First you select a broth (I don't do spicy, so I always pick their chicken broth; but friends and family enjoy the spicy flavors a lot). Then you pick your style of noodle (the fish noodle was fun to try, but I prefer the ramen or the knife-cut or rice noodles). Then you pick your toppings - a large variety of both meat and veggie options! It comes with a little veggies (spinach, corn, mushroom, bamboo) too. My favorite appetizer is their rice spicy honeycomb tripe - great marinade! Recently tried the Hainan chicken dish and it was good too (though I would prefer more ginger than scallion in the oil and the roasted peanuts, garlic cucumber are yummy too!). In the past we have also had the fried rice, which my kiddos really love. But the true highlight is to get the "large" soup noodles where they serve it in a bowl larger than your whole head. I personally prefer the 13 spices used in Duan. The noodles are also different. The texture of Duan is more consistent but Liang feels more handmade. Overall I'd prefer Duan over Liang but Liang has more choices such as beef pancake. In other words if you just want noodles Duan is a better choice but if you want more types of food this is an ok choice. There are also more choices for tea here.
