    If you want to try La Baja, you will typically need a reservation and they do require a credit card and $35 service fee per person if you don't show. Honestly, this surprised me at first but based on the limited seating available and the need to ensure success in such a difficult business I can appreciate it. Once you arrive it is a well kept and tastefully decorated two room restaurant with properly themed music playing at an enjoyable volume. Our server, Helena was very kind and extremely helpful guiding us through the unique options. Something that I noticed about Helena was her graceful interaction to remove and place things with care and patience. It stood out so much that I mentioned it to my wife. In today's constant hustle and bustle this was delightful. Now the food. Well, the flavors are very intentional and multi layered. The plating is purposeful and intriguing. And we loved everything. We started with some mock tails and will be bringing some tequila next time to add to them as it is a BYOB restaurant. The tuna ceviche special was outstanding in both its appearance and taste. The so many great flavors. The oyster mushrooms looked like they were actual oysters plucked from the sea. The light rice batter accompanied by a lemongrass sauce with a touch of cayenne at the end was very tasty. For main courses I had the sea bass with a miso broth and my wife had the short rib over risotto. The sea bass was probably one of the best cuts I have had and seared to perfection. I didn't let the delicious broth go to waste either. The short rib was also full of flavors and I immediately tasted cinnamon at the front. The risotto was good and plentiful. It was a great experience and a culinary delight with creative dishes that brought amazing flavors. I really enjoyed it.

Trust me, there's always something new and exciting to savor. I first visited on their opening day, but last night, after a work event, my fiancée and I made a spontaneous stop--and wow, what an experience. From the moment we walked in, we were welcomed like family. The warm, inviting ambiance makes you feel at home, and the team (special shoutout to Tina and the amazing staff) goes above and beyond to ensure a memorable dining experience--even accommodating last-minute visits with no reservations. Now, let's talk about the food. Every dish is crafted with incredible attention to detail, blending bold flavors that tell a story of Mexico's rich border cuisine. Our meal was nothing short of spectacular: Appetizers: - Burrata - Creamy, indulgent burrata paired with black mole and fresh herbs--an unexpected yet perfect combination. - Grilled Octopus - A standout! Tender octopus with black garlic aguachile and a pineapple tatemado sorbet that brought just the right touch of sweetness. - Yellowtail Tuna (Special of the Night) - Absolutely fresh and bursting with flavor. A must-try if it makes another appearance on the menu! Entrées: - Hibiscus-Mexican Chocolate Braised Short Rib Risotto - This dish is next-level. The richness of the short rib, the deep chocolate undertones, and the creamy risotto? Pure perfection. - Cabrito Dorado - If you're a fan of bold flavors, this baby goat dish with a pea-poblano purée is an absolute must. Tender, flavorful, and perfectly executed. Dessert: - Poblano Tres Leches with Pistachio Pipian - A unique and satisfying twist on a classic. Rich, moist, and balanced with just the right amount of sweetness. Every bite was a testament to Chef Dionicio Jiménez's incredible talent. His ability to fuse Mediterranean and Asian influences into Mexican border cuisine is something truly special.     La Baja comes with the prestige of being James Beard-nominated, which sets the bar high. The food is well-prepared and shows technical skill, but the overall experience doesn't quite match the hype. On the plate, flavors are good but muted--most dishes would benefit from a touch of finishing salt. The appetizers, served on undersized plates, feel cramped and awkward. Still, you can see the expertise in the preparation itself; nothing comes out careless. The bigger issues are with the space. Like every restaurant that's cycled through this location, it's uncomfortably hot, even with the split A/C units struggling to keep up. The room is packed with too many tables, which not only makes it feel loud and cafeteria-like but also contributes to the heat. Two fewer tables could go a long way toward fixing both problems. Add in uncomfortable chairs and the physical experience becomes a distraction from the food. Service was friendly--our server did their best--but it was obvious they were stretched thin and rushing between too many tables. The finishing touch was the Olive Garden pen used when they brought out our check. In short: La Baja has talent in the kitchen, but the lack of finishing touches--both in seasoning and in the dining experience--keeps it from delivering on the level you'd expect from its accolades.

    Another excellent meal at La Baja last night made me so glad the place appears full and thriving. Outstanding huitlacoche ravioli and a soft shell crab special, plus I love a tuna special and my husband enjoyed venison. Somehow even after all that a brownie stole the show. Don't miss dessert!

    I loved everything about my experience here. Our server was lovely, tentative, and great at her job. The ambiance was warm and inviting and the decor featured playful pops of color that harkens to Mexican heritage. The food was fantastic. Everything was seasoned perfectly and the flavors and textures all went together beautifully. This chef is an expert at his craft, and I cannot wait to go back again in the future! Looking forward to trying their brunch someday.

    We are fortunate to have many good restaurants here in Ambler, but rarely do we get to experience something special. We celebrated our wedding anniversary at La Baja last night and our meal was truly special. It's a small space, it can feel a little crowded during peak dinner rush. But it's simply and tastefully designed, and it's the food that is the star of the show. We started with a burrata with mole sauce. The mole was the best I've tasted, incredibly complex and rich. I had a huitlacoche tortellini, recommended by our waitress who told us the chef is a Vetri alum and makes incredible pasta. It did not disappoint, it was light and delicate, and simply topped with green onions. My husband had a richer dish, braised short ribs over risotto. We ended with a poblano tres leche cake topped with pomegranate seeds, the poblano did not overwhelm and added a nice complexity to a traditional dessert. The beauty of the menu was all of the surprises. You could expect La Baja to be a standard Mexican restaurant, but it's not. We had many Italian influences in our meal such as burrata, pasta and risotto. There were also many Asian influences in the menu, that we plan to try on our next visit. And it was all perfectly done. The chef has a really delicate hand and shows a lot of restraint. An added benefit was this restaurant is BYOB, and if you forget your wine, nearby Stone & Key Cellars will deliver wine or cider right to your table. The table next to us used this service and they wine arrived in minutes. It was quite impressive. They also have a number of fresh juices and mixers if you bring tequila. Service was friendly and attentive. Prices were reasonable for the quality. We brought wine and our entire meal was less than $100. I'm so excited La Baja is now part of our growing dining scene in Ambler.

    The meal was thoroughly enjoyable at this intimate restaurant. It's BYOB, brought our own wine and started with the tuna appetizer. We didn't realize that their menu was more so a fusion--with Mediterranean and Asian flavors. The tuna tasted quite fresh, had a nice heat to it from the red jalapeños and complimented with the buttermilk. Served as a good light appetizer option. The goat (Cabrito Dorado) was not gamey at all. The goat was perfectly tender, the pea/pistachio purée sauce was both smooth and delicious. The steak was cooked to the way I ordered, and had a nice chili crust. The dessert options (crème brûlée and tres leche) were greatly balanced, nothing was overly sweet.     The space is cute and service is amazing! The place was still buzzing when we arrived for our reservation at 8pm. The menu is incredibly creative and inspired, but absolutely every single dish was under seasoned & needed salt. On paper, the dishes seem like they'd pack flavor but this wasn't the case. We had a great experience so maybe we will try again in hopes it is better next time!

The texture of the guacamole was similar to the beans, with part of it wetter than expected, but also with chunks of tomato stirred in. I've never been fond of Mexican rice so can't comment on that.
