    The best restaurant in Hernando County. I have been a customer there for over twenty years and have never been disappointed. Try the Rack of Lamb, you won't regret it.

    What a special place to have an anniversary dinner. They have a very varied menu, the restaurant is a little expensive but different from everything I have eaten before. Excellent service from the staff and the atmosphere is lovely.

    What an amazing little jewel hidden in Spring Hill. We were really amazed. This charming little bistro truly surprised us. My wife and I weren't dressed to go out but we were hungry. Even though we looked like bums the staff welcomed us in and provided very good service. We were totally bummed that they didn't have the elk but the rack of lamb and veal chop did not disappoint. Unfortunately we were too full for dessert so we must go back. Prices are steep but the food is worth it.

    Our first visit, took my cousin for her 60th birthday. The prices are on point, the food is exceptional, if I could rate it higher I would, the service is outstanding, what a gem this place is, I can't say it enough. My compliments to the chef and of course our amazing host and waitress!

    Anyone that knows me is fully aware that I adore small restaurants with amazing food and Nouvelle Cuisine is exactly that! Tucked away in a small shopping center in Spring Hill this little place takes you by surprise. When you walk in you are warmed by the charming atmosphere, and graciousness of the one of the owners Isabelle, who is full of life as she welcomes you in. She takes her time with each table sharing her knowledge of the menu, and patiently explaining the options to her guests. The menu is small but packed full of flavorful options from Rack of lamb, mussels, duck, elk, filet mignon, and a wide selection of fish dishes. We started off with one of the cheese boards and it was perfect! Isabelle will also help you with choosing one of her delightful wines to pair with your meal or navigate their European beer list to find just the right fit for your meal. There is something for everyone here. This is a place you can come in, sit back, and Enjoy great food, great wine, and relax with people you love most. Don't skip this place when you're in the area!

Still, a respectable place. I'd like to see a wider variety of herbs and spices used and tone down the the salt and garlic. This place has michelin potential, but is held back by Food Prep 101 mistakes.
