Success is simple . . .
Good food, Good price, Good service, Good location.
The good is good enough. We had the following:
Fried Chicken: of course it's Max's & the chicken is good. I just wish it would be cooked slightly less. To me it seems a little bit overcooked & dry, but that is me.
Pork Singang: the veggies are cooked well & the broth was tasty. I just am not fond of pork belly. Why would you put it in soup (other than costs reasons) is beyond me. Just use some pork bones & pieces of pork, skip the pork belly.
Sizzling Tofu: my wife ordered this & she loved it. But it wasn't "sizzling".
Camaron Rebosado: years ago, circa 1985, I ate the best camaron rebosado - - it was at Max's on Roxas Blvd. Hands down the best ever. The recipe has changed since then. It's good & enjoyable, but no way near the dish from 30 years ago. Oh, how I wish I had a time machine.
Price: price of everything was fair & reasonable. Not cheap, reasonable.
Service: I know that the restaurant business is hard, but if you skimp on service . . . You will lose. Frankly, the service in this restaurant is poor. We waved for drink refills & the staff would ignore us. I know that they don't hire like they have in the past, but poor service can make a meal unenjoyable . . . And prevent us from returning.
Location: although it's in the middle of the Mall of Asia, there is a street that runs right along the restaurant. This is a very convient for us & anyone who is disabled as my Brother-in-law is - - - it makes it easy for him. In fact, he picked up a cab right outside the restaurant.
All in all, Max's is Max's.
