Everywhere I find myself I ask where the good barbecue is in town. Neighbor Tim's kept coming up, so I made a bee line for the downtown food court. Upon arriving I was not really clued in to the size of this food court, or the variety of tempting foods that occupy so many stalls. Tim's was easy to find either by sight, or by nose. I tried some pulled pork, brisket and some baby back pork ribs with a side of barbecue beans. It looked amazing, smelled amazing and eventually as I worked through my meal, tasted amazing. Not just for Boise, but for anywhere. The atmosphere of the food hall really added to the experience too. You would sit near other people that ordered from other stalls, and you could spy on what they were eating. It was clean and well policed for trash and to clean dirty tables. One of the original anchor eateries at this food hall and maybe the only one of the original handful that remains as turnover has been high for the others. I ate here once, right after they opened, but I have eaten take out many, many, many times from the Neighbor Tim's 'mothership' on Goddard in Boise and every time, at both locations, the food has been excellent, the people friendly and the service efficient. The food is all scratch made. I don't know if meat smoking is also done inside this downtown, food court kitchen location, but if you head out to the Goddard location you can smell the smokers that are at the back of the site before you even see them. Tim's sources their beef from an Idaho ranch run by a young couple and carefully sources other items too. The German sausage is made by a nice Romanian couple who own a great sausage making place and deli in Nampa. And so on. Calling this authentic Texas-Style bbq is an insult to real Texas bbq. We've eaten here a handful of times since moving from Texas, trying very hard to give them the benefit of the doubt if they were just having an off day, and we've been thoroughly disappointed every time. This is the driest brisket I've ever had in my life, even when I asked for a "moist" cut. The taste is fine, but I shouldn't have to saw through it with a knife. Good brisket should fall apart if you look at it too hard, not crumble into tiny bits. The sides are fine, kind of bland and nothing too memorable. If was served in Texas, it would be laughed out of the state. All of that being said, their staff has always been phenomenal. They are always so polite and helpful and I do think they have a great group of individuals working at their locations. All in all, this is not authentic texas style bbq. I figured that was a good sign-since none of the other eateries had lines. I came back and ordered a pulled pork sandwich with a side of beans-then filled a small cup with the house barbeque sauce. I'm definitely not a connoisseur of barbeque, but I've heard there are different types, depending on the region you are in. Maybe I've gotten used to a different region, because what I had here was very vinegary and I didn't care for it. Both the meat and the beans had harsh undertones. It was made stronger with the sauce, so I think it's the flavor of the BBQ sauce that I don't care for. Went there last weekend after trying a free sample of delicious brisket the weekend before so was quite excited to get the full experience of both brisket and ribs. When ordering I was quick to request as rare/medium rare of brisket I could get was promptly told " it's all the same cooked earlier on the day"... hoping it was as good as the prior weekend sample I figured it would be fine.... it was not. We were having a large family event for our daughter's graduation from Boise State & she had arranged business barbecues with neighbor Tim's before so told us that was what she wanted for her graduation dinner. Tim took the time to go over the menu, offered advice on meats & sides based on the number of people we would have. He delivered it personally to our air bnb which was out in Eagle. So a little bit of a drive for him. He called ahead of time with an ETA & arrived right when he said he would. Food was all in labeled containers & FULL bottles of barbecue sauces & Salad dressings were provided. Now... the food??? AMAZING! Meat was so tender & flavorful! One of our sides was the potato salad. Most places it's kinda basic & bland. Not this one. It disappeared about as fast as the meat did! So I would definitely recommend that as a side. Yall this is the best bbq in Boise. Okay so I went in thinking oh it can't be that good but I was pleasantly surprised. The staff was so friendly, the servings for my two meat plate were plentiful and they even asked me what cut of brisket I wanted. The fatty or leaner cut? Fatty all the way. I was in heaven they asked me. The brisket melted in my mouth, the pulled pork was also delicious and the Mac and cheese and pickled onions... NOM. Yep, there are a lot of "other" food places to choose from at this warehouse location but I guarantee you will never regret choosing a meal from Neighbor Tim's BBQ. Service was professional yet super-friendly--they even offered us a sample of the pulled pork *and* the brisket since we couldn't decide. The pulled pork was tasty but the brisket was amazing so it's what we chose for our "platter" meals. We had sides of mac and cheese and the baked beans as well as the homemade coleslaw. Brisket is one of those meat choices that, when good, can be excellent in texture and flavor--but I don't always find it good; so often it's dry or flavorless. But the folks at Neighbor Tim's have figured out the secret to prepping great brisket: It has the requisite bit of fattiness but not so much that you feel you've paid for a plate of inedibleness! The brisket was juice and full of smokey flavored goodness. Slices were generously thick and meat was weighed before being put on the platter so you know you're getting full measure. Note that all meats here seem to be served without an auxiliary sauce--you get to choose what kind of the house-made sauces you like (or several you want to try!) and add it in the amount or with the combination of flavors you choose. Or, enjoy the simple flavors of your brisket with no sauce at all! The macaroni and cheese was good--it might have benefited from being just a *bit* warmer in serving temperature. The coleslaw (the team here slices the cabbage by hand) is simply-flavored with apple vinegar and light on the mayonnaise and is refreshing in that it's not the typical overly-sweet concoction called "coleslaw" at so many places. The winner, though, were the baked beans (offered with and without brisket bits--get it *with* 'em). So very good and the best accompaniment to that delicious brisket. The service is always on point and every time I have walked away feeling great about my experience. The atmosphere of this location is very open located in the Warehouse food district. Great open concept with tons of seating all centrally located around a few bars in the middle. For food today I had the 3 meat combo with double brisket, baby back ribs with beans and Mac n Cheese. All the flavors were delicious and the brisket being the shining star. The meat stands alone by itself but their vinegary based bbq sauce is something special to dip in. Plus their mustard bbq sauce is perfect for any of their pork selections. My wife had the brisket nachos and while I saw complaints about the cheese this is what you want in this guilty pleasure. Whether it comes out of a can or not it's the gooey treat people look for. It's topped with your choice of brisket or pulled pork. She had the brisket and was just enough...plus the side of jalapeños and purple onion make this dish complete. Pro tip ask for a side of their pickled onions as they put this and any other dish over the top. Finally! Some good bbq in Boise. I've been to many other cities and had excellent bbq but all the go to's in Boise have always let me down. Either the meat was dry or they never had good sides. This place was very good. We ended up doing an online order and they were speedy about it. We got the multiple platter option with four sides. I'd say of the meats, my favorite was the pulled pork and the ribs. Usually places in Boise can't figure out how to not make these two items dry, but Neighbor Tim's has figured out how to lock in the juices! For sides we got 2 Mac and cheese, beans with brisket, and potato salad with brisket. My family is known for our longtime family recipe of potato salad so it's rare that I find a good tasting one that's similar. Tim's has amazing potato salad. The beans were also good. Mac and cheese had a slightly grainy texture to it for some reason so I can't say it was my favorite. But we will definitely be back! read more
