Ltd Edition Sushi delivers such a fun experience. I enjoyed the simplicity and minimalism (almost asceticism) of the place, paired with the youthful, high-energy, and fun take on traditional omakase. Mind you, there was nothing ascetic about the flavor combinations and the generous punch of wasabi here and there! Every bite would range from "awesome" to "wow". Some of the highlights for me included the monkfish liver (which was incredible), the dungeness crab and the multiple tuna cuts. The staff and the chefs are the friendliest, and I absolutely loved the tone of the evening. It almost felt like you were hanging out at a place of a chef-friend treating you to an astonishingly good sushi dinner. So why 1 star off? It can get a little too loud, and the way this place is set up, there is not much that can absorb the noise. So depending on the vibe you are looking for, this may be a distraction. Bonus: this place is a gem if you like people-watching. Given its location smack in the middle of Capitol Hill, you get to witness a very fun crowd. This little gem definitely matches the atmosphere and the vibe of the neighborhood. Worth an evening (or multiple). PS: there is a parking right next door but the street is weird - watch out for the traffic in what looks like a 1-way street read more

By Cal Anderson, it's good that there is a garage near by. It's pretty congested. But the food and pairings are outstanding. You definitely need to sit at the counter and it's a fun part of the experience. Each seating goes a couple/few hours and it's quite a time. I think my only knock down is that it can be hard to hear. But I enjoyed the heck out of this! read more

I have been going since opening and this restaurant continues to be the best time I have out eating. Dining here is like dining with family! The seasonality of the menu makes it easy to come back multiple times a year and the quality and effort going into each course makes for an amazing experience. 1000/10 read more

Coincidentally came here on the day they were celebrating their 1 year anniversary of being open for business. We got a complimentary champagne to celebrate and toast with them before service started. This place is located in the little alley way next to Cal Anderson Park. Interesting location that I would never expect a high end omakase sushi restaurant to be at. Seating is quite limited here. Thus the name Limited (Ltd) Edition. Ah I see what you did there! But yeah, only way to get a seat is to place a reservation online. Couldn't get a reservation at the counter, but the table wasn't too bad. The decor has more of a lounge vibe with the type of lighting they have. Very much felt like a place you would go to pick up a date or take a date to. Server, Hiro-san, was quite friendly and performed his job well. He gave us the drinks menu where they offer sake pairings for each course as well as other alcoholic and non-alcoholic options. So down to business, the omakase. Quality was quite good. Quantity was quite lacking, but that was okay here. The quality made up for it. Enough to make up for the price though? That's questionable still. High's of the meal I would say was the King Macherel, the Nodoguro (Throat Sea Birch), and the Nodoguro broth at the end. I like the fact that this felt more like a traditional edomae style omakase than a mixed fusion of a kaiseki and edomae omakase experience. I definitely appreciate this place more for that reason compared to the other newer omakase places. The atmosphere suited the place quite well I would say. It didn't feel like it was trying to be high end. It was more attractive for a lack of a better word. Definitely not traditional, but it was modernly modest if that makes any sense. The atmosphere isn't the type where you would want to come on a weekly basis. It comes off as more of a place that you would want to come for special occasions. Overall, I think I like this place. It isn't perfect, but it does edomae style more right that most right now in Seattle. I do miss the days where I could get 30 pieces in one omakase experience. I guess 15 quality pieces and an enjoyable atmosphere is good enough for now. Keep up the good work! read more

A group I'm in (Salsa) decided to reserve the whole restaurant and it just so happened to be on my birthday! Let me just say, that the staff was very accomodating, and friendly. It was fun interacting with them the entire night. We even got some complimentary champagne, which was very nice! I got the bar seating omakase and every piece was phenomenal, especially with the sake pairing. I recommend getting the sake paring as it allows you to try many different kinds of sake and Keiji will recommend the sake to drink with each piece. Everyone was busy taking videos/pics of the sushi chefs and enjoying the sake pairings. Good times were had by all and i would definitely come back again. The interior is also aesthetically pleasing and seats are limited so make sure you make reservations! By far the best omakase I've had! I look ofrward to coming back again! read more

OVERALL: 9.2/10 (Yelp Converted Score: 4.6/5). I snagged a lunch reservation for 2 on Sat, Sep 24, at 12:30pm by reserving on Tock about a month in advance. There were 8 people at the bar, and 7 people at the tables. We arrived at 12:20pm - they hadn't opened the front door until exactly 12:30pm; seated promptly after checking ID and vaccination. Verdict: If I had to pick ONE Seattle omakase place to recommend for the experience, vibe, and a good time, I would quickly say "Ltd Edition Sushi". Make no mistake - it's not "the best sushi" in Seattle (I will never claim that), but the combination of the vibe, the sake, and the personality are what make this place highly recommend-able. The missus rates this place 4.5/5. 1) VARIETY/SELECTION: 8.5/10. The fish variety wasn't super wide, but it's clear that Keiji (with roughly 10 years of sushi-making experience) understands his ingredients and has a deep passion for his craft. We had 16 "courses": 1. Asparagus (local) and tako (Octopus from Japan) - appetizer 2. Negitoro hand roll - King salmon head, fatty tuna, Hokkaido uni (sea urchin), salmon roe (only Sat lunch) 3. Kensake squid - with lime and salt (start of nigiri) 3. Other part of squid - no rice, just the fish 4. Wild bluefin tuna 5. Flounder (hirame?) - whitefish - lime zest on top 6. Wild Hamachi (yellowtail) - favourite so far. On top is fruit from Keiji's hometown (Fukui). 7. Kamasu (barracuda) 8. Chutoro (Medium fatty tuna) 9. Crab roll - crab jelly, crab everything 10. Skipjack (katsuo) - bonito? 11. Uni - Santa Barbara and Hokkaido 12. Otoro (fatty tuna) 13. Soup - fish broth with scallion 14. Ankimo (monkfish liver) 15. Black cod (Dessert fish - "alternative to eel") 16. Tamago - dashi and sweet miso 2) FRESHNESS: 9/10. Keiji's emphasis on picking wild fish is evident in what's served. He doesn't believe frozen tastes better - for example, if salmon roe is out of season it's usually frozen, meaning it tastes saltier. They mix their ginger to be spicy - so it really clears out the palate between pieces. The sushi rice comes from a single small farm in Japan. Fun fact: Keiji's mother was a rice farmer! My partner's thoughts: Hamachi was her favourite. She liked the balance of flavours on all the fish (and I agree). My favourite: Tie between the ankimo (fresh from Fall to Spring only), otoro, and the hamachi. The main focus for this omakase is on wild fish; it stays fresher longer. The overall taste is going to be focused on the fish itself (the accompaniments are meant to amplify the flavour), so it may feel more "neutral-tasting" rather than experimental, or innovative. You may not react with "wow!" here on every piece - and that's OK! Keiji's take on using wild fish vs farmed fish: there's a 1-3 month window for seasons - one needs to find the right fish for the season: "I like that challenge." 3) VALUE FOR MONEY: 9.5/10. At $140/person (pre-tax/service charge - all-in, around $185/person), it's incredibly reasonable. Couple that with the $45 "sake pairing", and I gotta say - WOW this place is amazing. Per-piece, $140/16 is $8.75; after tax/service charge, it's $11.56. The $48 (pre-tax) sake pairing is for 9 glasses (3oz each) of sake - so you're essentially getting 27oz of sake at $1.78/oz (pre-tax). If anyone thinks that's a bad deal, they need a reality check. 4) SERVICE: 9/10. Service was amazing. Water refills were prompt, and the sake pairing was always a different sake refill into the same "type" - dry, floral, sweet; I don't remember a sake that I didn't enjoy; Keiji really understands his pairings! The wait staff was super friendly in passing conversation, too. The only complaint (in general) that my partner and I shared was that from start to finish, the entire experience was just over 2.5 hours (we entered at 12:30pm, we left at 3:10pm). The time between "pieces" was very long (~10min between pieces) - Keiji was furiously slicing and preparing all of the nigiri for the 8 of us at the sushi bar, but the chef next to him was making sushi for the 7 people seated at the tables behind us. 5) CONSISTENCY / FIRST IMPRESSION: 10/10. Honestly, Keiji is one of the most down-to-earth chefs I've ever met in my life; he's such a "regular human" that you forget he's also the one who owns (and is the head chef of) this place. His background story is awesome; as he's making the sushi, you can talk to him like you would with a friend. In terms of "experience", this was (easily) my favourite of any omakase I've ever had. Keiji was engaging, telling us stories of his past as a DJ, why wild fish is better than farmed fish, and about bringing fruit from Japan onto a plane to bring back to the US. Keiji added his DJ skillz to Ltd Edition - the background music is a mix of disco-pop, Eurotrap, french pop, and honestly, "feel good" vibes in general. It feels like you're eating at a friend's place. You can tell he personally curated this list, because of his incredible taste in music. read more

I'm a little wary of reviewing this place because it's already so difficult to get a reservation there. But it's such an incredible experience I had to write about it. Our biggest pro tips: - RESERVATIONS: Check their Instagram for the most up-to-date info on their reservations but they usually open the 15th of the previous month at 11am PST. - DRANKS: GET THE SAKE PAIRING! They have so many different kinds and the chef is very well versed in which sake goes well with which fish. They are also very generous with the amount they pour. You can bring your own bottle of sake or wine but the corkage fee is $35. - SEATING TIME: Try to get the first seating (5pm) for dinner, because the dinner can get quite long. We were there for about 2.5 hours. In contrast, we've gone to Sushi Kashiba a few times and their omakase experience is always less than 2 hours long. - TALK: Definitely chat up your to your chef a lot -- they are all so well versed in the industry and it's fascinating hearing about how different fish (even different roe or fish in a different season!) are experienced in terms of taste and texture. Overall, we loved our time at Ltd Edition Sushi. It's cheaper than Sushi Kashiba, the helpings are bigger, and it feels more casual inside. read more

I finally had the chance to check this place out. It took several months and a handful of missed emails to get a reservation. You need to join the waitlist on their website and respond to the email very quickly, within a minute, to have a chance. Luckily my reservation was bar side priced at $160(+tax & 20% gratuity). I did notice table service also had each piece explained and the handrolls were made table side so you wouldn't be missing out on much. It certainly would have been better value, but bar seating is the best. I opted to pay an additional $48(+20% gratuity) for the sake pairing. On the menu it is listed as 3, 3oz glasses of sake, but they will tell you it is essentially unlimited, and I can confirm that to be the case. I probably had around 45oz of sake by the end of the meal. This fact alone really increases the value of this place if you partake in drinking alcohol. The ambiance is intimate due to the small space, minimalist aesthetic, tasteful music volume, and limited number of guests. The staff was expectedly very attentive during the roughly 2.5h of service. It was a perfect balance of conversation initiated by the chef, intermissions for drinking- sometimes with the chef, and pauses in between to appreciate the food. I get the impression that the chef is not working as some sushi avant-garde, but rather is just trying to serve excellent quality food over some thoughtfully procured sake. He does not take himself too seriously and consequently the experience does not come off as pretentious as some other higher-end sushi restaurants. The menu selection was excellent and I appreciated the inclusion of some items that aren't typically part of an omakase experience including sea snails and monkfish liver. The sea snails had an almost chestnut flavor while the monkfish liver had an incredible depth of flavor that is surprisingly sweet if you've not had it before. My favorite 2 pieces were the monkfish liver and the very generous serving of green uni. My least favorite piece was the mackerel but only in the sense that everything else was just that good. If you're able to snag a reservation I would highly recommend this place. The food and experience offers very good value for sushi lovers, but if you factor in the sake pairing then it is most definitely one of the better value, higher-end sushi places in Seattle. read more

The last time I've tried Ltd Edition Sushi was a bit over 2 years ago when they were just doing takeout omakase bento boxes when they first opened. It was still in the middle of Covid times and I believe maybe under different ownership? I remember they dry salted their fish and both my boyfriend and I were not a big fan. After they opened up to be a sit-down omakase restaurant, we started hearing a lot of good things about the omakase here. We decided to take our clients there to give it a try. We went with pretty high expectations after the raving reviews from friends and online. When we got there, the restaurant is dimly lit which gave it a nice intimate ambiance. We got seated and drinks ordered. I got the sake sampler tasting, which is a great bang for your buck. It was 9 samples of different sakes for like $48. When the first course came, it was a their version of chawanmushi I believe? I didn't get to hear what the chef was saying clearly but it was soy based and literally tasted like egg custard in soy sauce water. The second course was a white fish with a sesame sauce that completely overpowered it. As we moved on to each course, nothing really stood out to us where we understood the hype. Our clients were unimpressed too. I was also a bit surprised there was no ending to the meal with dessert. The only thing we really enjoyed was the homemade ginger they offered. It's unfortunate, but it is what it is... read more

The Monk Fish Liver here is by far the best I have ever had anywhere; that alone is worth praise, the price, and a visit. But beyond that the quality of the rice and fish here are always to the highest level. Chef Keiji has close relationships with the fishermen from Japan who he gets the fish from and he will be able to tell you details about the fish he's serving. In total you get about 17 courses which is less than a lot of other Omakase places where you might get 20-23 but the portions here at Ltd Edition are bigger than those other places so you won't walk away still hungry. Having done both table and counter seating I can say from experience that the counter seating is the way to go. Yes you get the same food as the counter but it's not as fun as when you sit at the counter. Talking about fun this place gets loud which is different than most traditional Omakase places. Partly because of the background music but generally speaking because everyone is having a good time having conversations. I always get the Sake pairing which in total you will try about 9 different types of Sake! At $48 it really feels like a steal because it's not cheap Sake that is being served. It's such a great deal for both people who love Sake or if you don't know anything about Sake but want to learn about it. Overall, LTD Edition Sushi is one of the best Omakase restaurants you will ever be able to eat. We are lucky to have it here in Seattle if you are a local. So if you are wondering, not sure, or thinking about going but not sure, I doubt you will walk away unsatisfied. Of 22 Omakase restaurants I've been to in the West Coast, LTD Edition Sushi stands on my top 3 overall favorites. read more

Do I really want to write yet another 5-star review for Ltd Edition and make reservations even harder to get? As it is, my wife had to make a reservation a month in advance to get seats at the counter for a birthday dinner for me, and still missed my birthday by a week! It is a 16-piece omakase menu, changing all the time, prepaid at the time of reservation, and you have a 2-hour window for the meal. With the cons out of the way.... The sushi rice is perfect. We take sushi seriously in our family. It is a homemade treat, and we do it often. While the fish is the feature of sushi, I regard the rice as the foundation. Get it wrong, and the house collapses. Ltd gets the rice as perfect as it can be. At the counter, every piece delivered had the rice at the perfect temperature. The individual grains of rice break apart in the mouth to complement the fish, but are yet sticky enough to hold together so that the sushi doesn't fall apart on the way from the plate to your mouth. Even when using a pair of chopsticks instead of picking up the sushi with your hand. The rice is flavored perfectly, enough salt, sugar, acid to be a subtle balancing act to enhance the taste of every different piece of sushi. The chef designs the omakase so that there is a progression through the meal. Ending with the most exquisite piece of otoro nigiri I've had in a long while. Definitely take the sake pairing. My wife did as I was the designated driver, and the pours were very generous. Although it was billed as 3.2oz pours of 3 sake, when she emptied a cup, the chef topped it up, and even gave her others to try. This is definitely a special occasion meal, and definitely a keeper!! More in my pictures...... read more

EVERY PIECE WAS FANTASTIC. Let me repeat for those in the back. EVERY. PIECE. WAS. FANTASTIC. I've been to my share of omakase, and I don't think it is ever intended, but there are always a few pieces of sushi that I feel "meh, could've lived without trying that one". But here, every single piece was a new "WOW" in my book. They made good use of the bluefin tuna they had, providing it in a hand roll, the lean part in the sashimi, and some otoro. Fantastic fish, but also wonderful execution of toppings and marinating to enhance the fish to great potential. There were also a couple that complete melted with wasabi in my mouth, in a brilliant way that felt like the fish was dissolving with it. Absolutely heavenly. I don't have much to say because the fish selection is changing consistently, and they order very fresh. But 100% fantastic, lots of umami and other brilliant combinations. My favorites happened to be the squid and octopus; they were the best pieces of each I'd ever had. The crab topped with gelatin was also a fantastic combination of flavors and textures. The silver fish also very much surprised me with an explosion of flavor... and those uni hand rolls... heaven juice. Our server was extremely charismatic as well! A very memorable guy, he was lots of fun and informative on the restaurant's values on wild vs farm raised fish, as well as the sakes we were drinking in our pairings (which, by the way, are totally worth it if you like eating drunk and just trying sake. There were 9 total bottles to try from, and the pairings were well chosen!). Overall, had an amazing experience. The only thing is, I did feel it was a bit less courses than other omakase I had, though it was fantastic, top tier quality for a lower price than some others. I wanted a couple more pieces, or a non-sushi dish to fill me up more, but I did overhear the other tables next to us saying they were stuffed. So maybe just me being a glutton. :) read more

2.4.2022 Great Omakase experience at LTD sushi with my coworkers last night. Chef Jin and Kenji took good care of us introducing sake and we had a great time with fresh wild fishes from Japan. Restaurant is very clean and I was also amazed their plates, dishes and presentation of every little things are perfect. My hot senji-cha green tea was always full with fresh because server made sure to pay attention and they were very attentive. You can also experience Omotenashi (Japanese hospitality). *"Omote" means public face - an image you wish to present to outsiders. "Nashi" means nothing. Combining them means every service is from the bottom of the heart - honest, no hiding, no pretending. I can't wait to visit them again sometime soon! read more

First of all, I was mind blown on how much detail and effort goes into each course. The food was 10/10. The two servers attended to my every need even before I thought I needed something. I went here for the bar omakase. If you get a table you'll be served the same food, but you're really paying for the experience of being with the chef and having conversations with them. It took awhile to get a reservation since they only open up the 15th of every month, so make sure you're looking far in advance especially if you're a bigger group. Though they do have some random openings as people cancel or change the reservation dates. We ended up being sat in the corner, which to us turned out to be the best seats. From there we could see everything the chefs were doing, it also allowed up to talk more to the sake specialist who does all the pairings. Everyone there was friendly and personable. It really added to the experience being able to converse and ask questions. You can tell how quality it is from how picky the chef was. He tried the umi from one package, decided it wasn't up to his standards and opened a new/different container for us to make sure we got the best. Of course they had the standard fish you see; umi, toro, salmon, etc. But they also had some unique pieces that surprised me. One was this marinated fish (I forget what kind), it was so delicate in the mouth and almost literally dissolved. I've never had anything similar before or since. Overall, it was a great experience with great people. It's a little pricey, but I think as a treat it's great! read more

We absolutely love going to Ltd sushi. We've gone 3 times already and will continue to come as much as we can when the occasion is right. Chef Keiji is absolutely amazing to talk to and the vibes of the omakase is just so different than the traditional experience. It feels like you're having a fancy meal at his house. The jazz music in the background just sets the tone. Chef Keiji really knows his music! I haven't even mentioned how good the fish quality and sushi is here. It's just next level and my palette for sushi has completely changed ever since we first dined here. You have to experience it for yourself! Stellar omakase bar experience that served enchanting seafood in a lively ambience! The 8-person sushi bar is $160 while the table is $135, but the evening at the bar was so much better with Chef Keiji personally preparing and ensuring all customers were having a fantastic time. Had the following for the summer season: - Seaweed Appetizer from Okinawa - Strawberry Conch from Koji - Squid Legs Cured with Koji, Squid Fin Marinated in Soy Sauce, and Local Manila Clams - Kue (Longtooth Grouper) with Homemade Ponzu Soy Sauce and Radish - Black Cod over Rice Appetizer - Kinmedai (Golden Eye Snapper) - Scallop from Miyagi - Aji (Japanese Horse Mackerel) - Red Sea Urchin from Kyushu - Shrimp with Shrimp Head and Sake Paste - Otoro with Local Morel - Gizzard Shad - Ankimo (Monkfish Liver) - Otoro Hand Roll - Inari - Tamagoyaki - Clam Broth Drink pairings are available, such as the sake pairing for $48. I had unlimited Japanese Sencha Hot Tea for $4. One party at the bar brought their own wine. Reservations are booked unsurprisingly fast, especially with its limited seating. Wow! What a wonderful experience. My husband and I loved the food, the service, and the sake. Bon, the sake sommelier is terrific! We look forward to coming back, if we can get another reservation. Additional Notes: Warm and friendly interior set-up. Many of the omakase restaurants in our area are in small, bar only venue's that are rather stark. Parking is a little challenging as it is on Cap Hill. read more

Personally, I don't drink alcohol very often so this dining experience was overall average for me. You pre-paid for the omakase in advance as you make the reservation. After dining, you just pay for any beverages that you purchased. I would recommend this place for anyone who enjoys sake as they are generous with the pouring and offers various types of sake. Since I don't drink, there was a long wait between pieces as there's only one primary chef that serves omakase. You get a mixture of pieces and seems like they specialized in marinated pieces. To me, certain pieces didn't taste quite fresh or lack in quality. Overall, I recommend coming here to try it once as the chefs/staffs are very friendly and attentive to your needs. read more

Good but not great, definitely not at the $200/ person price. The otoro was chewy and off putting, which is a major miss for a place claiming the best omakase in the city. Personally, I think Scratch is better for the same price. read more

The amazing experience of dining at LTD comes from a combination of the 1) awesome owner and chef Keiji Tsukasaki 2) delicious fresh seafood and 3) initmate, carefully-designed interior. Even though it's more expensive to sit at the chef's counter than at a table, the difference is absolutely worth it if you're looking for a social dining experience vs a private tasting. The seafood that is served is always very fresh and in season, imported directly from Japan. Committing to always serving the freshest fish means that the menu also changes depending on the season, so it's always worth visiting every couple months to see what's new. Some of the standout pieces that we had were: dungeness crab roll, multiple tuna pieces (otoro, chutoro), ankimo (monkfish liver) roll, and the black cod finisher. I always look forward to coming back to LTD to chat and drink with Keiji at the counter and for the delicious pieces of seafood he has prepared for us. read more

After a year of trying to get a reservation at Ltd, my friend finally got us a spot at the sushi bar at 5 pm, and it was definitely worth the wait! The whole experience took about 2 hours and 30 minutes, and during that time, we had the opportunity to chat with Chef Keiji and the other customers at the sushi bar. Chef Keiji was the most interactive and entertaining omakase chef ever! His engaging personality and willingness to interact with guests made the experience all the more memorable. The omakase menu offered an assortment of freshly prepared sushi and various seafood dishes. The ingredients were unquestionably fresh, and the presentation of each dish and sushi were exceptional. With each course, he presented an artful display of diverse selection of fish and seafood. The assortment included favorites like fatty tuna, geoduck, uni, dungeness crab, mackerel, shrimp, and scallop, all procured from the finest sources. The fish and other seafood ingredients also rotate depending on the season, so I will definitely check it out again in the winter season! read more

Absolutely the best meal of my life. We made a reservation and pre-paid a month in advance, so I was really excited for this meal leading up to it. You will want to arrive on time, if not a few minutes early. Depending on where you sit, you will get a different experience. At the table, you don't get to interact with the chef. On the right side of the bar, you will likely get to interact with Chef Tsukusaki. On the left side of the bar, you will get a mixture of Chef Tsukusaki and Chef Kobayashi. I highly recommend sitting on the right side of the bar - Chef Tsukusaki is highly energetic, tons of fun to talk to, and a wonder to watch. You prepay for the meal, but you can buy drinks when you get there and pay for those separately at the end. I recommend getting a sake pairing and hot green tea (pro tip: even if you don't buy anything, Chef Tsukusaki may feel generous and pour you some alcohol). I won't go through each piece of fish served during the omakase, but I will talk about my favorites. Also, definitely ask the chef how he recommends eating it - in one bite, one two bites, with your hand, etc. My absolutely favorite was the otoro with matsusake mushrooms on top. Second was the chutoro, and third was the uni roll (with two types of uni, Santa Barbara and Hokkaido). All of the pieces were AMAZING. I think I expected the dungeness crab roll to be the best, and it was great, but it didn't outshine the other pieces as much as I thought it would. At the end, you get a piece of tamago (which I thought was the most mediocre), then it finally comes to an end. The experience is 10/10, the food is 10/10, and the entire thing was definitely worth the price. Out of all my omakase experiences in Seattle so far, this one definitely takes the cake. I would love to come back during another season :) read more

This place is MY MOST FAVORITE Omakase in Seattle. I have been here 3 times, and will come back anytime I can snatch a reservation (they only open for reservation on the 15th on every month). That's how much I love this place. I was reluctant to write a review, cause I don't want more people competing with me over getting a spot to eat here. But I feel like I owed one to Keiji and his amazing team. They change the menu frequently, depends on what kind of fish they can get, so you will get some new fishes each time you visit. All the fishes are very fresh and beautifully prepared. I come for the food but also because of Keiji too. He is such an amazing chef who loves to interact with the guests, and make everybody feel so welcome. If you can drink, he will drink with you and will get you drunk :)) My friend cannot drink and asked for a ginger ale. They don't have it; and we were happy with just our water and green tea. But one of his helper secretly ran to a store nearby and came back with a ginger ale. We were very touched. The price is not the cheapest, but come on, no quality Omakase experience would be cheap. And compare to Taneda, this is way better bang for your buck. Keiji would never let you leave his restaurant feeling hungry. I always so stuffed afterward and my friend have to switch to sashimi and skip the rice for the couple last pieces cause she was too fulll. If you can snatch a reservation at this place. DO IT! You will not regret! Cause if you don't snatch that reservation? I will! :) read more

Each omakase place in Seattle has their distinct flair - this one is owned by a chef that used to be a DJ so you know that the vibes are fun. Offerings are fairly similar to other omakase such as having tuna of various fattiness levels, salmon, mackerel, spot prawn, skipjack, eel, tamago, etc. However, there is a bit more going on for each piece, beyond the typical edomae style emphasizing solely the fish with rice. For example, here, there is a Dungeness crab nigiri that is also topped with some crab broth gel and green onions. Now to the fun part - the sake pairing! You would think the sake pairing is going to be lowkey, just three cups of sake - a dry, a floral, and a "new wave" (a term that the chef came up that is neither dry nor floral - it is more fruity like peach). Recall that this chef is a former DJ, party up, he will fill your cup again when you have finished the cup. He also gave us some beer to try, a Summerisle creamsicle ale. He also switched up the new wave sake and gave us the Black Dragon Junmai Ginjo, a bit fancier than the other one, the Senkin classic omachi. I enjoyed the unlimited aspect and drank quite a bit. There were 15 courses and before we started, I drank the 3 cups that were presented to me, a sip at a time, and paired each piece of nigiri with a cup of sake that the chef suggested to try it with, and subsequently drank a few more cups thereafter for a good time. Definitely got my money's worth but would only want to do this seldom. Despite the significant increase in pricing from July to August (a margin of $43.50 including service charge) from the omakase bar seating + sake pairing, this place is still one of the more well-priced omakase places in Seattle so far. Definitely not as bad as the $45 price spike at Taneda before tax+tip and that still sells out in seconds. read more

The chef is super friendly and welcoming. It was my first time there, and the service was great. The staff made sure everything was perfect. The sushi was really fresh. The sashimi was just as good. I'll definitely be back! read more

I was just at Sushi Kashiba last month and thought it was delicious, but LTD Edition is a different kind of beast. It feels more intimate with one chef serving the sushi bar while at Kashiba, there are 3-4 chefs for just the bar area. I get the feeling they are churning out the sushi in order to get diners done within two hours so they can fit three seatings in per night. The thing to keep in mind about LTD is that it isn't a sacred temple to sushi. It felt more like I was hanging out with a friend for a few hours while being fed some really awesome food. The sake flows just as readily as the beats (he used to be a DJ), and there's a lot of laughter and joking around. The price point is also very reasonable at $140 compared to Taneda's $215. As everyone else mentioned, get the sake pairing! ($48) We were able to try a dozen different sakes, and he's cool with couples sharing the pairing. Overall it was a fantastic and fun evening, and I can't wait to come back.! read more

What to get: Obviously, this is a omakase place therefore I can't give any suggestions on what to get or not get because you can 100% trust the chef. What I will suggest is the sake pairing. Skip the drive, get an uber, it's worth it. It adds to the experience and you get to try so many types in one sitting. What to know: Reservations can be hard to get. Their instagram will be your best bet for info. There is a parking structure right next to it or street parking. Come a smidge early I'd say 5-10 minutes is enough. The chef AND the staff are great conversationalists. It didn't feel upscale and stuffy. It was really one big dinner party where you make friends with the staff and other patrons. 10/10 would recommend. read more

It's my favorite Japanese restaurant in Seattle! I've been to Ltd several times in the past years. Their service is great and I've always had fabulous dining experience here. Food is VERY good!!! Especially for the price. I've been to other omakase restaurants that charge more but not nearly as good in Seattle area... that's one of the reasons why I keep going back to Ltd. read more

Truly one of the best sushi experiences I've ever been to. The chefs are so personable and kind. They care so much about the food they make for you. We sat at the chefs counter and it's so great to talk to the chef and ask them questions. He was so kind and told such great stories about the sushi he makes. I am definitely coming back for more and highly recommend eating at the chefs counter for the omakase! I am sad the experience is over and I will dream of this sushi forever! 20/10 experience. read more

Great value and atmosphere. While you can find higher quality sushi in Seattle, Ltd Edition Sushi is good for the price point and provides a great experience. Some pieces were better than others, and to me the most memorable ones were the monkfish liver and the ootoro. Reservations go fast (majority are gone within minutes) and are on a month by month basis. read more

I have to give this a 5 even though I have to admit that it wasn't really in my top ten for omakase I've had in my life. It was still really good, the interior space was really nicely understated, the vibe was friendly and casual, and all the staff were awesome. Getting right to the food, this is not standard issue omakase. It doesn't contain all the usual nigiri and sashimi suspects like a Ju-ni, nor does it have a mix of sushi + cooked bites like Kusakabe in SF. There's good variety in this omakase and that surprise will continue throughout the meal. Perhaps the most surprising twists were the monkfish liver, uni (From two regions), and the black cod. The first two were some of the best versions of the flavors I've ever had, and the black cod prepared like an eel basically tasted just like a delicious eel to me. The star of the show had to be the tuna hand roll which probably sounds like a boring one to put up on a pedestal but man, that was the best hand roll I've ever had in my life. Apparently the head chef was a DJ in his past life. I don't know what his alias was but the Ibiza posted in the bathroom with the likes of Hawtin and Villalobos suggests that this guy's taste in music is as a good as his taste in fish. Bravo! Recommended. read more

My husband and I tried Ltd for the first time recently and Oh. My. Goodness. One of the best meals we've had! We had a 7:30pm reservation and got there a few minutes late but thankfully it didn't matter. Everyone was still waiting outside - the staff seat everyone at the same time for omakase sittings (they only do omakase so if you're looking for to-go or sushi orders this is not the place for you). The restaurant only seats 16 total people (10 at the bar with the chef, 6 in tables). Once the staff are ready, they will seat you and take your drink orders and see if you want to order additional items (soup or squid was on the menu when we were there earlier in June, subject to change depending on season). Because we were seated at a table, we received multiple fish per plate (if you're at the bar you will get one piece at a time). As we received our plates we also get to hear about each fish and which sake pairing is best to have with each fish. The chefs actually receive all the fish either directly from Japan (!!) or local, depending on what's in season. The rice is cooked to perfection with each fish, which was a great bonus. The experience was roughly 2.5 hours long. If you're sitting at a table, you will be finished before those at the bar. Highly recommend going to Ltd for your next omakase experience! It is also very affordable compared to other ones we've been to. Can't wait until we go to Ltd again! read more

My partner and I have had the incredible pleasure of dining at Ltd Edition Sushi several times, and while our first visit was amazing, somehow each dining experience gets better and better. The quality of the food is always top-tier, and you can tell just how much care and consideration is put into each element of the sushi. Because they use seasonal ingredients, each bite is reflective of peak flavors at the time of dining. My favorites have included the ankimo, ootoro with morel mushrooms, Hokkaido uni, sakura masu, and nodoguro, but don't get me wrong--each piece is exceptional. We never leave hungry! The best part of eating at Ltd Edition, though, is the wonderful atmosphere. Chef Keiji is such a generous and personable host, it's hard not to have a good time while you're there. The whole staff is friendly and attentive as well, which makes the entire experience that much better. I'll certainly be returning to Ltd time and time again! read more

Came here for an anniversary dinner and it was the best meal me and my husband have ever eaten together. We've had quite a few omakase dinners in our lifetime and this one is by far, the most memorable. It's pretty pricey to eat at the bar, but you're really paying for the experience of being served by one of the coolest sushi chefs in the city. Chef Keiji is the sweetest and most charismatic host/sushi chef I've had the pleasure of dining with. He used to be a DJ too so the music selection definitely contributed to the vibe. He makes you feel like he's an old friend that took so much time, love, thought, and effort to make you an amazing dinner. If you're going to splurge on an omakase dinner in Seattle, this is the place to do it at. read more

Had a wonderful date night here last night at the sushi bar! Everything was soo fresh and the chef + staff were the absolute sweetest! We didn't get the sake pairing because I drove there :( but next time we are for sure going to do that!! I've been to Shiro's and Kashiba and I dare say I very much prefer this place over the others here. The uni (from Santa Barbara and Hokkaido) was soooo good, I'm still thinking about it right now. read more

We truly enjoyed our experience at Ltd Edition Sushi with Chef Keiji and can honestly say that Ltd Sushi has made it to our top 2 Omakase in the PNW! Rsvp for a seat at the bar if you can for a more intimidate experience with the Chef. He was so friendly and accommodating. You can tell that he takes the time to source the best local and wild caught seasonal seafood. My friends had sake pairing and said it was well worth it! Modern, cozy and clean ambiance. Everything was delicious, unique, high quality, and fresh, we will be back again soon. read more
