful, and flavorful enough that you can enjoy just the soup itself. The wider noodles were soft and good. I got half noodles because I don't like too much carbs, and I prefer more broth ratio, and it worked out well for me. The beef was also high quality and tasty. I got the Thin Signature so it included a mix. I did use the hoisin sauce, and also the pickled garlic/jalapeno condiments, and it did add flavor to the broth. It doesn't need it, and what I usually like to do is go with just the broth the first half of the bowl, and kick in condiments and flavor for the bottom half, changing it mid-way. I really enjoyed this pho bowl and will be back.

No heavy anise flavor here. I got the P2 - Prime Rib -- absolutely delicious -- and the P1 - Phở Đặc Biệt, with meatball, tripe, and all the good stuff. Also tried the mung bean pandan coconut drink. It was a little grainy at first, but once the ice melted, the pandan flavor absorbed much better. And the coconut drink? They literally give you the whole coconut, so you can spoon out the fresh coconut meat from the inside. Hydrate yourself! Personally, I like this style better than regular pho. Sue me.

Both were like $16: which is higher than I pay at my regular spot. However, there was a LOT of meat. There was such a good amount of meat in both. The broth was also good. I still modified using some of the table condiments but overall good. Also ordered the egg rolls - they were the smaller, thin ones, but they were quite good. For two big bowls, the egg rolls and a canned drink, I paid about $50. You pay at the counter and get containers there when you're ready to leave. I'd def. Return. I ordered: pork belly, fish, and bamboo shoots. The dish was absolutely flavorful! It reminded me the food I get in Irvine, California, a Mecca for Asian food. The dish came with: a lot of rice, a small scoop of bamboo shoots, pork belly, and fish. I bolstered it with cucumbers at home and Thai Basil. So, expect for the food to be around $15 for two meats and one vegetable! Or, bring a Vietnamese speaking person who can help you out! We purposely came in as a party of 2 on an off-peak day like Tuesday at 5pm or something. It was pretty quiet save for one medium party of Viet uncles and aunties and a few other patrons probably getting off work and getting grabbing and early bite. Service is rushed, feels like some 1980s kind of vibe (as I get older I somewhat still appreciate and garner a sense of nostalgia) - the menu is literally just pho. And cash only. This is when I knew I'm in for a treat. We got a #1 and a #6, but honestly there's not much difference in the dishes. They're all constructed from the same base broth, use the same vermicelli but some omit certain toppings and others have some other special stuff. Whatever you get, the amount of meat is more or less the same. You can build-your-own-bowl too. The pho came out pretty quick. At first glance the broth is clear and they add a stupid amount of scallion and cilantro - something I VERY much appreciate. That first sip of broth - mindblowing. It's deceptively simple but because it's so clean you can really taste the layers and nuance through the depth. As we began wolfing through our pho, the broth became more and more concentrated as we worked out to the bottom. There is a LOT of meat hidden underneath the bowl, which is very wide at the top so they're able to fit a lot of things - easily hidden underneath the generous amount of toppings. Meat and tripe were good, nothing out of ordinary, vermicelli felt weirdly broken as opposed to long un-cut lengths. But by the time you get to the end of your journey at the bottom of the bowl, if you're able to pace consuming the liquids with the solids, you'll find a golden ratio - the oils and residue from all the toppings have now concentrated that initial pure clean broth into the cumulation of your experience. Because they add so much scallion and cilantro initially, you'll likely still end up with a few greens sprinkled in there. Whether it was on purpose or it's just science the taste of the broth literally evolved before my very eyes. Take a breather. Or 5. Meditate on your experience. Forget about it all. Then take that sip of the final level broth and transcend

Today a middle-aged waitress gave me an attitude when she took our order. She looked at me several times like she was disapproving of me, although I believe I looked pleasant, well-kept, and professional. The waitress literally stared me down, with an attitude like "I'm better than you." WTF? I come here to kindly eat at your restaurant, I was dressed casual, not dressed to show off or flaunt anything that I have. If it were not for the presence of my companion I would probably have complained to the assistant manager about the waitress' rude behavior. Furthermore, a comment or two on the quality of the food. The seafood bird's nest dish had minimal portions of seafood -- four small shrimp, two small scallops, and three small pieces of squid with less-appetizing pieces of vegetables -- all for $23! Moreover, the shaky beef dish was dipped in baking soda or baking powder, making the dish tastes quite bitter. The bitter taste could hardly mask the fact that the beef cubes have been sitting around for a few days --the meat were partially rotting.
