    On a Sunday afternoon I stopped in at Pangos coffee shop with a friend. The place was quiet playing fun Spanish music that seemed to compliment the tropical vibes of the decor and wallpaper. The woman working was friendly and sweet I ended up ordering a frappe and the egg and chorizo empanada. The empanada was super flaky and savory. The frappe was just okay I wished it had either a stronger coffee flavor or that I had added a flavor to it they had lots to choose from. My friend had banana cake which was good and the pistachio latte which she enjoyed

The space itself is cozy, welcoming guests with vibrant, tropical décor that reflects the rich colors of beautiful Colombia. The service I experienced was amicable as I placed my lunch order to-go. I ordered a few items starting with a blended iced coffee. The cup was lined with arequipe (caramel), then topped with whipped cream and drizzled chocolate sauce. While enjoyable, I found it to be very sweet--more of a dessert-style treat than something I'd reach for as a morning coffee. Not bad by any means, just sweeter than my personal preference. I also ordered the empanadas, which were delicious! Made with traditional corn masa, their texture reminded me of the empanadas I grew up eating. I chose the trio of chicken empanadas, each filled with a chicken and potato mix, excellently seasoned with a familiar Criollo blend, comforting in flavor. For lunch I ordered a grilled chicken bowl, which included rice, black beans, sweet plantains, grilled chicken, avocado, oven-roasted cauliflower, grated queso fresco, and a house-made sauce. This dish was okay but not something I'd likely order again. That said, I genuinely enjoyed the empanadas and the blended coffee enough that I would come back for those, and maybe try something new from the menu.

The servers were extremely kind and the food that we tried to include beef arepa, chicken arepa, bunuelos, and a Fresas con crema were all very good. This is a Colombian hidden gem! Just as I was lamenting the lack of good food options here, I came across this empanada stand near my gate. I ordered three empanadas: the chicken, the beef, and the spicy beef. The first two were decent, not bad but nothing special. But the spicy beef empanada is the single best empanada I've had in my life. I know that sounds crazy. But seriously, this random empanada stand at this airport has my favorite empanadas I've ever had. The spicy beef is perfectly seasoned and moist. The outer shell is the perfect crispiness and not too thick. This is now my go-to place whenever I come to this airport in Minneapolis.
