The restaurant is only open Friday and Saturday 11am - 3 pm. This is a very popular spot amongst local, so get here as soon as it opens. We arrived around 11:30 am and there was already a long line that formed. It can take awhile to get to the front, but it's definitely worth the wait! We ordered the ribs and the brisket with mashed potatoes, beans and mac n cheese. We also ordered candied pork belly (not in the attached image). I believe the ribs and brisket are their popular options. Both were very flavorful. The ribs fell right off the bone. The brisket was juicy and tender. However, the candied pork belly was definitely an underdog. It was my favorite meat because it had that sweet and very rich barbecue flavor which made every bite so dreamy. For the sides, I didn't really find any over-the-top, but they were decent. Maybe the mac n cheese was a bit on the dry side, but still really good to pair with the barbecue.

You order at the counter like you would at a true Texas BBQ, and the line moves quickly. This is one of those places where the meat itself is so good that you can go sauceless and still love your meal. Inside, it's large tables with bench seating where you'll share tables with other BBQ fans. It's a laid back, comfortable environment where you're almost guaranteed to talk to someone who isn't part of your group. Wayne's is also part of the community. They have a loyal following, even with their extremely limited hours, because they invest in and give back to the community they're in. This is a place that has earned its spot as one of the best BBQ and neighborhood spots north of Denver.

We used to come to The Old Man for years before we had kids and moved over 30 min away. I don't…read morethink we had been back since pre-COVID times, but we decided to make the extra drive because we remembered the great BBQ and food we used to get there. Boy, has this place changed. We knew the routine that this was a walk up to the bar to order food/drinks but we loved the idea of being able to order from a QR code on the table and have food and drinks delivered directly to our table. Unfortunately, the execution completely missed the mark. After placing our food & drink order, we waited several minutes with no drinks. We were about to just go to the bar ourselves when our food arrived. When we asked the food runner about the drinks, we were told, "They're busy, you might have to go to the bar to get them." That completely defeats the purpose of ordering ahead through the QR system. My husband ended up standing in a very long bar line, and just as he was finally reaching the counter, our drinks finally showed up -- probably 10 minutes after the food arrived which was about 25ish minutes after placing the initial order. By then, our food was cold. The brisket sandwich had barely any actual meat on it (maybe 2oz of meat max) and was mostly inedible fat. The wings were dried out, cold, and tasted like they'd been reheated multiple times and drenched in buffalo sauce to cover it up. No one ever checked on us to see if things were okay. (They used to come around all the time) We also had to get our own utensils and condiments which we knew from previous visits, but the guy that dropped off the food made sure to tell us to bus our own table, afterwards, scrape food off dishes into the trash, and return trays and dishes to busstubs they had set out. Like I said, from our previous visits we knew this is more of a bar-service style restaurant and not full table service, but the expectation of any sort of a tip much less the 25% gratuity that was automatically generated/expected on our e-bill before actually finalizing our bill is honestly ridiculous. Other than someone dropping food at the table and a bartender opening a can of beer, there was essentially zero customer service. We ordered our own food, got our own utensils and condiments, cleaned up our own table, and still somehow were expected to tip at a level you'd expect from a full-service restaurant!? I can get the same level of service at a fast food restaurant and no one expects a 25% tip there. To top it off, the live band felt more suited for a retirement community social hour than a lively Saturday night crowd. Needless to say... in the six years it's been since we have been to the old man, we clearly have missed nothing other than its decline.

This place has become part of my travel routine. My usual strategy: fly in early, stop here, order the big meat platter, eat about half of it, go lift, and then finish the rest on the drive to site. Balanced lifestyle, right? Last visit I had turkey, brisket, sausage, and ribs, and every one of them brought something to the table. Great smoke, great flavor, and plenty of sauce options if that's your thing. The staff were friendly, the atmosphere was easygoing, and it had that comfortable, family-run barbecue feel that you hope for when you walk into a place like this. If I'm anywhere near the area again, this will definitely be one of my stops. Hard to beat good barbecue that fits perfectly into the travel-and-gym routine.
