We came here for my son's birthday and were so happy! I wish I had found this experience sooner. The food is as delicious as it looks and you will get your farmer's market favs on the table. We opted to do everything family style: beet salad (July) was amazing- you don't know how the blueberries are going to fit in there but, they do! And who can resist edible dirt? Duck wings were yummy, no idea how you get those little guys prepared to perfection but, the glaze and texture were just the right sticky and spicy. Little potatoes were unique with a nice little fondu in there. We sampled the chicken- a breast pounded so thin it covered the plate, crispy, nice little salad on top. The burger was melt in your mouth, spatzle was interesting but probably the least favorite of the table- probably just because it was more toned down with mild flavors. This is very new restaurant in Paso Robles and on the Michelin guide, so we came with a lot of heart eating some great food. They are known for farm to table and going for the fine dining vibe, but we didn't experience that at all. I agree with some other yelpers that we left quite hungry even after dropping $200+ for dinner and I saw why a lot of people ordered bread in the middle of the meal because things were really small portioned. Taste was decent and ingredients were fresh, but the price just didn't add up to what we were eating and the service and ambiance didn't give us a fine dining experience. read more

Came here for the NYE tasting menu. We had looked at different options around town and this one was the most reasonably priced, while still being a really good offering! I had also heard of In Bloom and had it on my list to visit while down here, so it was the perfect occasion. We had a 9pm reservation and got there right on time, our table wasn't quite ready, but we got started at the bar while we waited. They had a massive liquor selection and when I saw a bottle of something I had read about recently, I asked if it was possible to get an off menu cocktail. Our bartender Shea was happy to oblige and made me the exact cocktail I had been wanting to try. After a couple minutes were were taken to our table where we enjoyed our drinks and got started on the tasting menu. The meal was 5 courses, an pickled veggie app, fried chicken and caviar, a pasta course, a meat course - which was wagyu, and a dessert course to finish. They had the option for a wine pairing, but after a day of tasting we were wined out and stuck with the cocktails. Each course was delicious! I had never tried caviar before, and probably wouldn't have ordered it for myself out of fear of not liking it, but that was one of my favorite bites of the meal! The crispy crunchy chicken skin with the explosion of flavor from the caviar, such a fun bite. Truly though, there wasn't a single course we didn't like. I do wish that we were given a printed menu so we could've followed along with all the details of each thing we were having. Our server Jasmin did a great job telling us about each dish, but there was a lot to remember! Another cool highlight of our time dining here was that the owner, Nicole, was walking around and chatting with each table. She stopped and chatted with us for a while about her family's journey to starting a restaurant in Paso. Overall a great experience and a great meal. Let's start with the food -- or rather, the complete lack of care that went into it. The menu is uninspired, the selections are few (and frequently unavailable), and what we did manage to order arrived cold and sloppily plated. There's nothing even remotely memorable about the dishes except how forgettable they are. But the real disaster? The service. Our server, Kelsey, was astonishingly rude -- condescending, passive-aggressive, and seemingly allergic to basic hospitality. Every interaction felt like an inconvenience to her, complete with eye rolls and snide remarks. As for the manager, he spent the evening glued to his phone in the dining room, utterly oblivious to the chaos around him: slow service, unhappy guests, and filthy bathrooms. It's honestly baffling that this establishment made it anywhere near a Michelin list. Paso Robles has so many incredible restaurants -- this isn't one of them. Party of 4, Sunday evening with reservations and we had a blast...! This mom and pop sized resto sports an open dining area with a beautiful rectangular bar showcased in the back. The decor is clean contemporary with dark lighting to enhance the evening dinner mood. Jasmine was our main server and she was awesome. Energectic, friendly and very helpful with the menu and suggestions. She kept the table clear and the plates fresh. Our waters were always filled and drinks were full. The whole team was great, very well done! We went tapas/family style and we left full and satisfied. Mushrooms - Sauce was savory and made the dish Duck Leg - perfectly cooked for a juicy treat. Wagyu New York - Perfectly cooked to a medium rare. Slapped the wasabi and sea salt for fun. Fantastic. Braised Beets - Fresh and a great side dish. Loved ther dressing Eggplant - the tomato and funnel hummus was delish. We started dipping the meats in it after we crushed the bread. so good. Expectation was high being that In Bloom is a Michelin recommended restaurant, but unfortunately our experience did not deliver. We came in from out of town, after visiting Paso Robles wineries, on a Friday night reservation. The space gave modern vibes and was teeming to capacity. The host and waiter were friendly and polite from the get go, but yet still impersonal. I was a bit disappointed that upon serving me my Rover cocktail, the server popped its smoke bubble just seconds before setting it down and getting my attention, not really giving me the chance to appreciate it nor the chance to video the moment. Aside, the drink tasted descent as was the Watermelon Man my dining partner tried. The dishes we ordered (the chicken Schnitzel and Shrooms with beet muhammara) both had flaws as well. The chicken came under-seasoned and the mushrooms were heavy on the palate. My friend, said she had a bite of chili spice with the mushroom, and we could not, based on the written menu ingredients, figure out what and why it was mixed in there. Thus, we found the food overall rather difficult to finish. Kudos to In Bloom for outsourcing from local farms and giving them credit, but sadly, this information alone was not enough for us to enjoy this high end meal. read more

On warmer nights, the whole front of the restaurant opens for outside seating. On these nights, the sounds dissipate into the outside air--to travel on to their next destination. This restaurant has earned a Michelin recommendation because of the dynamic interplay between the guests and the environment. Together, they complete the sensation of intentional eating - in my fantastical analysis. Flowers! Flowers everywhere! Not the in-your-face type of bouquet you'd find at a wedding. No, these flowers were muted within their rightful shine - to align with the night's ambiance. I've never seen such decadence in their placement on a dish. I found myself eating these gentle, velvety entities as equally enjoyable as the Risotto they were placed atop. I still can't get over the paradox of such a simple - yet profound salad course. To try and explain its features would not do it justice. It felt like I was experiencing an organic chemistry event with each bite. The closest I can come to describing this dish is the blossoming flavors you'd experience as you swallowed each bite - as if the throat and stomach were part of the tasting experience designed by In Bloom. We have been to in bloom around 5 different times now and it stays on our lists of must go when we come to town. Each time the new menu has been a breath of fresh air. The tempura squash was such a fun bite and the burger is a can't miss. This was our second time with the chicken schnitzel and it was a different variation than we had last but it was so refreshing and delightful. Chicken Cesar style. The cocktails are always a blast. At first looking at In Bloom the menu seems unclear, but when they explained that it is like tapas, smaller plates meant to be shared, we dove in. We started with beautiful cocktails, including one with a smoke bubble! They suggested 3 to 5 dishes per couple and we were full with 4. Cute restaurant just north of the main city area on spring street. It had music going off a real vinyl album record player. Service was attentive and the cocktails were spot on. My wife got this vodka, grapefruit with a smoky bubble on top that was so fun and tasted great. We tried the tasting menu and we had a nice selection of items. This place is amazing. Let's start with staff who are super welcoming and knowledgeable. It was my birthday and they provided a card signed by the whole staff which was a nice touch. The space is also lovely, but the magic is in the food. We had the asparagus (delicious and presented unlike anything I had seen), the burrata and stone fruit (with yummy Calabrian ), beets and avocado (with edible dirt, what is edible dirt???), ricotta gnocchi (possibly the best gnocchi ever), and a delicious branzino. My order: lotus flower (cocktail), the pork chop, the ricotta gnocchi, saffron cavatelli, wagyu tartare, and the almond tart for dessert. I split all the dishes with my friend and she got her own cocktail as well. Total was about $110 per person. Pros: - unique upscale vibe perfect for celebrating a special occasion! - unique but limited menu (which I think is great - they do most of the stuff on the menu very well) - my favorite thing of the whole night was the wagyu tartare, it was DELICIOUS, had some egg on it and it's served on a tortilla chip which is so random, but it's like boujee common vibes. The little green on top cut it from being too savory. The pork chop is a once in a lifetime experience! it's SUPER fatty so if you're not into that don't order it. I wouldn't be able to eat it all the time, but for a rare occasion it was wonderful and so delicious tasting, super rich. Also a fan of the saffron cavatelli, which was the perfect sharing entree size. With the above food order, I left super stuffed and so full. - a VERY cute bathroom - all the staff were super welcoming and kind, shout out to our waitress who gave us her fave recs and described the items well while we were making our decision - Easy parking right outside the restaurant on a Sunday night. Came here for smash burger lunch on Sunday. Paso has some solid spots for burgers. Nothing that really blows you away. Until this. I hope this is a staple. I don't even like smash burgers but this is one done to perfection. I saw most of the orders come out. Each cooked the same. Perfect bun, crunch, double smash patty. A modern, upscale restaurant serving new American cuisine that's perfect for celebrate a special occasion. My husband made reservations for Saturday at 5 pm to celebrate our wedding anniversary. This spot shares a small parking lot with the Paso Market Walk next door but if the spots are filled, try your luck with street parking. We got there at exactly 5 pm and were seated immediately. The staff wrote us a happy anniversary card which we found very intimate and thoughtful of them. Our waitress arrived shortly with iced waters and gave us a brief explanation of the menu. We were given a few minutes to talk it through and she came back to answer any lingering questions and to take our order. Shared plates were highly encouraged by our waitress. We decided on the bread with carrot butter, kurobuta pork belly, beets & avocado, mixed greens salad, Branzino, 11 oz kurobuta pork chop and the almond tart to end the evening. Portion sizes were very reasonable for all the plates relative to the cost. Order to food arrival time was just right with plates coming out shortly after the previous ones were finished. Our waitress made sure we had clean plates and silverware for certain dishes which we appreciate. The food was fantastic with a few that were definitely 5 stars: bread with carrot butter (crispy on the outside, soft and fluffy inside, it was straight out of the oven), pork belly was melt in your mouth delicious and went well with the pickled blueberries and the gochujang glaze. The beets & avocado were plated beautifully and my husband loved the texture of the golden beets. We've never had edible soil before so that was pretty unique. The Branzino was cooked perfectly, the skin was thin and crispy and the meat was tender. The entire fish was deboned. The almond tart was life changing delicious. The bourbon compressed apple was thinly sliced, which complemented the smoked almonds and the miso caramel. Each bite of the tart was bursting with flavors. The kurobuta pork chop was a bit burnt but the taste was still good. The mixed greens salad was just average, more like 3 stars but it served its purpose of allowing us to fulfill our veggie servings for the day. First things first, the food was excellent. But the experience totally got me off. My son was graduating CalPoly and we had taken a reservation here. We came to the restaurant a few mins before the time, and the hostess said it will be a few minutes. Go back after half hour, she pointed me to a full table and said when they leave I will be seated. This hostess was the rudest, non empathetic person I have ever seen in my life! I did not want to spoil my evening so was calm. I talked to the manager, and the manager was nice and apologetic for the situation. We were seated after 65 minutes from our appointment time. The manager did throw in a few freebies for the table. We ordered food and the food came out "slow", as in 15-20 minutes apart... the longest time for the burrata which I would have expected to come first. We then finally got the bill and on it was slapped a 20% service fee. I figured whatever, paid and left. Did not want to ruin the evening. But man what a shitty experience. I made a reservation at In Bloom over a month in advance, thinking it would be one of the most memorable stops of our weekend in Paso Robles. This might have been true if I hadn't finished my day of drinking with several cocktails at dinner, but as it turns out, my memory of the restaurant is a little bit fuzzy. That said, everything I remember is very much positive. I loved the place, and we all had a wonderful time. The restaurant was attractive, lavishly decorated and full of pretty plants. The vibe was bustling and fun, and as far as I know, no one batted an eye at our party of six women sliding into moms' night out debauchery. Service was good, I think. The cocktails were excellent, which is why I kept drinking them. I'm a sucker for these clarified milk punches that have been showing up in trendy restaurants, and the Winter Winds Milk Punch was a good one, with Plantation 5-year rum, chai tea, lemon, vanilla, and Angostura and orange bitters. The Persistence of Time was a lovely mix of Elijah Craig bourbon, persimmon, lemon, demerara, nutmeg, and egg white. The Barrel Aged Boulevardier was smooth and strong, with Rittenhouse rye, Elijah Craig bourbon, Carpano Antica, Cocchi, and Aperol. The food was delicious. The wagyu tartare tostada was a nice dish of almost bite-sized raw beef tostadas with smoked ramps, Calabrian chili, black garlic, crème fraîche, finger lime, and pecorino. The mixed greens were a leafy salad with pomegranate dressing, pickled pomegranate, spiced hazelnuts, and ricotta salata. Mushrooms came with butternut vinegar, cashew cream, toasted cashews, and hibiscus. Octopus skewers brought tender octopus with garnet yam over popped Rancho Gordo Californian black rice and green curry. On the heftier side, there was a beautiful butternut squash risotto with pumpkin seed furikake, White Gold parmesan, pickled raisins, and currants. The wagyu New York was a rich Kuroge Washu wagyu steak served on a big cutting board with black truffle steak sauce, wasabi, and Cabernet sea salt. Pacific sea bass came with broccoli cream, broccolini a la plancha, and pickled cipollini onion. For dessert, we shared the tart, the s'mores, and why not, two decadent cocktails. The tart was bright and light, with Meyer lemon custard, strawberry compote, and candied ginger. The s'mores was a bowl of chocolate mousse topped with marshmallow fluff, grahama cracker, and seasonal jam. As for our liquid treats, the Coffee Song was an espresso martini with Drake's organic vodka, Liquor 43 chocolate, and espresso; the Private Idaho another nice spiked coffee drink with Jobella coffee, Kahlua, Bailey's, and Grand Marnier foam. I may not have perfect recall of this dinner (this Yelp review brought to you by shards of memory and the very shitty pictures I managed to take, a delicate work of reconstruction), but I retain a good impression of In Bloom and hope to go back on a future trip to Paso Robles. read more

It feels like In Bloom is one of the restaurants leading the culinary scene in Paso Robles and i'd say it's on the short-list or must-get restaurants in Paso. We came in with a group of 4 on a Sunday evening and had no trouble finding seating. We ordered a number of different dishes: Wagyu Tartare Tostada, Mixed Green Salad, Citrus Salad, Cauliflower, Burrata, and Kurobuta Pork Chop. There was not a single dish that stood out, because they were all great, nor was there a single dish that was as disappointing/lacking. I think if I had to remove a dish, I would do the Mixed Green Salad, because it's mixed green salad. However, I did like the addition of granola. The Pork Chop had a nice, smoky, dry rub that complemented the the fattiness of the pork. Really good flavors. The citrus salad was maybe, maybe, my single favor thing. The texture of the lettuce paired with the sweet, tartness of the grapefruit, was just really good with the creaminess of the dressing. I would gladly eat this every day. The tartare has a great umami flavor and luxurious, somewhat creamy mouth feel. Again, all the food was very good. I appreciated the vibe too. They played an instrumental of "The Chronic 2001" on the record player and it was a nice soundtrack to the meal. The server was friendly, but nothing notably special. All-in-all, great food. Prawns - 4.5/5: Great balance of flavors, lots of sauce, perfectly cooked and thought through Yukon Gold Potato - 5/5: Simple yet sophisticated. Velvety cheese, crispy potatoes, and the rest of the accompaniments brought it together Beets & Avocado - 4.5/5: Always consistent, great balance of flavors and textures Tempura Shallots - 0.5/5: Oof. After the dish sat on our table for about 3 minutes, the first bite released oil so hot it burned our fingers. The outside temp was no indicator of the scorching inferno awaiting us on the inside. Aside from that, this is not a good vessel for delivering the dip. You can't eat it in one bite - do you double dip? No spoon came with the dip. On top of that shallots don't really bite cleanly. Would be better as smaller cut pieces. I love the idea on paper, but eating the execution was rough. This was my 4th visit to the restaurant and the single bad dish I've had. My recommendation would be make an allium fritter (garlic, onion, shallot) that's bite sized with the dip Braised Beans - 4/5: Simple and pleasant. The manchego is the right cheese to elevate it Carrot e Pepe - 5.5/5: When it first arrived, we thought it was honestly just a bowl of carrots. Such a disappointment! We had driven down from the Bay Area for the weekend and having read all the rave reviews on yelp, made a reservation here for our party of 4. I had reached out ahead of time to inform the restaurant that we would be celebrating 2 birthdays and to check if vegan options might be available. I was pleasantly surprised to receive a voicemail and text from the co-owner Nicole acknowledging both requests and saying "we love birthdays!" When we arrived, the place was jam packed and extremely loud. So much so, that we could barely hear each other over the noise throughout dinner. Our server indicated which options on the menu could be modified to be made vegan, (which I appreciated). We ordered the gem salad, beet hummus, bread, and tempura for the table. My friends ordered a couple of other items. I was told the chef would prepare one portion of the salad with vegan dressing. which never arrived. When I enquired after it, the server said she misunderstood and hadn't placed the order. When it finally came, the portion was a full table size instead of an individual one, and the greens were not the same ones as the gems. Instead, they were a different unrecognizable variety - bitter and completely inedible, a total waste of $32. Both cocktails I ordered were also barely drinkable. The food was unimpressive to say the least. The servers kept bumping into my chair as they tried to navigate the tightly packed space. As we wrapped up the underwhelming meal, the table next to us was also celebrating a birthday, and a dessert with candles was brought out for them. I informed our server (who had just brought their dessert) that we were celebrating 2 birthdays as well. She literally dropped a dessert menu down in front of us and walked away without so much as a 'happy birthday!'. Not sure why there was such a drastic difference in the way we were treated. We asked for the check, saying we would pass on dessert, to which she replied 'well, celebrate in your hearts!' Wow!!! In contrast, the restaurants we had visited on the 2 previous nights in Paso were absolutely brilliant. One run by a couple in a cozy farmhouse with fairy lights on the porch and the other, a trendy mediterranean one inside a hotel. Wow, wow, WOW! That was one of the best meals we've had in a long time. The menu was so unique and every dish we had was super delicious, well seasoned and perfectly cooked with many different flavors. I wish we could've tried one of everything. The ambience is beautiful. It has an elegant touch, yet still manages to feel cozy and comfortable. The vinyls playing on the record was such a cool vibe too. Our server was very knowledgeable and attentive and guided us through the menu seamlessly. We even treated ourselves to their specialty Chartreuse selection which we've never tried before. we were up here on a short vacation and came across this cool little restaurant. We tried their food the first time on Friday night and ordered just about everything on the menu and we were so impressed that we're currently back here again ordering everything on the menu. Todd Kevin and Jennie were amazing staff members and I highly recommend the chicken schnitzel and also the Smashburger, but their meat salad and bread were out of this world plus the Yukon potatoes we had to get two orders of those because everyone scarf them down instantly. read more

First time in Paso Robles- this place was highly recommended online so I decided to check it out. The service was great- food and wine, not so much. Being a Michelin star restaurant I expected amazing food- it definitely disappointed. The duck was sooo salty- and seabass was so dry- and the dessert also was flakey and tasteless.
