    Good typical Italian food. Nothing exceptional. Decent service, can be slow sometimes but the restaurant is always packed.

Chef Alexandre Gosselin welcomed him in his kitchen to prepare a menu during the Montréal en Lumière festivities. What a nice occasion to discover this restaurant! Chez Victoire is located on the busy and well-loved avenue Mont-Royal, its paneled glass façade gleaming with warmth in the frigid night. The interior is fairly sober and masculine, with a touch of quirkiness (yellow bicycle!). I was seated at the long center table, close to the open kitchen window. It was a busy night, and the team was certainly working hard! I opted for one of the two cocktails designed for the event, featuring pine, herbal tones from gin, and citrus. The amuse-bouches were offered as a trio. A tasty tartlet in a thin, crisp shell, placed on top of a flipped bowl (microwavable, says the print). The second bite was my favorite: a little cocoon of shiso leaf and veal tartare, buttery, herbal and delicate. Then came a brilliantly pure arctic char with roe, besides a pretty construction with crispy potato ''scales''. The two were perfectly tied together with a smooth horseradish-infused cream with chive oil. The pumpkin gnocchi with lobster that followed was intense in its flavours, and had a surprising temperature difference between the warm gnocchi and cold lobster. The thin slices of raw pumpkin were perhaps more decorative than anything else. Then came my favorite dish of the evening: a mysterious piece of cod hidden under a cozy blanket of collagen-enriched sauce, marbled like calligraphy ink on a white page. The fish was a dream of delicacy, yet rich and strong in its flavours. Every bite was eyewateringly good. The duck that followed was a bit tough, despite a good pairing with beets and red fruits. The beet was sliced and rolled as a ribbon, unfortunately loosing its juiciness. The pre-dessert was an exciting combination of parsnip and chicory ice cream, somewhat severe but pleasant earthy flavours reminiscent of coffee. The dessert of honey and pollen was beautifully designed using a honeycomb mold, with drops of scarlet hydromel. The taste was particularly overwhelming in the sabayon, but relieved by the cool, clear-tasting white honey ice cream. A very engaging meal, with some up and downs in balance. Some elements, like pink geranium oil, were too delicate, while others were overshadowing.

It was around 3pm and of course we were the only people there, but generally didn't find the service to be that friendly or accommodating - it was more courteous and efficient as opposed to being very welcoming, which is totally fine. Overall, like many wine bars in Montreal, the BTG and bottle list skews very heavily toward natural or minimal intervention wines from all over the world (except the United States due to tariff boycotts). Although Quebec is a burgeoning wine producing region (often overshadowed by BC wines from Okanagan and ON ice wines), I found many lists did not offer much from the region, which is really disappointing. vinvinvin definitely had the most options available (perhaps 5-6 total of 40-50+ labels) and many BTG, which is great if you're looking to try some local wines. They do offer food, but the kitchen doesn't open until 4pm so we didn't try anything. Overall, I like the decor of the place and it seems like it'd be a really fun place to hang out with friends. But given that we were the only clients there at the time, I wish the service was a bit friendlier.

Prices were okay, and wine selection is not too bad. We got a couple of vermouths, which were nice to drink. We ordered olives to nibble on and I thought those were good. Decor looks unpretentious at least, but a bit too crowded for my taste. It's an okay place to visit if you want some pre-dinner beverages.
