MUST TRY! We were traveling on I-70 and wanted to stop before the PA Turnpike. My husband was craving Asian so when I looked into Bedford, PA Nūdl popped up! We made the detour into town and WOW are we glad we did. We started our dinner with the Thai Shrimp Satay, and those flavors were . I was nervous our ramen entrees were going to disappoint because the appetizer was so good. Good thing I was wrong! The garlic ramen was great for those who don't like spice or in your face flavors. It was mellow, and a great dish I've you've never had ramen before. The teriyaki egg was delicious when you open it and let it soak up the broth. It was good, however, I like in your face flavor and spice. The special of the day, the Tonkotsu Ramen, was absolutely delicious. It was spicy with rich bold flavor and tasted like it had been on the stove simmering for hours. The pork belly had fat melting off of it, it was so tender. The dish was just.....perfection. The service was great! You order before you sit down and the two woman show absolutely killed it. There was one couple ahead of us and we got our food within 10 minutes of ordering. It was piping hot and we devoured it. The ambiance was dark, moody, and it was a whole vibe. The art on the walls was bright and colorful, a great contrast to the dark wood. The kitchen is open so you can see the ladies cook while you wait if you'd like. The restroom is outside of the actual seating area and you need a key. Overall I'm shocked that this historic little town gave us a 5 meal. We will definitely be making the detour to visit Nudl again!

This place was a sweet gem. I hope they aren't too hidden and get great business! The food was superb: THAI SHRIMP SATAY spicy red curry, green onion, rice noodle, peanut sauce This dish was so good, in the end I had to slurp the rest of the juices off the plate. Amazing flavors! BIBIMBAP bean sprout, carrot, bell pepper, jalapeno, cucumber, sushi rice I've never had this dish before and I love Korean food. My son got this and I have to say it was delicious all around. The sushi rice at the bottom was a nice addition. The presentation was also very delightful. KOREAN BAO BUNS Choice of Asian BBQ Pork or Angus Brisket, Cucumber, Radish, Sesame I could eat these all day! The brisket was yummy, the mayo ( I think) made each bute creamy. This is a must have! SPICY GREEN CURRY UDON Thick White Flour Noodle, Green Curry, Coconut, Ginger, Basil, Bok Choy My son's father got this dish, I tried the broth and it was spicy and flavorful. The spice was not overwhelming. Guava Lemonade Boba Drink Yummy yummy! Japanese Whiskey Cake I think this was a special but I had to try. It was sort of like a pound cake but with whiskey and ice cream I don't live in the area but hope in 2 weeks, when I am in the area, we get to eat there again.

    Special Tonkatsu Ramen menu

Really enjoyed my meal of their special: tonkatsu ramen. Was extremely filling and had wonderful taste and variety of vegetables. Pork was so tender and just melted in your mouth. I also got the guava boba tea which was delicious with just the right amount of sweetness.

Ramen is good. Not $14 or $23 if you want protein good. Especially when they aren't using the proper noodle 2 buns are $14. Lol. I have been to ramen houses in DC, VA, NYC that aren't that much. Let alone small town Bedford, PA. Service is counter ordering and they ask if you want to leave a tip. Nice people. Ambiance is casual - their range hood doesn't work bc the place become a foggy mess when they get busy.

10/10 Food: Great! I actually didn't take a pic of everything we had but I can list it so y'all can hopefully try it for yourself. Pho Bo 8/10: Beef broth, highly spiced with what seemed like a lot of peppercorn, rice noodles and a few tiny pieces of beef. I'm a bit spoiled on the great Vietnamese food we have back in Houston, TX but this was a good version. The things that I found different were that the broth was dark and not clear like a good beef Consumé should be but the flavor was good. And there was very little actual beef to eat in the soup. That's why it was a 8/10. Mushroom Udon 10/10: My cousin ordered it and that broth was amazing! Very meaty while being light. So much flavor packed into the soup. Good job. Pork Wonton with Shrimp 10/10: Very good wonton soup base with good size shrimp and wontons. Very nice broth. Korean Bao Buns 10/10: Good job on these too. We all enjoyed these and I highly recommend them. Pork Gyoza Dumplings: Nice thin skin, very tasty filling, crisp edges from the pan frying. We all agreed these were our favorite. Service 10/10: The lady taking our order was extremely patient with us trying to figure what we were having and all our talking back and forth. I'm so great full for their patience. It was our first time too. Ambiance 10/10: Modern decor as you can tell by the photos. Stark but still inviting. It's a small space but it doesn't feel cramped. Overall, a really nice experience and I would come back to try some other things.

Everyone run to this place asap. Nudl has authentic fare and the restaurant space itself is very welcoming. It feels as if I've been invited into someone's home to have dinner with them. First off, the staff were extremely kind. Made sure we understood the menu and were very attentive throughout the entire meal, making sure we liked everything and had everything we needed. And the food - wow! I'm so glad an authentic ramen place came to Bedford. We got the Bao buns and dumplings as starters. The Bao buns were huge. The combination of the soft buns and tender pork was awesome. My dad liked them so much he got an order as his entree. And the dumplings were also delicious. The sauce and toppings on those took them up a notch above a typical dumpling. For entrees, my sister got the sweet and spicy ramen with shrimp. The shrimp were huge and cooked perfectly. She said that she wants to try the pork next time, given how delicious and tender it was in the appetizers. The flavor of that ramen was well-balanced - not too sweet, not too spicy. My mom got the mushroom udon, and she liked the larger noodles. I got the garlic ramen with shrimp. Like my sister, I'd get pork in mine next time - although the shrimp were very good. The ramen portions were insane. We ate until full and it looked like we didn't even dent the meals. So we had a ton to take home eat later. Finally, the bubble tea. Again, so happy this area got some bubble tea (and not just bubble tea with those fruity popping bubbles...) The coffee bubble tea was pretty sweet, even though it was coffee flavor. It had a caramel-like taste to it, which I liked. My family had never had bubble tea prior to this meal. They tried it and loved it. Kept passing it around the table the entire meal. We will definitely come back to Nudl!

We stopped here on a cold week night in late November. The place is tucked away in an older shopping gallery in downtown. We were the only dine-in guests, but the kitchen was busy filling takeout orders. Dining area is pleasant and spacious. We had the Vietnamese rice noodles and the Mushroom udon, both with tofu. The large bowls arrived piping hot and steamy. The rice noodle dish was packed w/fresh veggies and had just the right amount of spice. The udon was filled with earthy shitake mushroom, onions and chopped kale, but the star of both dishes was the extra firm lightly grilled and seasoned tofu triangles. Perfect meal to warm your tummy on a cold night!

Udon with tuna, Bao buns with brisket, and mushroom ramen.

Wow wow wow! Stopped en route to Washington D.C., had several items: Pho, Ramen, Udon noodles, dumplings, and Bao buns. All were fantastic and very large portions, fresh! The restaurant itself is very cute, located in an odd building. We will definitely keep Nudl in mind when passing through.

Fantastic little place in downtown Bedford! The epitome of a hidden gem. I had the best ramen of my life here! The restaurant itself is so cute and welcoming and the staff is friendly and accommodating. I got the miso ramen and did not want to stop eating it! The girls in my family and I go to Bedford every fall and I can't wait until next year to try some more things on the menu here!

I liked the addition of panko breadcrumbs for crunch, but I wish the imitation crab meat had been shredded more finely for better texture. For my entree, I ordered the Spicy Basil Crispy Duck (added $1 for Thai spicy). They definitely delivered on the spicy level, but the duck itself was not crispy. It came with rice and bell peppers and basil. The sushi tasted fresh, which was good. Service could use some improvement. We had to ask for small bowls for soy sauce, and when we requested a dessert menu to celebrate the birthday, we were told the kitchen had already closed. It would have been nice if our server had given us a heads up before the kitchen closed. The ambiance is cozy. It almost feels like dining in someone's house. They had Halloween decorations up and murals of historic Frederick painted on the walls. They also have a private parking lot, which made it convenient. Overall, food was good, but a little more attentiveness from the staff would've made the experience even better.

SU ordered Kung Pao Shrimp, her "go-to" and every Asian restaurant, and compares each one to China Garden's version. Her verdict: Modern Asia's was "OK", and she told me I could eat the leftovers for my lunch. I did. My verdict was the same: OK, but nothing to write home to Mother about. (My comparison, BTW, is to a restaurant we enjoyed in Ithaca New York that made Kung Pao with peppers that would flay your face from the inside if you dared to eat one. Modern Asia's didn't even tickle, making it a let down). I ordered Seafood Combination Chinese Yellow Curry, a new dish for me. It was yummy. Described as one-pepper spicy on the menu, it had less heat than the Kung Pao, but the curry sauce had layers of flavor. It featured shrimp, scallops, and calmari plus a wonderful mix of peppers, onions, and other veg. All were nicely (crisply) cooked, even taking into account the Door Dash delivery time. I really enjoyed it. Next time I may ask for a bit more heat, but as it is, I hoovered up every morsel. Try it - you'll like it!
