We started talking about the Pasta Alla Norcinia and I told him my relatives are from Norcia Umbria and that I've made it several times. I told him I use Italian sausage and the manager said that the chef uses actual wild boar sausage. He said the chef has amazing connections for ingredients like this. They also have a full time pastry chef on staff and all their deserts are home made. My wife ordered a strawberry Mamosa. I noted the care that was taken in preparing both drinks which tells me there's a professional bartender on staff. About the only thing that needs to be improved is the service. We waited just a bit too long for certain aspects of the meal in a restaurant that was nearly empty.
