The dough goes through a fermentation process for around 48 hours to deliver its notable flavor. You can expect the results to be consistent if not a bit greasy depending on the toppings, which are not all the expected cast. They offer a verity of topics that might make you think, it never occurred to me to put that on this kind of pizza." Which I think is great way to get customers to expand their pallets (and I say that being certifiably the finickiest person I know). For example they recommend calabrian chilies, whipped ricotta, and hot honey for pairing with their pepperoni pizza. Was a solid enough pizza for being in a touristy area. Had the Margherita pizza and a Cesar salad. Finished both and were easy to eat. Giving it 4 stars because they forgot about the salad till we reminded them and the dressing tasted a little too mustardy. The pizza was pretty good as I favor fennel sausage however I didn't find a lot of that in the pizza, I wish there were more. The crust is nice on the outer edge however I wasn't able to taste the sourdough. This is my first time having sourdough pizza crust and I was hoping there would be more of that flavor and texture. Next to Paia fish market is Luigi's pizza owned by Paia. This may be the best pizza in town. Sourdough crust, and lots of fresh ingredients. Service is very pleasant and nice pizzas. Take 15 to 20 minutes and if you're in to espresso, they have a machine that's like no other. read more

This place is really hard to review. I've travelled from Maine to Hawaii and tried pizza. When I saw the John's of Bleecker poster on the wall, knew what they are trying to do. They use good flour and ferment it very well. They have high quality ovens. You can tell the owner has a first class vision. But this is not currently a 4.6 pizza for a few reasons. The guy working the oven seemed confused and new; you didn't get the vibe that he knew how to rotate the pizzas and twist them around. Part of my pizza had a perfect undercarriage and the other part was napkin white. The pizza also had way too much cheese and sauce on it so it was floppy. The sauce also didn't taste like anything. I know there's a school of thought, that I disagree with, that good sauce should be tomatoes and almost nothing else. Some tomatoes have a natural sweetness and great flavor to them and they can pass for this approach. These were not that level of tomato. I really like where they are trying to go. This review is coming from a place of what it takes to be where they appear to aspire to be. Their aspirations deserve respect. I think right now, it's a 3 star place that could be a 4 star if they work out some of those issues. If you want real, good, New York-style pizza in Waikiki, this is a top-notch lunch spot. We ordered the pepperoni and added fennel sausage; that much meat and cheese led to a little excess of grease but the crust was still tasty and crisp. We also had tiramisu for dessert and it was outstanding. Service was quick, friendly, and thorough--Shawn succinctly and completely explained the menu on arrival and checked in with each course, including recommending the experience-capping espresso to accompany the tiramisu. While there is frequently a bit of a wait for ordering and seating at dinner, we didn't have to wait at all for either over lunch. The prices are beyond reasonable--I believe it ended up being the least expensive lunch we had in the week we were here, and we each ordered sodas and shared a dessert. Food? The pie is delicious! There is only one size available, 14", so that cuts down on decision making! The sauce tastes fresh, complex, and it is NOT sweet! It tastes like something you would get at Nonna's house, if she made pizza in Naples for a living! We ordered a sausage pizza. The sausage was well-flavored and seasoned with fennel! While some would say the amount of sausage was meager, I would say that it was a perfect balance with the cheese, and the fresh basil strewn on top. The crust has potential. It has a nice flavor for sourdough, but it could be a little bit tangy-er, and more yeasty. I had thought that the dough was shaped with a roller. The owner kindly corrected me. S/he also said that they are constantly tweaking the product. To me, this says they strive to be better! Two days later, we went back for a pepperoni pizza and added Calabrian chiles for $2 extra. The Calabrian chiles had terrific flavor but would have overpowered a less intense topping. This was seriously one of the best pizzas I've ever eaten; including pies from New York City and Naples! OMG, the crust was AMAZING! It had much more flavor than the crust I had two days ago. It also looked more hand shaped. The pie was cooked more, with wonderful charred bits. However, I kinda think that if the fennel sausage pizza was cooked that much, the sausage would have been overcooked. Service? These are lovely people.
