The Kevin Costner was another standout. The subtle hint of lavender from the Herbes de Provence rising through the rich red sauce was such a beautiful, unexpected note. It turned out to be an excellent choice. This restaurant is located in a strip mall and isn't all that special from the outside, but presents itself as a great casual place inside. From the moment we entered until we left everyone was so friendly. I started with the wedge salad and it was one of the best wedge salads I've had anywhere. Plenty of cheese in the dressing. My wife's onion soup looked good and when she let me have a taste I thought I should have had a cup! I tried the filet tips. They were cooked medium rare, just as I like them! The beef and pasta entrée my wife had was a great choice. The wine list had several good choices available My wife and I were celebrating our wedding anniversary and Rural Metro made our occasion very special! Chef Tiny prepared Bananas Foster for us. The chicken was tender, perfectly seasoned, and full of bold Caribbean flavor. The black beans and fresh mango salsa complemented the chicken beautifully, while the island rice was an outstanding side that tied everything together. My youngest daughter chose the Jerk Chicken Bowl and couldn't stop talking about how good it was. The portions were generous, and it delivered the same incredible jerk chicken, beans, rice, and toppings all combined into one flavorful bowl. I went with the Pineapple Teriyaki Chicken served with island rice and mashed sweet potatoes. The chicken was cooked perfectly, the teriyaki sauce had just the right amount of sweetness without being overpowering, and both the rice and the mashed sweet potatoes were exceptional. We also sampled several of their Caribbean-inspired cocktails, and every one of them was well-crafted and balanced. I especially enjoyed the rum flight and a Mezcal Old Fashioned--both were excellent and worth ordering again. The atmosphere is just as impressive as the food. The restaurant features two levels with outdoor seating on both floors, and the upstairs bar creates a great place to relax. They also offer live music on Thursdays and daily specials, giving us another reason to come back. If you're looking for outstanding Caribbean-inspired food, creative cocktails, generous portions, and a fun atmosphere, and great service, Palm & Paddle is absolutely worth the visit.
