They were out or running very low on a lot of common toppings you'd typically expect at a malatang spot, like quail eggs, ramen noodles, green onions, and even beef. During peak dinner hours on a Friday, I would've expected the ingredient station to be stocked better, especially for staples people commonly add to their bowls. The broth also lacked flavor this time. It tasted more watered down and didn't have the rich, savory depth that usually makes malatang satisfying. Overall, it just felt a bit underwhelming. These places are nice because we can have more control of how much food to eat and get and pay just for that versus getting a set amount of food and paying for it. We also like this because we have food preferences amongst us and it's nice to just choose whatever we want to eat with the variety of ingredients that is provided. Overall, I did actually really like the food and everything seemed to go fairly smoothly. Will be a 4 star for me today. Food: Bases: They currently have five soup bases for you to choose from: 1. My one note is that it is a little too salty for me. It's the dry mix, so some of the flavors can be more concentrated versus a broth base. The flavor is very nutty and umami. I do see something that looks like mustard seeds. It's hard for me to make out what all of these flavors are because there does seem to be a combination of it, but I really do like it. They do well with balancing flavors that works with all of these ingredients outside. Presentation wise, not the best. Because everything is mixed in, something about it looks really unappealing. I always appreciate it when some shops will garnish the bowl with a little green garnish or chives/parley/ etc. Not the biggest concern, but it does make it visually appealing for the first impressions. Ingredients/Mix-Ins/Toppings: 3.5/5 The variety of items are "ok". They have mainly veggies on the right wall and then the proteins and sides on the wall next to the cashier counter. They really don't have much variety. They seem to have more veggies than proteins or sides. Luckily, I was still able to find a fair amount of items that I really do like. Items I always go for are the filled fishballs. Other ingredients include quail eggs, mushrooms, imitation crab, fish, mussels, clams. Seafood options are definitely to my preference. Layout: L shaped; veggies and proteins separated The layout of this restaurant is interesting. There is a little counter where you can check-in at the front and it kind of partially separates the restaurant into 2 areas (left and right side). Right side when you walk into the door is where you'll see the ingredients lined up in an L shape. I actually like this idea because then the veggies are somewhat separated from the proteins and the raw meats. I understand that everything is cooked together, but it's still a cross contamination concern in food service. Of note, the items placed in the back are harder to reach. Reaching is something I don't like doing because of sanitation and hygiene concerns. --------- Quality: Seems of Quality Quite nice quality. Their veggies are nice and green with lots of turgor and have that fresh crisp. Nothing was looking wilted in there. They replace the items and watch to see when some items are depleted and will replenish it. Price: Reasonable Their pricing seems reasonable for me for what you get. All of the broth and dry mix bases are the same price. When we went, it was $14.99 for 1 lb of the ingredients. Minimum amount that you need to get though, is going to be 0.88 lbs. Rice is not included for any base, but can be with an upcharge. Of note, they do tare the bowl, so that they are only measuring the weight of the ingredients minus the weight of the bowl. This place has the scale that shows the -x.xxx in the front. Very much appreciate the transparency. Service: Simple Interactions Quite simple interactions. They assign you a table first and then we're directed to get our ingredients and pay. They bring you the food whenever it is done cooking. Water refills do come around sometimes and they'll check on you during that time too. Ambiance: Standard This seems to be your standard restaurant. There are quite a bit of tables inside. Some walking space is available, but other tables seem to be very close to each other. Something we noted was that the table we were assigned to is right at the window. There is a table directly outside and right next to us. The windows are transparent too, so it's just a bit awkward to be there next to them. I was pretty impressed by the variety of fishballs and the cuts of meat. I was a big fan of the fatty beef rolls. From my memory, the vegetables did not include bok choi but there were some other selection I don't recall the name of. Make sure to remember your table number, because they ask for it when you pay for your bowl at the end of the weighing stations. When we went, the rate was $14.99/pound. Trying to be as conservative as possible, I scored a 1.3 pound bowl which had enough to satisfy my appetite! I chose the tomato broth which is a great option for those who can't handle the heat (no spicy). After you pay, you can head to the sauces station and make your own sauce. I really liked how they minced the cilantro and green onions. It made it more fragrant and it appeared to just be super fresh! Our soups came out within 10 minutes of paying (which was pretty quick). Due to the busyness, it seemed like they would not check in as much to your table, especially for water. Other than that, the service was pretty good. The restaurant is quite small compared to typical malatang restaurants, meaning that it actually felt pretty crowded because the tables were closer together. Had to check out Cuan Yue because I was seeing it all over social media and it definitely did not disappoint. I think it's pretty difficult to stand out as a malatang restaurant to be honest but I thought their broth was amazing and much better than other malatang options in the Bay. We got a chance to try the Mild Beef Bone Broth and Medium Spicy Mala, and both were amazing. For meats, I would only recommend the pork because the beef was a bit too tough and not fatty enough for something like malatang.
