Initially first thought the line is way too long but as soon as we worked our way back around the line seems to be going by pretty quickly. We waited at most 10 mins. It does get a little hectic because the place isn't very big and once it gets to you and there's no table, then they kind of skip and goes to the next person that they can fit. A few hours later, when it was time for dinner, I walked the neighborhood to get a feel for the area and noticed there was still a line. I kept going, wanting to see what else was around. When I eventually headed back toward my hotel to decide where to eat, the line was still there. At that point, curiosity won out. I asked a few people what the wait was for, and they told me it was the best noodles in town. I was skeptical, but I decided to see for myself. I waited about 35 minutes. While in line, I overheard people talking about ordering to-go versus eating inside and how the portion sizes were different. I didn't want to take any chances, so I chose to dine in. The restaurant was packed but impressively efficient. As a solo diner, they sat me at a four-top with people I didn't know. The server didn't really frame it as a question, he just let me know someone would be joining. That pushed me out of my comfort zone, but being in a new city, I stayed open to the experience. I ordered the House Special Beef Rib bone-in noodle soup along with an order of dumplings. The dumplings were well-seared, hot, and satisfying, a solid way to start the meal. The noodle bowl was the anchor. The noodles were tender but still had a bite, exactly how I like them. The broth was rich and deeply flavorful, and the beef rib was something you take your time with. On its own, the bowl was excellent. Once I added the chili oil and spices the table recommended, it became something else entirely. My table all went for the House Special Beef Rib in the 24-hour cooked broth, both spicy and non-spicy. Both versions were packed with flavor. The beef was fall-off-the-bone tender and so comforting. I loved the spicy one with the peppercorn kick, but the broth is pretty oily so it is not the type of soup you can sip on. The non-spicy broth was still delicious and much easier to enjoy by the spoonful. The bowls come with radish, cilantro, and noodles. I tried different noodle types and the thick noodles were my favorite since they held onto the broth so well and had that perfect chewy bite. The portions are very generous. Honestly, two people could easily share one bowl and still feel full. We also got the mantou and it was fantastic. You get six pieces, perfectly golden on the outside and soft and fluffy inside, served at the perfect temperature. Dipping them into the condensed milk was heavenly. Just exemplary food and remarkable consistency. If I was younger, I would be eating here every day. Alas, we have to watch what we eat as we get older. Not that anything here is unhealthy. Actually, it borders on healthy, but it is easy to overeat here. Great appetizers. I love the cold cucumber side dish. It has a little spice with a garnish of red onion. The nice thing about this dish is that it is served cold, nearly chilled, and tastes just-made. The cucumbers are not sliced or chopped but cracked and split. It's a unique preparation. I am reminded of that line from the FX series Justified: If that don't heat things up and cool things down at the same time. The potstickers are also excellent. I remember when they were super cheap on the menu. They're still cheaper than most places of similar quality. The skewers are okay, but I'm not much of a skewer guy unless it's yakitori. While the broth and noodles are near-perfect, the noodles could be a little better. They are white noodles, whether you get the wheat or the rice variety. They are just a tad soft for my taste.
