So service was at it's base. As we entered the restaurant we noticed the wait staff sitting around, their phones in their hands and noticed the same as we left. They looked lazy and it left a bad impression and we now know why our service was poor. There is nothing fancy about Papa Chuys but it does appear clean. It's very casual and we saw tables and chairs pushed against a wall like they were just in the way. We sat in a booth, comfortable but the wall looked like a child played with their food. I didn't focus on that, just pointing it out

This place is better than most of the Mexican restaurants in the Tulsa area, and I can assure you that we have tried many of them. The place has a campy hole-in-the-wall Mexican place vibe. They advertise as authentic Mexican and they are, with what I would call a little TexMex added in here and there. It was and excellent find for us. Two of the best plates of Mexican food that we have had, in small town Oklahoma restaurants. Nothing bland from the salsa to the beans, excellent spicy flavors. My wife had the Fried Tamales. Two fried until golden brown, topped with tomatillo salsa verde and queso blanco, garnished with diced tomatoes and cilantro. Served with rice and beans. For me the Papa Poblano. It was a different presentation of my favorite Mexican food items. An amazing combination of a deep-fried cheese filled Chile Relleno rolled up in a slab of fajita beef, topped with sauteed shrimp in a creamy mushroom chipotle sauce, garnished with diced tomatoes and cilantro. It is difficult to explain how delicious this combination was. The creamy cheesy spicy chipotle sauce made the meal. On the side, the perfect charro beans, topped with fresh chopped jalapeno, tomato and onion. These 5-star meals you have to try. They favor TexMex in presentation and spiciness. Refried beans were nice and creamy, rice didn't have any flavor and tasted very plain. Chips and salsa is free as long as you order at least one entree. Chips were fresh and salsa was just ok, for me it was too tomatoey and could use a little more heat (green chile or jalapeños). All in all it was a nice filling meal.
