    Chef Sky is a breath of fresh air in the Houston sushi scene. He is authentic, genuine, and true to himself. While it feels like others around him making omakase are trying new things for the sake of being creative, Chef Sky's creative twists on "Not Sushi" dishes really works and has a lot of thought behind them. Examples like pork floss on escolar or lao gan ma on eel are not replicated anywhere else in the world. But while creative and an homage to his childhood and culture, these garnishes really do work and are balanced with the fish. We definitely hope to be back soon. Oh did I mention it's unlimited sake?

    Very intimate dining experience to say the least! It actually took some time to even find this hidden gem. TINS completely exceeded my expectations from the ambiance to the amazing food. The omakase provides 14 courses with each bite better than the last! Each bite of fish was just so fresh and flavorful. The chefs really come up with the most unique and delicious sauces for each dish. The service is also impeccable. Overall, I had a fantastic time at this spot. The food was out of this world, and the drinks just kept coming. I can't wait to give them another try in the future!

    Reserve a spot now! I have to say I was skeptical when we arrived at TINS. It is in a small strip of businesses behind tinted doors. But when you step inside, you are transported into a well appointed, intimate dining scene. My husband and I love sushi and we were not disappointed. The team is outstanding and made for a lively evening with delicious and thoughtfully prepared bites of the freshest fish. I hope we are still able to get a reservation here the next time we're in town.

    WOW, consider me incredibly impressed by this sushi omakase. My boyfriend and I came here for our 3 year anniversary and it was one of the best experiences we've had with fine dining. The appetizers were my favorite and each piece overall tasted amazing. Every dish was clearly well thought out and you can tell the chef took time with each ingredient. Chef Sky was so attentive and it was like he could read my mind whenever I was getting a little impatient haha. Both Chef Sky and Matthew were so great and welcoming. Matthew let me use his light for pictures, which I was so grateful for. I took a picture of each course and will put in the caption what I remember for the name of each dish. One of my absolute favorites that blew my mind was the uni shooter. Normally, I cannot take oyster shooters or uni shooters, but this one melted in my mouth and tasted SO good. Lastly, we ended the night with karaoke that included Chef Sky and Matthew joining in, which was super fun!!! I wanted to take my little brother and his girlfriend here, but unfortunately we were hit with the storm. Nevertheless, Tins is the first place I will keep in mind for special events--the karaoke makes this establishment top notch on top of all the amazing tasting fresh fish dishes. We will be seeing Chef Sky and Adam very soon!!

    The Houston sushi scene is getting more fierce each year and a new contender has arrived. Tins is a small intimate, Omakase run by three friends who are very friendly, open and receptive to feedback, and seems like they really wanted to grow and add some thing unique and different to the Houston sushi scene. While the food and drinks were delicious, the company was one of the best parts and one of the most unique and enjoyable parts of the restaurant experience. As far as food goes, you can expect unlimited sake, unique sushi and toppings marrying different cultures and flavors (delicious), and feeling full by the end of dinner. I'm very excited to see where Tins will go and I hope everyone gets a chance to try this place!

    I really enjoyed the Omakase course at TINS. My husband and I love every dishes that was offered to us. Mathew and Adam were great at what they do and we truly enjoy the experience and the company. The ambience is very cozy. And last but not least, it's unlimited sake! The restaurant only takes reservations. There's limited seat for each session. You'll be asked to take a seat when you come in. When the chef is ready, you'll be invited to the bar. This is a definitely a must try for sushi lover. Be prepared to spend a lot of money.

    First and foremost, I would like to welcome these boys to Houston. 3 wild, longtime friends from NYC, Adam, Matthew, and Sky are the owners of "Tins," who is currently running their soft opening. I'll honest and say that not only was I thoroughly impressed with their food but was able to enjoy one of the best nights of my life as a foodie and customer. Sky and Matt, namely, really are two of the most hospitable humans and to miss out eating at Tins is to miss out on such friendly and amazing service. Our brothers did fall short on delivering rice I feel would be most appropriate for sushi (a little too soft), but the flavor and seasoning was still very much present in each bite. Sky did promise they're working out the kinks and that they were still getting used to the operation of their new equipment. Understandable for just opening up a few days ago. I think what really sells this place to me is how humble the chefs are. Not only are they accommodating but they openly and humbly accept criticism and feedback. Their kindness matches how loose their pours for drinks is and makes for an amazing time. For the area, an omakase sitting at their asking price doesn't seem unreasonable and typical for services at this caliber, and I definitely felt this night's experience was worth every penny. Expect fun times, an amazing cheerful atmosphere, plenty of engagement and conversation, and lots of smoke, drinks, and laughs. Match the vibe well enough and maybe you too will become their next karaoke star! I can't wait to see what Tins becomes, and the boys can expect the wife and I to be back to support them.

    I was craving for some omakase, so I came there with a friend on a Friday night, I gotta say that we have a blast! We had a 14 course experience which costs $150 including unlimited sake which is not bad for a price! We enjoyed every dish in a course because it was so good! The service here gave us one of the best omakase experiences ever! I loved how we get to stay after to relax on the lounge or sing karaoke with the chefs! I highly recommend visit Tins for a great experience but you need to reserve your table in Opentable!

    TINS (This Is Not Sushi), a new speakeasy Omakase in The Heights!! The reason for the name is because Chef Sky puts a twist on his version of Omakase by adding unique flavors (original Omakase does not add sauces so you can taste the fish). They just opened in Sept! They brought their culinary passion from New York! The food was FABULOUS! Such unique flavors and oh sooo FRESH!! It's $150/pp for 14 courses and unlimited Sake!! Definitely one of the best experiences!

    we had an amazing experience at tins this week. Matthew and Adam were so much fun in the presentation of each dish, very knowledgeable of the fish, and explained all the flavor combinations (they make their own sauces in house!). the sushi bar is small and intimate, lively music, and apparently karaoke at the end of the evening if you are in the 8pm session. Very fun and unique omakase experience, you will not be hungry when you leave. Will definitely be back!!

The smokiness from the mezcal hits you first and then the sweet and creamy after taste takes over. It was so well mixed and I would highly recommend trying this if you are a mezcal lover like me. (9/10) The herbed lavender lemonade was too tangy and sweet for my liking. The lavender flavor get lost in the drink. It tasted like a typical lemonade, nothing special. (5/10) The hamachi crudo was so fresh and I really enjoyed the sweet and tangy broth. I'm not sure I would call it tom kha broth but it tasted good regardless and paired well with the tomatoes. (7.5/10) The chutoro nigiri was SO buttery and melt in your mouth delicious. I would definitely get this again. (8.8/10) The kanpachi nigiri was fresh and I enjoyed the sauce paired with it. It was my first time trying amberjack and I liked it. (7/10) The A5 tartare was super unique and well seasoned. There was plenty of tartare compared to the amount of milk bread you are given to eat it with. The uni, caviar, pate and waygu all mixed together was a decadent combination full of flavor. My only note was the contrast in temperatures that I did not love, the tartare came cold while the milk bread was warm. Overall, a very luxurious and tasty dish. (8/10) The kani handroll surpassed my expectations. Typically I don't go for crab first, but I did enjoy the flavors paired with the crab and the hand roll was well filled. (7.8/10) The kinoko roll (king trumpet mushroom roll) really surprised me. I was weary about getting this roll because I normally don't opt for vegan options, but this king mushroom was so well prepared and the sauce was so delicious that dare I say that I enjoyed this more than some of the fish/meat sushi rolls I've had in the past. (8/10) The hot scallop dish was one of the best bites of the night. The scallop was perfectly charred and cooked and the creamy polenta base with the umami salmon roe, with the fried red cabbage to add texture was amazing. I would definitely order this again. (9/10) Overall, I really enjoyed my time at Aiko and the food surpassed my expectations. I loved everything I tried and do want to come back to try more. The service was quick and helpful with the menu. Parking can be a bit tricky, but there are some free street parking spots around the plaza. The ambiance is definitely upscale and classy. My only complaint was that I made a reservation for 2 at least a week in advance and upon arrival, though they had plenty of open tables, we were seated at the opposite end of a table that was already occupied. For context, Aiko is part of the same group as Doko (their sushi omakase concept) and Handies Douzo (their handroll-focused restaurant), and you can definitely see the overlap in technique and flavor profiles across the restaurants. We went for the Valentine's omakase menu. The meal started with the Oyster Duo. One had a yuzu granita and aguachile that was bright and refreshing, while the other had a roasted onion soubise with smoked trout roe that leaned richer and more savory. Nice contrast between the two. One of my favorite early dishes was the chilled zaru soba. The buckwheat noodles had a great chewy texture and the mentsuyu broth was light and refreshing with mirin, mushroom, and seaweed notes. It was a really nice palate reset. The smoked ocean trout sashimi (masu) was another standout. It had garlic aioli on top with oil and black pepper, and the tomato added a crunchy brightness that balanced the richness of the fish. It's a simple combination but worked surprisingly well. The temaki course was excellent. The snow crab handroll had this creamy mayo texture with chili and crunchy shallots, and you can tell they roast the seaweed sheets right before serving because the nori had an incredible crunch -- honestly some of the best texture I've had in a handroll. It reminded me a lot of the style they do at Handies. For the hirame crudo with pomegranate and shiso, the flavor was good but a bit more subtle. I think the pistachio really helps that dish; without enough of it the flavors felt a little muted. I know pomegranate and pistachio is a common flavor pairing for middle eastern cuisines. My partner has a tree nut allergy so they removed it for both of us. The wagyu fat rice was very indulgent. The first thing you taste is the wagyu fat, but the fried shallots and other crunchy elements help balance it out. The sauce reminded me a lot of something you'd get at Doko -- rich but very satisfying. Adding fried rice in between fish courses was an interesting choice from the chef, but I think Aiko aims to be more western fusion than a traditional Japanese omakase. The tuna trio was fantastic. The chutoro with negidare (garlic, sesame oil, scallion) was probably my favorite bite of the night -- super flavorful and perfectly balanced. The foie gras course leaned sweet and savory, almost like an eel sauce flavor with some crunch on top. Delicious, but by this point in the progression I was definitely feeling the richness of the meal. Dessert was a milk tea tiramisu that I thought was really interesting. The mascarpone layer had a tartness to it -- almost like there might be a little sour cream mixed in -- and one layer had a subtle salty note that balanced the sweetness. Overall, the food quality was excellent and the fish was clearly very fresh. My only minor critique is that the progression of courses skewed a bit rich for my personal preference, especially in the second half of the meal. That said, every dish was thoughtfully executed and there were some truly standout bites. If you enjoy creative omakase with some richer flavor profiles, Aiko is definitely worth trying.

When the restaurant opened, there was no clear system for seating guests. Even though I was first in line, several people rushed in ahead of me, making the process feel disorganized. The biggest issue involved a $300 gift card that my friend had received years ago. She simply asked the staff to check the balance. When the server returned, he told us the manager had cut the card in half and that the entire balance had to be used during that visit. What bothered me was the lack of communication. We were never informed of the policy before the card was invalidated. If that is the restaurant's policy, it should be explained clearly beforehand. As two ladies having lunch, spending $300 was difficult, so we ended up ordering far more food than we normally would. The sashimi was fresh but cut thinly than what I've had at comparable restaurants. The hamachi kama, chirashi, and lobster mac and cheese were good. The green tea soufflé cheesecake was the biggest disappointment. For $10, it consisted of three very small cubes and felt overpriced. The waitstaff were attentive, friendly and professional, which helped salvage the experience. However, between the uncomfortable wait outside, the chaotic seating process, and the poor handling of the gift card, this visit did not live up to my previous experiences. While I have many good memories of Kata Robata, I'm not sure I'll be returning anytime soon.

We were blown away with the quality of ingredients and unique flavor profile in every single piece of nigiri across the standard and deluxe offerings of the chef's choice plates, Wagyu, and specials. All of their nigiri and hand rolls can be ordered a la carte or if you're feeling a bit in decisive, they have several hand roll sets that come with 3-5 preselected options. On nigiri night, announced a few days in advance on their socials, almost all of their nigiri is $5. Chutoro, otoro, hamachi, all melt in your mouth quality, all included in the special. That's a yes from me. As I mentioned, my friends and I love to do this deal every month and every time the staff have all been super friendly and make you feel more than welcome, providing recommendations and stopping by frequently to take more orders. Norigami does have a hidden speakeasy, Hidden Bar, which can be accessed through an unmarked door at the front of the restaurant. Drinks, and most of the food options can be ordered at either the restaurant or the bar which caters to whatever vibe suits you best - dark, intimate cocktail bar or more traditional sushi restaurant where you can watch each roll being prepared fresh to order. It was buttery, flavorful, and easily the best fish I had there. The pricing was fair overall, and despite a few misses, the atmosphere and service made for a nice experience.
