I love the noodles here. The texture is perfectly balanced between firm but also chewy, exactly the way I like it. I usually get the stir-fried noodles since I'm not a huge fan of soup and I'm satisfied every time. The stir-fry sauce is very rich and oily but I think it pairs with the noodles well. I do think that the focus on the noodles means that the other components of the dish are a bit lacking sometimes, though. I've gotten beef and roast pork and it feels like big pieces of meat that are tossed into the stir-fry as an afterthought. It's tasty, but the meat doesn't shine on its own. Overall, it's not too big of a deal as the noodles are intended to be the star of the dish anyways, and they do a great job of being that. read more

Beef noodle soup is my all-time favorite food, and this place definitely hit the spot for me. You know it's authentic when you walk in and the first thing you see is the chef pulling the noodles behind the counter. I was pleasantly surprised that you could choose between two types of noodles, hand-pulled or knife cut, and that you could choose between different thicknesses for each option. I ordered the beef & tomato noodle soup with thick hand-pulled noodles. The noodles were perfectly chewy and the broth was light but still flavorful. The beef was extremely tender and moist. I loved that it also came with a generous amount of bok choy and tomatoes, not just one or two pieces for garnish. We also ordered the pan-fried pork buns, which were delicious! The bun skin really stood out to me - it was pillowy soft on top but crispy on the bottom. The pork filling was delicious as well. When I placed my order for Niu Rou Mian (Hot Beef Noodle Soup), I was not asked whether I wanted thick or thin noodles. Then when the order came to me, it was thin noodles. Personally I know it's not a huge deal but I really didn't want thin but much preferred thick noodles in my soup. So I asked the cashier and staff if I could get a swap (note I haven't touched the bowl yet), and they said no. So I had to just eat the bowl I had which I didn't end up enjoying. So I understand if it was my own fault why this request could be seen as unreasonable, but in this situation I find that this was a bit cheap. I didn't expect them to deny me the switch because at most restaurants I've been to they're usually pretty good about that. Also as to the food? It was okay. Honestly I think I've had better Hot Beef Noodle Soup at places like A&J. They are hand pulled and made though, so if you're in the area and really craving your noodles, then it's a decent choice. But honestly I think that the service left a negative impression for me and since the food wasn't particularly memorable I'm not sure if I'd come back. Finally got around to trying this place which has been on "the list" since it opened. DH was skeptical (as always) and let me order for him which worked out great. I ordered the pork and chive fried dumplings, scallion pancake, oxtail soup and the pork stir fry - both with "thick" hand pulled noodles. All of the portions were huge, which is OK because everything was even more delicious the next day for lunch. The scallion pancakes were crispy and flavorful without being too oily. The dumplings were possibly our favorite thing - stuffed to the gills with pork and chive and wrapped with a beautiful dough that was crispy on the bottom. DH demolished his stir fried pork. My oxtail soup was lovely. The noodles were toothsome and the broth was flavorful although not too heavy, and certainly not too salty. I spiced my broth up a little with the chili oil available in the back of the store. My only complaint would be that it would be nice if you could order extra stuff: love cilantro and would have like more even if it meant paying a little extra for it. Also, if you are a self-conscious eater then you should probably order take-out. There is no easy or polite way to eat this stuff... just slurp your way through it and try to avoid as much splatter-age as possible! Oh, and don't wear fancy clothes! While the price-point seemed a little high the quality was there and the portions were huge so I didn't feel like I had been ripped. There are containers in the back so that you can pack up your own leftovers which is nice. There really isn't any ambiance to speak of and the furnishings are quite basic, but comfortable and clean. If you just want to get good food, quickly, at a reasonable price, and then move on with your life then this is the place. If you want to linger and people-watch, you may want to find another spot. This place gets busy and people are hovering for your table! The guy who makes the noodles is really quite the showman as well as artisan and I love that I can experience something like this so close to home. Small restaurant with a modern simple design, the restaurant was full. Fresh handmade noodles pulling at the counter alone it's worth trying. I ordered the duck noodles with cut noodles the duck meat was succulent and tender, loved the herbal broth and the hand pulled noodles had a good chewy consistency. I was a little skeptical because there are some questionable reviews but I figured I needed to give this place a shot because I love trying new local restaurants! I will say that the menu is a bit confusing and the person taking orders wasn't super helpful (reason one for 3 stars), so I'm glad I checked out the Yelp reviews ahead of time that explained the noodle options. I'll briefly summarize in case my review is the only one you read: If you get soup or stir fry, you'll need to make some decisions on the type of noodle you want. They don't ask so I guess you just have to know. They have knife sliced or hand pulled. The hand pulled are long and resemble linguine pasta. The knife sliced are wide and resemble egg noodles. There are also thickness options for hand pulled: regular, thick, thin and hair thin. I saw size options for knife cut and read other reviews that said there is wide or regular, but when my boyfriend ordered the knife cut, the person at the register said there was only one size. Weird. I think the person taking orders should know the menu and be able to help customers... Also, the person running food to tables didn't seem to know what anything was. He actually gave us someone else's food, put it down without saying what it was, and walked away. Then (presumably) the manager had to quickly pick it up to bring it to the right table. I had the soup and my boyfriend had the stir fry. Both were good but we decided that the soup was better so I would suggest going that route. It's messy and involves a lot of slurping, just FYI. I did the thick hand pulled noodles with my soup and they were definitely the best part. We both chose beef as our meat option. It was okay but super fatty - again, the reason for 3 stars instead of 4. I didn't like any of the other meat options so maybe I'll give the veggie option a shot next time. This local place is tucked away in the swath of stores making up the Rio complex in Gaithersburg. It is near Target, on the street level. To date, I've only come here twice. The first time, the two of us were blown away at how delicious everything is and we were looking forward to to the time when we would return. I don't remember what it was that we ordered, but it was marvelous! The second time we came here, it was the opposite--terrible. One ordered beef brisket knife noodles; one got roast pork knife noodles. We received two beef dishes-- no pork at all. Both were loaded with fat and gristle. Even though we requested 'spicy', both were very bland. We didn't notice this until we got home --40 minutes away, so too long and late to do anything. I would return here based on how great the first order was. Maybe it was an off day? (But then again, other reviewers mention the chunks of gristle and fat as well.) Parking is easy, but garage only. The bowl was huge and has the biggest portion compared to other places. I definitely thought this was a suburb transplant of this great noodle place in NYC I used to love but I think maybe they aren't the same after all. Either way, a decent hand pulled noodle place located in a childhood favorite space (Rio Waterfront) is a win in my book. This is a small shop and you can clearly see the workers pulling out the noodles in front of you. I'm not a huge fan of stir fries but I thought the noodle soup was well seasoned and the noodles tasted fresh. The space is clean and the food is good. Both times I came here were during Covid and we didn't eat inside so I don't have any real photos as it all came in take out containers but it's definitely a solid place to go if you're looking for a hearty meal that brings some nostalgia. read more

So, two stars says "Meh. I've experienced better." and that's pretty much the summation of what I feel for this place. They are by no means bad, I find nothing wrong with their flavor and taste and anyone else who likes this place honestly has good reason to. My gripes with this place though are honestly that I really can find better for a better price. A&J and the Spot offer competition and there are other little gems you can probably find around too. I just can't justify myself getting the noodles here for the price they are. There's just no "wow" factor to make me feel like I can't get a better deal. Plus it felt a bit like a chore to eat there, the place felt cramped and a little bit like they were having trouble to keep the eating spaces clean. Maybe it was a busy day so I won't harp on that too much but it definitely didn't help my experience. I honestly doubt you'd experience the same thing but I still want to just throw that out there. Occasion: Carry out while on a business trip They don't have online ordering so I almost skipped it, but the reviews were good and I do love a hand pulled noodle. Also, they are in a really nice area a short walk along a lake from my hotel. Called and asked for a recommendation on what to order. Knew I wanted beef but not much else. The woman who answered the phone asked me a few questions and recommended the beef stir fry with hand pulled noodles. Sold! Walked over to the shop and by the time I arrived my food was ready. I asked for chopsticks and if there was a sauce they recommend. The woman (presumably the owner or manager) scolded the person who put my food together for not adding chopsticks or napkins. She added them and told me they didn't need sauce unless I wanted spicy. I didn't so I took my food and left. When I got back to my hotel the noodles were still piping hot. They were really delicious - I have had hand pulled noodle stir fry before that didn't taste like anything, but these had a really nice savory flavor that I otherwise can't describe. The noodles were a great consistency - a tiny bit al dente but not chewy. The meat was thinly sliced and tender and the veggies were plentiful as well. Bummer that they didn't have a dessert option but whatever. Would I recommend/return? Yes, I travel to this area often and this place is likely to become a regular haunt. read more

Seriously good beef noodle soup-- the best this side of rockville imo-- filled with great noodles and tons of fresh cilantro. They don't skimp on the beef either which is super tender and a bit fatty, per usual. Also the steamed pork chive dumplings are another fav of my family (that dish always gets eaten first lol). We like the pan fried pork buns too, a bit greasy though. I wish the noodles we're bit easier to pull apart, the way they serve them, I think they pull them apart and don't necessarily cut them into pieces, like strings connected. We order at the cash register which is kind of odd since most restaurants seat you first and give you water. The menu is simply, the noodles are customizable you can choose from thick, reg, thin, and hair thin. We ordered three bowls of noodles and three dumplings. I discovered this spot during COVID and I've been ordering pick up from them regularly. Their beef brisket noodle soups are great -- both hand pulled and knife cut noodles. They add plenty of beef and vegetables and noodles; they don't skimp on anything! Adding in some vinegar and chili oil and it just elevated the already comforting soup. This is really more of a 3.5 stars for me! I'm really torn because this Hand-Pulled noodle spot is pretty good, but there were a couple of things that brought the score down. I've read a lot of reviews about them not having the menu ups in the restaurant and sadly after months of opening it still isn't up...You get to opportunity to see the food being made. The unfortunate thing was seeing the chef pour what looked like powdered seasoning...are we going to assume that the broth they use isn't from fresh ingredients?! Yikes! The wait time after we ordered was about 20-25 minutes, which is way too long. Now for the food! I ordered the Beef Brisket Combination noodle soup (Beef Brisket and Tendon) and some pan fried chives/pork dumplings The Chives and pork dumplings were absolutely delicious! The skin was thinner and the proportion between the dumpling skin and filling inside was perfect! A lot of people will disagree because people are use to eating dumplings from Chinese Carry Outs that has the dumpling skin quite thick. To me there are 3 things to look for in a most noodle soups. The first thing is whether or not the noodles are fresh. Yes you can see the chef making it on the spot with all the proper techniques I'm sure but does that always mean it's fresh?..no, but in this case the noodles were absolutely fresh tasting because the noodles has the bounce and authenticity to it. Noodles shouldn't be so soft and shatter in your mouth. The second thing is the meat, which was cook very well! The texture was soft and easy to chew. The biggest thing is cooking the tendons correctly because sometimes when it's undercooked or if the pieces are too big, it becomes too chewy and can be impossible to swallow. This wasn't the case here for both the beef brisket and the tendons are soft and chewable for your enjoyment. The last thing to look for is the broth. The broth was very bland and tasted like it was instant. Let's refresh your memory on how I saw them use flavoring powder like you use in instant noodles!!!! This was very disappointing since they hit all the other areas of a soup noodle! I honestly would gives this place another try maybe after a year. There's a lot of other soup noodle spots in Montgomery County to try and enjoy, but this noodle spot really wasn't too bad. I came here on a whim to satisfy a noodle craving, and safe to say that I left all warm and happy. Something that was a bit disappointing was the limited menu. I looked at the menu pictures posted, and was excited to try out the lamb bun, as hardly any places I know of in the area make them. Sadly, they had a paper menu with only a few noodle soups, fried noodles, and side dishes. I asked if it's because it was a soft opening that the menu was limited, but they told me they just had their grand opening. Hopefully they do expand their menu again to include other items they advertised before. I ordered the ox tail noodle soup and my mom got the lamb noodle soup. Both had really good broth! You could really taste the lamb in the lamb broth which was nice. I would also definitely recommend getting the knife cut noodles, really chewy and authentic!!! They also have a section in the back where you can get your water, utensils, extra spring onions, dumpling sauce, and hot sauce. The inside had good flavor with a combo of pork and chives which is my favorite! However, the "house" sauce was not too great. It could use some more vinegar.
