Junbi feels like a little ray of sunshine on the streets of Seattle. You notice it before you even walk in. It's bright, yellow and welcoming, and that same playful energy carries through the space and menu. We did some very important mango and matcha research, and the mango series was easily the standout for me. If I'm recommending one drink, it's the mango yuzu green tea with lychee bits. Bright, refreshing, made with real lychee and dangerously drinkable. I would come back for that alone. The matcha itself was okay, but in a city with so many really good matcha options, it didn't stand out quite as much for me. Some of the flavor profiles could use a little more R&D to really bring them together, but the concepts are creative and there's plenty on the menu I'd come back to explore. What made our visit especially memorable was getting to spend some time with the owner, James, who walked us through the story and vision behind Junbi Seattle. Located in Capitol Hill with a few different parking options on the street or within paid lots. The space it self was very easy to find and the inside had a few spots for seating. The outside also had a few tables. The staff were friendly but the drink took a lot longer than I expected to be made. I was waiting for about 20 minutes for my drink when only three drinks were ahead of me and I felt as though some people got that vibe so I actually saw some folks even come in, wait for their order to be taken, and then end up leaving because it took a while for someone to take their order. The drink was really good! I got a Guava Matcha Latte and although skeptical of the combination, it actually had a nice guava flavor while still having the matcha undertones. As much as I love Junbi franchises, I unfortunately am witnessing the downfall of the Seattle branch which needs to be studied. Drinks are tasting less and less flavorful and matcha is more like green milk, so the quality is diminishing. They've always served larger cups and the milk probably takes up 3/4 before matcha is added, but I swear they used to taste solid. Now, the matcha is barely present or simply drowned out by the milk. To add insult to injury, they hyped up the Peanuts collab with Snoopy, which apparently sold out on the first day (6/6) including all the ingredients for special drinks. Merch I can get, but the drinks being completely out after a day seems insane to me. On socials they're still promoting the Peanuts collab, sharing stories, only for people to find out in store. Clickbait for people to come in and figure they're already here, might as well get something. It's deceitful and a dark user experience pattern but hopefully they can improve quality of drinks and customer care. read more

Been wanting to try Junbi Matcha for a while now. Going to Capital Hill is quite a distance but this Matcha spot might be worth it. The interior is pretty big, cute designs, and they have restrooms for customers. I ordered the guava matcha with oat milk and 50% sweetness, and it was better than I expected! Matcha was super smooth, not too strong, guava puree is delicious. I don't usually order my matcha with oat milk but this paired really well with the guava flavor. My drink was over $9, it is a bit expensive, so I'd say I'd come back once a while. read more

I've been wanting to try Junbi Matcha since visiting Waikiki, and I finally did! I got the matcha with vanilla cream--it's on the sweeter side, so I probably didn't need the cream, but it was still enjoyable. The interior is cute, and I happened to visit during their BT21 collab (BTS cartoon characters), which was a fun touch. Service was good, and they also offer onigiri, which is a nice bonus. For my first visit, I ordered the Jasmine Koatji Milk Tea with Matcha Cloud Foam with normal sugar and ice. My friend ordered their Strawberry Matcha. The jasmine milk tea alone was a little sweeter than my preference but still fragrant, floral, and light. Mixing in the matcha cloud foam mellowed out the sweetness. However, despite its verdant hue, the matcha was not strong and ultimately overshadowed by the jasmine milk tea. This was also the case for the Strawberry Matcha, which, on the other hand, had one of the freshest strawberry purées I have tasted. It was really delicious and not too sweet and I got amazing service from that guy that was being the cashier. With all the other matcha spots in town, I would not recommend Junbi's matcha lattes as I believe they are inferior to a couple other matcha cafes due to their watered down taste, BUT I DO recommend their matcha cold brews! I am so in love with the guava matcha cold brew and I feel these are a much better harmony and ratio of matcha flavor. The fruit purées give them the delicious and unique sweetness that make these drinks so stand out to me. They are also a much better value with more drink per dollar than other shops, almost twice the drink for the equivalent price! So yea, take my recommendation and get the guava matcha cold brew with adorable Miffy sleeve. Also the staff here are all super nice!! read more

Good drinks! I'm not one of those big matcha fanatics but I do really enjoy matcha, and this spot was great. I like how bright the space is, and there is a decent amount of seating inside too. I got the guava matcha cold brew, which was guava puree with the matcha cold brew on top. The guava flavor was spot on and prominent, but it did dilute the matcha flavor a bit. Family and friends of mine have been supporting this place along with me when they were still doing popups, so now I'm excited that they finally have their location in Cap Hill! I went here with my sis on the day after their grand opening to no line but a fully seated inside. This place is an interior of yellow walls, along with some green which reminds me of their superb matcha. They even have an attractive backdrop for photo ops inside too. As for ordering drinks, servers were very particular on asking questions like sugar and ice levels, whether we wanted a tea or latte and other things. This was a big plus, since it shows they don't want to get anything wrong for an order, unlike other places that skip over those questions. I got myself their strawberry matcha latte, and my sis got their guava matcha latte. Both drinks came out around 10 minutes. It was almost hard to tell which was which until I remembered that I had the guava matcha latte before; it was a noticeably more orange color than the strawberry. As for taste, strawberry matcha latte is total perfection even at less sugar and less ice. Matcha quality is superb here and ranks really high for me, if not at the top. I could taste it when I had my drink; strawberry normally overpowers matcha when I have it, but this one didn't. Strawberries were fresh too, as I could taste some of the seeds. This location is very close to Life on Mars and not far off from ComeBuy Tea and Neighbors. I'll definitely come back again, even if it's for the same drinks. They just do it so well! read more

I came here during their grand opening weekend and oh my! the lines were long! They were giving out freebies and bogo specials, which made it worthwhile to wait. While in line, one of the workers were giving out free samples of their matcha soft serve which we appreciated while waiting in the heat. Line moves pretty smooth. The workers had a system down to keep the flow going. We only waited about 40 minutes. The store layout reminds me of a coffee shop with a few table seatings. There's also a wall of merch for purchase. We ordered both a strawberry and guava matcha. The drinks were very refreshing and perfect for a hot day. The matcha was strong but not bitter. Junbi Matcha is a great addition to the growing Matcha movement in the Seattle area. I would definitely say they have flavors that you won't find in other matcha cafes. They have a tropical touch to their drinks. They had a bunch of alternative milks and during the soft opening I ordered through a window. The inside portion seemed to be closed off for the time being but there was a small seating section. I've tried this for the first place in Hawaii and there was nothing like the Guava matcha latte. Seattle-Area Boba Shop Review #101 We visited Junbi Matcha after eating lunch in the area. While still pretty new, this shop seems to be well run with friendly staff and plenty of open seating indoors. Even though it was right after lunch on a Saturday, the place was completely empty and we got our drinks quickly. Considering how new the place is, I expected it to be more popular. Jasmine Green Tea, Less Sweet, Less Ice, Whole Milk w/ Boba ($7.75) - This drink is probably okay for lactose intolerant people - the cup is around 90% jasmine tea and they only add milk to about the top half inch of cup. Not worth the 75 cent upgrade to oat milk in my opinion. At less sweet, this drink isn't nearly sweet enough, being close to 0% sweet at other boba shops. The jasmine has very full bodied flavor, very flowery, but also has an overbrewed bitterness and astringency that the small amount of milk isn't able to mitigate much. It's still very fragrant and is definitely a strong jasmine tea. Due to the astringency, more sugar is required to help offset things a bit. We actually had to get the sweetness adjusted twice - first the bobarista put in about an extra half ladle of syrup, which still wasn't sweet enough. I then asked for two ladles in one of the plastic water cups to titrate. Adding about 1/3 makes the drink equivalent in sweetness to perhaps around 40% at other shops and adding 2/3 raises it to perhaps 66%. With that much sugar, the astringency noticeably decreases while the jasmine flower flavor still dominates. Note: they use simple syrup at Junbi, so it's much less harsh than fructose syrup but isn't as sweet. The boba served at Junbi is pretty great for a place I didn't expect to have boba at all (given that most Matcha specialty shops don't have toppings). It's perhaps a tad firmer than perfection, but still has plenty of bounce not to mention a smooth coating. The boba is marinated in syrup, albeit not long enough to create a strong sweetness level, which allows more of the interior molasses/tapioca starch flavor to come through. Milk Tea Rating (after adjustments): 4.5/5 Boba Rating: 4.5/5 Cold Matcha Latte, Less Sweet, Less Ice, Oat Milk w/ Boba ($8.50) - Junbi is one of the few Matcha shops in Seattle which doesn't whisk matcha to order. Instead, it's pre-made and poured out from a jug. This means there's no frothiness since the drink has settled, but it's still plenty tasty with the typical grassy notes and slight sweetness. The drink is about 75% filled with milk (so definitely not great for the lactose intolerant) before the matcha is measured out and poured on top. There's still a bit of chalkiness from the matcha powder throughout, although it's mostly smooth, and there's almost no bitterness at all but the drink is still astringent. Due to the characteristics of the drink, less sweet is okay. I'd still probably go for regular sweetness in the future though. I would say the matcha latte is not the highest quality, but they make up for that deficiency with value. This drink comes in a 22oz cup, whereas most other shops in and around Seattle are the same price, but only give 12 or 16oz. Whether that's worth the quality hit is up to personal preference. Milk Tea Rating: 4/5 Boba Rating: 4.5/5 The newest matcha place to open on Capitol Hill, Junbi brings a more classical boba shop experience vs. most others in Seattle. Drink size is far more generous than competitors, although quality seems to be a tad underwhelming. Still, if I'm looking for value, I wouldn't mind returning. The regular matcha latte looked promising at first and since this is a cafe specialized in matcha, but please save yourself the disappointment. It tasted like 90% milk and 10% green tea. It tasted like a green tea bag soaked in milk so not even matcha powder. The color was also a weird light green when it got mixed together so clearly there's too much milk. This place is extremely expensive especially for those BT21 drinks. I wanted to get one but I was not about to spend over $10 on one drink.
