I do like this sauce and would try again. Lemon pepper sauce: 10/10 I gelt this one was more of the balance I was looking for. It could still use a bit more sweet but to me it is the best one. Garlic sauce: 7/10 if you enjoy a heavy garlic flavor this is the one. Not too bad but not my favorite due to the lack in balance. Garlic noodles: 8/10 the noodles were cooked perfectly. The garlic is present through and through. I did try it with the 88 special sauce. I also added a hint of sweet with chili sauce. The added sauce brought it up to a 10. Eggs: 8/10 basic boiled eggs. Could have been boiled a few less minutes. Got them in the 88 sauce. White clams: 10/10 I enjoy the tender chew of this over the manila clams. I tried these with the lemon pepper sauce. I like the lemon pepper sauce the best with these. Manila clams: 7/10 these are ok, they are more chewy than the white clams. I am glad I tried them to establish the difference. Crab legs: 10/10 well cooked not over cooked. Juicy and fresh. Sausage, corn, potatoes: 10/10 sausage plumb and juicy with a snap. Corn sweet, plump, and perfectly cooked. Potatoes most of them were cooked perfectly and just a few could have cooked a bit longer.

The shrimp were also burnt to a crisp. The tails were visibly blackened, not charred for flavor, but burned. I managed maybe three bites before having to stop. No amount of cheese could cover how bad the fish tasted, and it honestly felt like the cheese was being used to mask a serious cooking issue. This was a complete waste of nearly $20. I also ordered the Grits & Gumbo, described as deep-fried grits with a crunchy exterior topped with house seafood gumbo. The grits were hard and bland, not flavorful. The gumbo itself was disappointing: the roux was thin and bitter, lacking depth or seasoning. The only decent part of the dish was the shrimp, but that alone couldn't save it. I finished the gumbo, so I'm not expecting a refund there, but the coddle plate absolutely should be refunded. It was genuinely inedible. Unfortunately, based on this experience, Flying Fish will not be getting any more of my business. Whoever is running the kitchen does not understand execution, seasoning, or basic seafood preparation. Strongly do not recommend.
