Good first visit to this food truck that shows up every once in awhile at the corner of 3rd and Tryon. I've tried to go before but my early lunchtime stomach clock always seemed to be a bit too early for Papi Queso. This time though both clocks were in synch! I got the Pig Mac which is a grilled mac and cheese sandwich topped with pulled pork and bourbon onions. The sandwich was perfectly toasted and crunchy on the outside and had a reasonable amount of filling on the inside that was melty, ooey and gooey the way a grilled cheese should be. My only request would be more of the vinegary pork and bourbon onions to add more acid and cut through some of the richness of the mac n cheese. All in all, this was a good sandwich served by friendly folks and I would not hesitate to stop by the next time our clocks align! read more

I was able to try Papi Queso for the first time at Food Truck Friday, and the Charlotte food truck scene seems to be really starting to take off. I ordered the Pig Mac which is pulled pork and Mac & cheese between two slices of grilled bread. The sandwich was really good. Both the Mac & Cheese and pulled pork would've been great on their own, and when compressed into a sandwich they were very good. The truck just uses plain white bread, but it gets perfectly toasted and ends up working very well because it doesn't overpower the other flavors. While the Pig Mac was awesome, it wasn't very large for over $8, and it took almost 10 minutes to make which seemed like awhile (maybe because I was starving). The food was definitely top quality though! read more

I got the little cheesy because I'm a plain Jane and the bread is so perfectly buttered and seasoned with salt and herbs. The cheese was a blend of multiple it wasn't my favorite but the bread made it work. I also got homemade pickles which tasted like....homemade pickles lol it just missed the mark I wouldn't get them again because they weren't as "dill" as I like but I think other people really enjoy them. Next time I will try the mozzarella sticks! read more

I am so disappointed. Ordered some fries and cook decided to taste some from my bag with his ungloved hand. Posted on Instagram and they deleted so here it is for the world to see. Manager acted in a very flippant way. Got my money back but will never come back and urge others to think twice before coming here - particularly during this Pandemic. Not worth it. read more

A couple of weeks ago I saw that they were going to be in one of the Southpark business centers so I figured I'd give them a go. The cart itself is very attractive, actually the main reason this one stuck in my head when I saw the notification. Service counter was nice and clean and the staff was very friendly. So the food itself: I only got one item from them (because there were other food trucks as well) and it was the Big Cheesy. 3 Cheeses with herbs and sea salt. It was a pretty good grilled cheese sandwich but to me it didn't have any sort of wow factor. It appears from all the other reviews that I should have gotten something with meat to satisfy the appetite because I thought for the price, portion size was lacking. That being said this is one of the most well known food trucks in Charlotte, so yes I recognize their incentive to charge a bit of a premium. Your product is worth whatever people are willing to pay! The only other drawback was the wait time, it took a good 15 minutes to get the simplest grilled cheese on the menu, from a cart that specializes in grilled cheese. Granted, this was an organized event of 4-5 trucks serving a very busy business center plus people stopping by just for the food. Trying to stay optimistic because you don't know how badly I want to like this cart! Solid sandwich, just not blown away. I'll definitely revisit and report back on the Pig Mac, the Neapolitan Chicken looks good too. read more

1. Mac Melt .... Meh bland and flavorless. Could use more sharp in the sharp cheddar and less burn on the toast. 2. Cheesy fries .... Also Meh. Expecting fries with cheese melted on top. Finally made it out to the highly acclaimed Papi Queso at the Optimist Hall for their grand opening. We arrived early anticipating long lines, but they actually opened a little earlier than 11:00 so we managed to order our food with no wait and no line. We decided to share a grilled cheese to give them a try so we went with the Pig Mac (macaroni & cheese, pulled pork, cheddar, and onions) we also ordered some Rosemary fries and a couple of tomato soups. A total of about 25$ including a drink, not bad. The grilled cheese was ok, nothing spectacular about it and the pork was meh, just pork. The fries were a very small portion and were good. The biggest disappointment was the soup. It was very watery and not creamy at all! I'm used to creamy tomato soups, but this was like drinking a V8 (yuck) The service was friendly and everything seemed organized. I wouldn't rush to try them again. read more

Papi Queso is the grilled cheese place of all grilled cheese places. It is the grilled cheese place I judge all grilled cheese places against. I used to eat at their food truck when I lived in Charlotte and I was excited to learn that they had a brick and mortar location so I wouldn't have to go chasing that truck all over Charlotte this visit. I used to love their Mushroom grilled cheese so I was excited to see it on the menu this time, minus the addition of truffle cream. I hate truffle. So, they were kind enough to make it for me without the truffle cream, SCORE, and my husband got it with the truffle cream. We were both happy as clams eating our grilled cheese sandwiches. Next time I'm down there, I want to try their Mac Melt. Seriously, the best grilled cheese sandwich I've ever had anywhere I've eaten... And I eat a lot of grilled cheese sandwiches! read more

I went for my first visit to Optimist Hall to check it out and to get what I hear is FAMOUS GRILLED CHEESE from Papi Queso. I was not disappointed at all I had the Mac N cheese and added Applewood Bacon grilled to perfection, creamy, tasty well seasoned. My side was their Sea Salt Herb fries and they were crispy tasty and just plain Awesome. The portions were good as the sandwich was substantial and their were plenty of yummy fries. I did order ToGo and the packaging was cute with labels on what I had ordered meaning they listen when you ask to have add ins and get the order CORRECT! Score big points from me for that. Offered me water while I waited and checked in on me. Food came fast keep in mind it is made and grilled for you. I would recommend this spot for all that are grilled cheese lovers as they have a good menu with sides and add ins. I do hope to see specials and new options regularly to keep trying new sandwiches. I am fully supportive of small business and good food. New location is great, and the new spot looks great. This is not to say I didn't like my grilled cheese, it was the pork with mac n cheese and grilled onions as a sandwich, but it was just OK. I also liked it less I think because I found it to be pricey, $10 for the sandwich and $4 for a hand full of french fries? I am all set. read more

I came here with two of my friends. And we did not enjoy the food one bit. This only gets 2 stars because they took our order quickly. Aside from that it took 15-20 minutes for a buffalo chicken (which my friend highly recommended). 2 patty burger melts 1 with bacon. Both patty melts were horrific and felt like a brick. read more

Perfection every time! Always perfectly grilled with "just-right" toasting on outside and melty cheese on inside. Sounds simple but it's not. They pack a lot of flavor into every bite. Can't go wrong with any of the choices (pig Mac, mushroom gruyere, buffalo chicken, bacon jalapeño). Don't sleep on the weekly specials either. The only other place that would come close to Papi Queso would be Café de Flore in Paris (croque monsieur). Also the world's best fries with rosemary and sea salt. Again, always perfection. (Skip the fries at any of the other joints in Optimist Hall and go here). read more

Got to try Papi Queso at Sycamore Brewery last Friday. My friend and I had to wait in line for about 20 minutes, which was fine because it was Food Truck Friday and super packed. We decided to order two Mac Melts and a side of pickles. The Mac Melt is basically a grilled cheese with macaroni and cheese inside. The cashier was super nice and attentive. After we paid, we were then given a buzzer to let us know when our food was ready for pickup. We then waited another 20 minutes for our food to be ready. Both sandwiches were fresh, tasty, and very filling. The side of pickles was just okay - not the worst I've ever had but definitely not as salty as I was hoping. I am definitely looking forward to Papi Queso opening up at Optimist Hall and can't wait to try more items on their menu. read more

I have wanted to eat here from the time they were a food truck. So I was so excited to see that they would be in Optimist Hall. We ordered the mushroom gruyere, cuz GRUYERE!!! and the Pig Mac with a side of cheese curds (I'd never had cheese curds before. They are not something you see up north.) I also enjoyed one of the frozen alcoholic beverages. we just loved and inhaled everything! It was a little pricey but surely worth every penny. Nothing like a grilled cheese sandwich! read more

Went for a Saturday lunch at their new location in Optimist Hall. My friend and I ordered the Pig Mac, burger melt, tomato soup, and fries. The burger melt had more of a meat loaf taste to it which I wasn't a big fan of, but the pig Mac was so good. While the tomato soup was also good, I'll warn you it isn't as tomato-y as I was expecting- mostly cream. (Not necessarily a bad thing, just unexpected) If I were to go a second time I would either do the pig Mac with fries or try something new! read more

My husband was really hungry even though we ate dessert ( gelato ) first so he ordered the mushroom gruyere from here. It was more than a 30 mins wait!!!!! And when the sandwich came it was EXTREMELY salty!!! Now, for me to say that is a big deal because I like my food well salted! The flavour was great but it was almost inedible!!! Definitely my least favorite of all the food at Optimist Hall. We had the mushroom & Gruyere as well as the special, croque monsieur. They were both greasy with funky flavors. The croque was probably the worst I've had. Incredibly sad to waste $ here with so many other wonderful offerings in the same building. read more

This is honestly one of my favorite places to eat in the city. The food is mouth watering. I literally can't share it because it's sooooo good you need your own. The grilled cheeses are amazing like sooooo good that I have a friend who is gluten and lactose intolerant, but still eats them knowing she will pay the price later. It's. That. Good. And the people who own it and work there are so sweet and down to earth. They make it feel like stopping by your favorite aunts house. Forget everything you know about grilled cheese because Papi Queso is a game changer. Be prepared to wait a little, I've never seen the food truck without a daunting line. But it's worth it. If you love BBQ, you have to get the pic mac - bbq, grilled macaroni and cheese, amazingness. And so filling too! read more

Fans of grilled cheese unite! Anyone can put cheese between two slices of bread, but Papi Queso makes an art out of it. There are many cheesy sandwiches to choose from and each one is infused with a unique flavor. I've had two sandwiches from the food truck. The first is the Pig Mac, which is a customer favorite. It's pulled pork with Mac and cheese. And it is as delicious as it sounds. The pork is seasoned well and the Mac is tender and cheesy. The second sandwich I tried was the Green Chile Cheeseburger. This sandwich is divine and has a spicy kick. I like spice and the chiles combined with seasoned beef and melted cheese provides a delicate balance of flavors. I actually enjoyed this sandwich more than the Pig Mac. Sandwiches range from $6 -$9 and that's just for the sandwich. I wish the truck offered combos with a side and a drink. I don't like purchasing items a la carte. It gets too expensive for me. I go to the food truck at Stonewall and College on Tuesdays. They do post their schedule on Facebook. If you can catch the truck at a location near you, give it a try. read more

The sheer fact that there is a food truck in town, specializing and capitalizing on one of our planet's most universal comfort foods, brings a smile to my face....and heart....and taste buds....and stomach. Had the pleasure of checking these guys out at their launch and whilst getting boozy at Triple C. Brian, owner, and his staff are churning out grilled cheese like mom used to make....and some mom has never even heard of. Gotta hand it the menu for these fellas. You can certainly venture for au originale or something a little more on the adventurous end of the culinary spectrum. Can't say there is anything better than a standard grilled cheese, but the varieties with pork, southwestern chicken, leek & mushroom, and the dessert option with nutella are certainly worth shaking a stick at. We all know a grilled cheese is best accompanied by soup, chips, or something comparable. Brian has you covered. Rosemary and truffle chips and the tomato soup are available to turn your sammy into a dynamic duo. Pair these jokers with beer from Triple C and you're well on your way to a fine meal fit for the streets of Crown Town. Prices can seem a little steep at first, but do yourself a favor and talk to Brian or the staff about what kinds of cheese they're utilizing. You'll be happy you did. I'm sad to say I was feeling less adventurous that day so instead of the Dutch bread I opted for a regular white hoagie roll instead. They also offer all of their sandwiches in a wrap as well if that is more your speed. Their signature sandwiches all come with a number of their own unique ingredients but it's important to note that they have a standard blend of toppings that comes on each sandwich similar to jersey mikes and their "mikes way". I'm glad this was explained to me because I don't know how they would have possibly fit that many ingredients on my sandwich! I went with the Ellie Get In My Belly which came with some tangy honey mustard based barbecue sauce as well as their special Kicks white sauce. The sandwich was delicious although I think they may have gone a little too overboard with the sauce as the sandwich was very messy. That being said I can tolerate messy if the flavors are good and this was a very tasty sandwich and a great lunch. As with most places in the Monarch Market it is a little pricey, but that's the cost of having a small business operate Uptown. I would definitely recommend checking out Kicks next time you're looking for lunch options or find yourself perusing the Monarch Market.
