The bartender is there doing something at the register, and leaves right after I sit, not to return until I've been sitting long enough for another server to walk by and all of I've been helped yet, then goes to tell the bartender that he has a customer waiting. He comes out and asks if I'd like a menu. I say no, I know what I want. I place my order, and he says he'll be back with bread and my drink (diet Pepsi). He comes back after a bit to tell me they are putting fresh bread in right now and it'll be about 10 minutes... No drink. After another while he comes to tell me once again that it shouldn't be too long on the bread... Still no drink. My food comes out... Still no drink, nor napkin and silverware. He finally realizes I don't have a drink and brings it, and says here's your drink, sorry about that... Still no napkin silverware. I just sit waiting to see if he notices. He comes back after a bit to ask how my steak is, obviously seeing I haven't touched any of my food. I told him I'd need some silverware to find out. I finish my drink well before my food, but he's nowhere to be found, just like most of the rest of the time I've been there. I finish my food and have my credit card on the bar, and then he asks me if I'd like a refill. I say no, pay, and leave, hoping to never encounter this service again. Seriously... What bartender see someone sitting at their bar for that long, with no drink, and doesn't fix it?? Did the bartender, backup bartender, and third and fourth strong bartenders all call in sick last night, so they had to grab a busser to work the bar, or something?? Worst service ever at this place! The only reason I gave 2 stars is because they cooked my steak right.

I also ordered the Grits & Gumbo, described as deep-fried grits with a crunchy exterior topped with house seafood gumbo. The grits were hard and bland, not flavorful. The gumbo itself was disappointing: the roux was thin and bitter, lacking depth or seasoning. The only decent part of the dish was the shrimp, but that alone couldn't save it. I finished the gumbo, so I'm not expecting a refund there, but the coddle plate absolutely should be refunded. It was genuinely inedible. Unfortunately, based on this experience, Flying Fish will not be getting any more of my business.
