My wife placed the order & I showed up about 20-35 later & the ticket was still hanging on the wall & hadn't even prepared yet. ( maybe my wife was just slow @ placing the order?) Hummus Republic is a fun concept! It's like Chipotle but for Mediterranean food. We visited last week and I went with the build your own pita option. I ordered my pita with crispy chicken and I thought it was really neat that they had to cook the chicken right in front of me, as opposed to having crispy chicken sitting indefinitely at the ready. It was well worth the wait. The employee who assembled our dishes was super helpful in guiding us through the process and answering our various questions about the menu. read more

Stopped in for my longevity kick-start, and this place was really cute inside! Servers were really nice and friendly. The one server didn't know as much about GF vs non-GF, but the other server was very knowledgeable. I ended up getting the chicken shawarma spinach wrap. The ingredients seemed pretty fresh, but I'm not sure what they put in my wrap that was so salty. I didn't see her sprinkle salt on my wrap, but then again, maybe she did while I was getting a lemonade. Let's just say I'm going to be watching my food being prepared VERY closely if I can help it from now on. There are SO many options and everything was super fresh! I've never had so many flavors complement each other. I had a wrap with the warm chickpeas, traditional hummus, zesty feta, onions, cucumbers, and tzatziki sauce. It was SO good and huge! I'm so excited to see more restaurants popping up in the west valley. I love Mediterranean food so I was really looking forward to trying this place out. I like that you're able to build your own bowls and wraps and customize it to your liking. It's nice that they also list out their vegan options on their menu. I included the mushroom shawarma and falafel in my bowl, and while the mushroom was good the falafel was a bit dry and lacking in flavor. I also tried the strawberry tahini milkshake but I was let down by this drink. I was expecting a thick creamy milkshake but it was very watery and did not taste good. Despite this, I'd wanna come back to try again to see if that was just a fluke. read more

I was homesick for some good Mediterranean food, and the Hummus Republic fit the bill. They have several varieties of hummus (I had to try each, and all were awesome). And the dolmades (stuffed grape leaves) were fresh, juicy, and made my tongue happy with the wonderful mix of flavors dancing across it. The facility put me in mind of Chipotle's with the menu board above the food pickup line. They do a lot of take-out but there are some tables available. I am all about the bowls; it gave me the chance to try 3 of their 10 hummus options and also a variety of toppings. Worth trying the roasted chic peas. My tennis team sampled the shakes which they said had the right combination of unique favors with tahini and dates while also hitting the sweet notes with ice cream and whipped cream. We were a group of 4 (with one vegan)and staff was helpful as we had never been there before. 2 of us had pitas and 2 had bowls. Food was delicious and quite tasty. They make falafel and other items to order so they are fresh. Used up mushrooms and they cooked more for our order. Healthful items and such flavorful sauces and hummus choices. First time checking this place out. Everything was fresh but be warned- the Moroccan sauce and meat is fire spicy! I had just a little on my bowl and it overpowered everything and all the other flavors were lost. My wife had the Earth Burger and the red peppers were spicy also.
