The hostess was very friendly. They sat us right away even though it was busy. They also let us move tables, as I was getting iced out by the air conditioner. We order chips and salsa (which are not complimentary), but only $3 and the salsa is wonderful. For dinner, we ordered the carne asada plate and the two taco plate. The carne asada was tender and full of flavor. It was cooked with grilled veggies, and served with rice and beans and hand made tortillas. The tacos were large and tasty as was the rice and beans. If we were staying longer in the area we would have returned to try the other restaurant specialties.

I was in Longmont for the home and garden show and I was hungry so this was my opportunity to give Rosa's Cantina a try. They were very busy but I was greeted and seated promptly. The place is nice and they have a lot of seating and a patio but too cold that day for outdoor dining. I ordered the Burrito Tijuana which looked to be a good choice based on the menu description. The burrito was very good with a generous portion of steak. The chili smothering the buritto was flavorful but not very spicy. I wish they provided a little more pico salsa on the side, there was probably a teaspoon of pico. I enjoyed the buritto, it was sizeable, flavorful but not spicy enough for my taste buds. The server was good, she was attentive and pleasant. The place was clean, prices were reasonable, service was good as well as the food. Would I go back ? I might go back if the planets align but I wouldn't make a special trip. My only real letdowns were the shortage of pico and they don't offer free chips and salsa. I've come to expect and appreciate Mexican restaurants who still offer free chips and salsa.

Coincidentally, the couple next to us had ordered the same dishes! So, maybe we got two of the more popular items on the menu. We didn't get drinks this time, but may have to try a margarita when we come back. Service was friendly and attentive. Definitely a spot worth checking out if you're in town. I tried the chicken tinga taco, carnitas taco, short rib enchilada with Christmas sauce, and the chicken tinga tostada. The chicken tinga tostada was definitely my favorite. It had really fresh greens and a lot of flavor without being too heavy. The chicken tinga taco was probably my second favorite and had some of those same flavors. The carnitas taco was good too, but it didn't stand out quite as much compared to the other two. The enchilada was probably my least favorite, although I really liked the red sauce. I got the Christmas sauce with both the green and red sauces, and the red had a really nice smoky flavor. The service was actually impressive. Our server was really friendly, and somehow we got our food faster than we usually do at some fast food places. I also really liked all the plants and flowers out front, which gave the place a nice atmosphere. Overall, I really enjoyed it and would definitely come back.

The food menu is on the smaller side, but everything sounded pretty good. We weren't super hunger so we shared an appetizer sampler which came with fried green beans with an aioli, chips and guac and salsa and a queso dip. The chips were sooo salty we were having to wipe salt off them before eating, but then the rest of the food lacked salt/flavor. The green beans were decent, and the queso was pretty good. The guac lacked a lot of flavor. Probably wouldn't order again, but for sharing with the table it's a fine option. When we got to our table, it had been freshly cleaned up, but the table was soaking wet still. Service is what brought this up from a 3 to 4 stars for me. From the host to the server, everyone was really happy and friendly and helpful.
