DISCLAIMER - I have dietary restrictions and allergies, which may have contributed to my experience at this restaurant. Prior to driving there, I call the restaurant to ask if they could accommodate me -- and they said yes. I got the chicken ramen and subbed for katsu protein, shrimp tempura, karaage and milk tea and my friend got the black garlic ramen. The karaage came out tossed in a an acidic sauce with sesame seeds -- almost like saucy wings. This caught me off guard because the menu does not indicate it would be covered in sauce -- and we didnt want it sauced. Shrimp tempura had 3 shrimps and the rest vegetables. Another surprise because the menu listed shrimp tempura as an item on its own, and then another line item for vegetable tempura. My assumption is this is a cost saving approach -- and while I have no problem with that, transparency would be good for customers. Just list out what is included in the dish so no one is surprised. The ramen was disappointing. The broth came out clear (like water -- i wouldnt dare compare it to pho because pho broth is packed with flavor). There was absolutely no flavor. It was the only ramen on the menu that I could have (again not what I was told when I called). I asked for soy sauce, chili oil and even dumped the leftover sauce from my tempura into the liquid broth and still it could not be saved. The black garlic broth was also bland. Neither of us finished the meal. Service was slow, only one girl working the entire dining room, (it was a weekend so packed). We waited for a while, they forgot my milk tea and it was impossible to flag the waitress until the very end. The only plus, they are extremely generous with the eggs. read more

Welp, I've finally tried Maru Ramen. After saying ive wanted to try it for the last almost 3 years lol. I love the ambiance of this place. it has the vibe of a mom and pop restaurant, which is what i love. The service was great, im terrible with names, i have no idea who helped me. But he was very attentive and helped me pick out my ramen being yhat it was first time being here. We came during the Lunar New Year celebrations when the City of Richardson was having a festival in the Chinatown plaza where this restaurant is located. The restaurant was packed! We sat in the waiting area for 20 minutes before a table cleared. Once seated, we ordered drinks and foods immediately, but waited at least an hour for our hakata noodle ramen to show up. The food was delicious, but the wait was so long, we missed the entire festival taking place outside. It was chilly inside. Our table was near the kitchen and the front door, but even when the door wasn't open, it was quite cool inside. I'm guessing they had the air circulating for the wait staff and kitchen crew who were probably hot from running around all day serving everyone. It wouldn't have been so bad if we could have received our ramen sooner so that we could warm our insides with hot broth. The food was delicious, well my spicy tonokata was delicious. It was flavorful without being so spicy that your nose started running. lol! The hakata noodles were plentiful and delicate enough that you could break them without slurping continuously for five minutes. Ha ha ha! Seriously, I was super happy with the tangled nest of noodles. There were a lot! That made me very happy. Waitstaff were nice, apologetic about the wait, good about refilling our drinks on a regular basis. Price was about $44 with drinks. Not cheap, but average for the area. The ability to choose your noodle type was something I love because my husband likes thick curly noodles (Sapporo style) while I love the thin noodles (Hakata). This place has a very calm and eye pleasing aesthetic, but the food was BOMB! I got the Shoyu (chicken broth) with chicken which came with egg, blanched spinach, shallots, green onions and I added woodear mushrooms. I forgot to ask for no eggs but I easily removed them. This was my first time having blanched spinach. It was a good flavor but chewier than expected for my texture people. The broth was very flavorful and delicious. I got the Sapporo noodle which is my favorite. I also tried the chicken karrage (sp?) (fried chicken). It had a great flavor and was well cooked. The coating isn't crispy though and had a drizzles of some sauce. I didn't mind the flavor of the sauce because it wasn't strong enough for me to notice. My first two experiences at Maru Ramen were positive but the last couple of times I have came here; I have been incredibly disappointed with the service and food. The last time I came to have a bowl of ramen, my boyfriend and I were looked at as we walked in then ignored for a couple of minutes. When someone did help us, we were sat at a dirty table when there were other tables available. I kindly asked to be moved to another table and they were not happy with my request, but they did move me. We ordered some fried gyoza (which was delicious) but the dipping sauce was not good at all. It felt like they just poured old soy sauce into a bowl. The ramen noodles and brother were amazing, but the pork belly could be worked on. Despite not having a great experience this past time, the restaurant is modern and clean. The tables are unique as they are are all wood; but the only downside of everything is how close they are together. Walked in the restaurant on Friday night and it was busy. Ended up waiting 30 minutes to be seated. There was a party after us that was seated first then us which was fine since we were seated right after but our table wasn't wiped down. Which makes me think someone ordered it and didn't take it or they made multiple and waited for someone to order it. Flavoring for the pork was okay. When we received the appetizers another server came and asked if we got water which I stated no we got soda which we got two minutes later. This was to the point where I knew they did not care not once did someone ask if we needed anything. Also the appetizers were given and 2 minutes later we got our ramen. Not enough time was given to at least finish our food. The ramen was okay. Very mild flavoring not enough broth. There was a good amount of noodles but you could not use the spoons to get any broth since there was barely any.
