Let me start by saying the location is small. (maybe 17 tables inside and 4 tables outside) The outside has a nice shaded cover but it is summer so expect to feel hot if you're sitting outside. This is my favorite go to noodle spot. First choice for chicken soup every time. All the ingredients taste fresh and the food comes out quickly but always tastes like freshly made quality simmered cuisine. Came here last night with my boyfriend because we were both craving noodle soup. We saw Noodle St. as one of the options and were intrigued by its most popular dish, the spicy beef noodle. Let me tell you, it's actually that good! We'd rate the spicy beef noodle a 4.5/5. There were four types of noodles to choose from, and we went with the knife-cut noodles. They were honestly a bit too thick for our liking, but we loved how chewy they were. The broth was flavorful with a nice punch of heat. It's spicy, but not to the point where it overpowers the flavor of the broth. The beef was super tender; however, we did feel like they skimped out a bit on the portion. We also got the beef roll as an appetizer, which we'd rate 4/5. It had that light, crispy yet slightly chewy texture, wrapped with thinly sliced beef, cilantro, and scallions, all tied together with a thin layer of hoisin sauce. It's such a simple dish, but it always hits the spot. Unfortunately, it wasn't freshly hot, just warm, which is why we rated it a 4 instead of a 5. My boyfriend and I split the two dishes, and it was enough to fill us up. There was no wait when we checked in around 7 p.m. on a Saturday. I opted for knife cut noodles and it has to be my fav-- irregular strands of thick, chewy, and bouncy noodles -- so heavenly ! The flavor in this stir fry was smokey, savory, slightly gingery, umami and the vegetables paired all well-- reminded me of chow fun sauce . Love the use of kale, onions, and bell peppers . Can I just tell you that their staff is AMAZING?! I cannot remember the last time I went out to eat and everyone was so attentive and kind. Kuddos to the team! And then there was the food...DELICIOUS. How do you not try the beef noodle soup, especially when it's their signature dish. It did not disappoint. This place never disappoints. I got the spicy beef soup while my friends ordered the Dan Dan noodles and original beef soup. The depth of soup was very nice as well as the texture of the noodles. They have 4 different types of noodles depending on preference but I got the knife cut since I like chewy noodles. The beef rolls were good too since it was a scallion pancake rolled between beef and cilantro. It was so tasty and juicy with a lot of flavor. Delivers an authentic experience that apparently is very popular and growing outside of the Chinese / Asian audience. The beef noodle soup meets my standard for being good, was actually a tad spicy as I drank a lot of water but I'm perfectly fine with that. I'm personally a fan of Szechuan version of beef noodle soup, richer broth but this was flavorful in a more mild way that is still good. The meat pieces and everything is as you see pictured... Some girls at our table thought it was quite spicy so beware. There can be a bit of a wait so be aware - I went on Sunday afternoon and still had to wait although we had a table of like 10+ If you don't, beef wrap is a must try if you've never had it, split it with people. We had been looking for a place that makes fresh noodles and came across this location. It sits inside a small shopping center that you can see from the street. It's pretty cool, you walk in and you can see the kitchen through a large window so that you can watch them making the noodles. They give you 4 different opening on the kind of noodles you can choose from which is pretty amazing. The service was quick and friendly. This may not be a completely fair review as I'm eating mostly vegetarian now but in order to fully review a place like Noodle St., a diet was broken. Or to some, a way of life. Unfortunately it wasn't as satisfying as one would think from trying their spicy beef noodle. It had good flavor but not nearly deep enough. The meat was also too chewy, not cooked enough to make sure they truly melt with one chew. The beef rolls, which are a big signature dish for all introductions to Taiwanese food-- were ok. Not terrible and not great. It's a great beginner step into what the best beef rolls are supposed to be. That sweet hoisin like sauce was balanced well but not enough beef slices for the proportion. But still good. The noodles were done well. You get your choice on wide, skinny or shredded cut. Stay away from the vegetable noodle. It's so bland even the monks may sprinkle some salt and soy sauce in it. Nothing about it tells me there's any care into the broth. Granted it's not all easy to make a vegetarian broth bomb but... they could try? That cucumber salad though was done pretty proper. It's got chunks of garlic and tons of cilantro. Love! If they added some sliced ginger and hot sauce it would be perfect!! Bottom line-- eh. I'll be on the search for a better Taiwanese noodle place. read more

Signature beef noodle with the flat noodle was flavorful. Beef rolls were savory and crispy with lots of green onions. Cucumber salad was also a nice side dish. We also ordered the crispy tofu but was unimpressed with it so we probably won't order that again but everything else was delicious. We sat outside and it was really nice -we ordered the pan fried dumplings, fried calamari, beef roll pancake, stir fry noodles, scallion pancake and the Japanese miso noodle soup. While we waited for our food, we could watch our noodles being made in their open kitchen, which was very impressive! Trust me when I say each noodle dish could feed two people - maybe even three. Although Noodle St is a chain, their food is consistently delicious and fresh. The Fullerton location fills up very quickly during lunchtime, especially on Fridays, so I recommend ordering pickup or having someone go ahead of the rest of your party to get on the waitlist (I think this location is a little bit smaller than others). The staff here are super nice and quick with service. For the starters, I absolutely love their cucumber salad. I feel like it's underrated, because the garlic and sesame oil levels are so well balanced, and also just packs a punch of flavor that makes you almost want to have the whole dish to yourself. Their spicy chicken wontons are also well-seasoned and delicious. I think I have always ordered their signature beef noodle soup, and there is no secret as to why it's the only soup I'll order. If it weren't for Noodle St., the strip mall it is in would be desolately empty. The crowd drives us to get delivery from here a majority of the time, and we've tried nearly the entire menu over the last couple years. But if you do opt to dine in, you'll see the kitchen through large glass windows, where you can watch them make their noodles (and everything else) by hand. Service is fast, no-nonsense, but still polite. The food always slaps if you know what to get. My Taiwanese partner's all-time favorite dish is beef noodles, and we travel far and wide to find bowls that suit his tastes and Noodle St. is it. The spicy beef noodles with knife cut noodles and cucumber salad are musts. The broth is DEEEEEP with flavor, and the beef is melt-in-your-mouth tender. There's chili oil on the table so you can add it yourself if you need. The broth definitely tastes better with the chili oil! The noodles were fresh, chewy, and tasty! Love it when triangle noodles are available (they're my favorite kind). The meat and daikon could have been better. Beef roll was also decent. It did fall apart as we ate it. If the greens fall out, we put them into our soup as extra garnish. I have been to noodle st in all the locations except this one, this was my first time in Fullerton , after afternoon park, kids were hungry and we went. The beef rib in noodle soup is ok , soup is fine, but the noodle is too salty compared to what I have eaten before. And the braised chicken , I could only eat couple chickens and knives cut noodle inside of it is not fully cooked. I could literally taste it. The server assured us they did, and we were given the option of beef or chicken broth. Based on that, we ordered 2 Spicy Beef Noodles and 1 "kids" Chicken Noodle Soup. What came out? Three full-sized adult bowls -- and when I asked, I was told they don't even offer kids' portions. This was a clear bait-and-switch upsell, and it was insulting. The server who took our order actually acknowledged the miscommunication, apologized, and even offered to cover the mistake -- which was appreciated. That's where the professionalism ended. Enter the manager -- who wasted no time mentioning her six years of experience, as if that excused what came next. She aggressively reached across the table toward my toddler's bowl and barked, "YOU DON'T WANT THE SOUP, OK?!" -- as if bullying a child is some sort of customer service strategy. It was uncomfortable, unnecessary, and beyond inappropriate. To top it off, she loudly hollered about the cost -- first shouting it's "$4," then correcting herself mid-rant to "$8." The whole thing felt like we were being shaken down in a place that's supposed to offer hospitality. I'm a local restaurant owner myself, and I can confidently say this manager has completely lost touch with how to handle customers, complaints, or even basic decency. Pasadena's location will be my go-to from now on -- at least they know how to treat people.
