My order traveled 40 minutes before I was able to dig in, but even so, it remained solid. Ordering sushi in the suburbs I missed my Madai! I missed delicious otoro, and I missed a few nuances of good sushi, like proper slicing, great temperature control and the key that separates good from great nigiri, good rice. As far as the food: Madai- chewier than expected but may be because I ordered at the end of the night or caught them on an off day. Kin Madai-solid :) Otoro- melt in your mouth, fatty, buttery, and decadent as it should be! We come here about 3-4 times a month, so it's safe to say this spot is one of our go-tos. We can usually get a table without a long wait, the staff is always friendly, the atmosphere is welcoming, and the sushi is consistently fresh. Our usual lineup includes raw oysters, bone marrow, edamame, a variety of sashimis, and the hot rock short rib--and every single dish is reliably delicious each visit. The only real downsides are the timing of the dishes and the wine selection. The pacing can be pretty uneven; one person may finish their plate several minutes before another's food even arrives. If you're ordering multiple dishes, it helps to put in the longest-prep items first, then order the quicker ones 5-10 minutes later. The wine menu also feels limited and could use an upgrade. The sashimi was hit and miss.. the sushi roll rice was atrocious; it was mushy and was honestly worse than HEB sushi. The apps were hit and miss as well. Can say I liked a single thing here, rice for the sushi was over cooked so it had a strange texture. Wasn't impressed with the fish. Rolls weren't very inspired or tasty. Skewers and Squid were overcooked too. I think the main thing here is that there isn't much pride or knowledge even in how to make a product that's worth coming back for. Any neighborhood strip center sushi joint could be here and you wouldn't know the difference.
