Fast casual dining is my new favorite thing so you could only imagine my delight when I found this place so close in proximity to where I was. We got there upon opening so they were still setting up. Regardless, they were ready and attentive and I was appreciative. It was my first time here so it was a little daunting but I've been to Cava and Chipotle so I'm familiar with the concept. The food was so fresh and abundant. My bowl lasted me two meals and I eat A LOT! The chicken was a little bland and the dressings didn't pack a punch that's why I knocked it down a star. We ordered the gyro bowl (Grilled beef & lamb gyro, fresh spinach, traditional & olive hummus, tangy artichoke hearts, olives, tomatoes, zesty feta, crispy fried eggplant, creamy tzatziki dressing), one pita bread the kids meal (chicken bowl). I didn't like the bowl at first but the more we ate the better it tasted. The ingredients blended so well together and you they are fresh. It is good healthy fast food. We also had the mango lemonade which was very refreshing. The sweet potato fries were friendly fried after we ordered. The fried chicken was light, crunchy. Such a refreshing experience. I created my own bowl and the ingredients were fresh, tasty, and just right. The hummus and pita chips were spectacular. Don't know what to make of my last visit to Hummus Republic but I'd been an occasional customer since they first opened and the food was always good. Two staff were assembling delivery orders so I patiently waited a minute until one server greeted me. Halfway through my order another customer stepped in line and the worker stops and asks for her order too. We were both confused and the other customer tells her, "We're not together. He was here first, I can wait" at which point the woman behind the counter replies, "That's okay, he can wait." For the record, I do not know this person nor have I shared my itinerary with her. Before I can say anything the other customer insists, "no please go ahead, I have three complicated orders", and the server replies, "It's okay I can do yours first". I start to walk out the door when the other server calls me back to finish my order. I'm honestly still uncertain what's going on here. Is it standard practice to start helping one customer over another? Was this other person the owner, a personal friend, or a frequent customer? Either way I left feeling less than welcome. Solid relatively new fast-casual spot in the area. Very similar to a Chipotle where you get to customize your meal. They serve Mediterranean style food with options such as couscous, pita, and salads. I would definitely recommend for lunch. There were many options for vegetarians as well! Interestingly healthy & optionally spicy food prepared very quickly, but only a handful of tables so better plan on takeout. Go down the line and point to what you want but they HAVE to figure out the blender! I'm sure the tahini shakes from that blender are awesome but the machine is so loud that the people adding ingredients to your bowl or pita simply cannot explain the choices to you nor hear what you want. I found it difficult to choose in a hurry among the many hummus, toppings and sauces. This California chain landed in Morristown in July 2021, I'm reviewing them on their third day, far too soon but I was curious. The menu apparently is the same at every location but prices are not, here a pita starts at $9.50, wrap at $10, bowl at $11. Same price for animal protein like shawarma chicken and veg protein like falafel. I tried the pita, a very generous lunch, added too many extras so it was overloaded lol, I'm a fan. My dining companion opted for a bowl with couscous, greens and meat; that couscous was a little dried out tho and should have asked for more greens. Toppings are unlimited - but that doesn't mean they're included free. Rice wrapped in grape leaf, dolmes, are $.50 each; fried eggplant is also extra. Vegetarian rating: 5 stars, veggies can stick to traditional falafel, go with the mushroom and onion mix, or venture to the vegan beef. My wife had shared that this restaurant opened and she wanted to try the pita and hummus. Hummus Republic is la mix between Subway and a fast food Mediterranean restaurant. A series of workers take you through several stations to assist you with whatever you need. The meals are customized to your desire. A few things I noticed upon walking in, the place was very clean and the people working there were extremely pleasant. I met the manager/owner and he went out of my way to see that all of my needs were met. Since I am a Mediterranean food novice, he asked if I wanted to try anything, including the food and drink. I tried a drink with turmeric in it (I believe it also had lemonade). It definitely wasn't my speed but seemed very healthy. The hummus was fresh and delicious! My wife didn't like that the pita was fried, so next time we'll probably just ask for an uncooked version. The sweet potato fries were good, but there seemed to be a pepper-like seasoning that I didn't enjoy. I will definitely return to this place and try something new. Got a falafel bowl and they definitely had tons of options. It's a cleaner and healthier version of Mediterranean power bowls. I did add a bed of kale in it. Great tasty food, and so many vegan options!! We got the falafel bowl and the vegan falafel burger and were super happy with this decision! The falafel burger was super flavorful and the sweet potato fries were crispy and delicious! One thing I will say is the pita chips were not cooked enough and some of the pieces were straight pita bread. Maybe needed a longer toast time for those- kind of made the order feel rushed for us.. I'm sorry but I did not enjoy my bowl. My protein was chicken shwarma and the chicken was not good. I was disappointed that they use fatty chicken thigh meat and should indicate that on the menu. Cold chicken thighs that are fatty do not belong in a cold dish. read more

The food is great but this store in particular is poorly run. The website says the store is open until 8PM on weeknights. I went about a month ago and the place was dark at 7:45PM. Today, after struggling to park because of an event at the theater, I showed up at 7:34PM and as I approached the door, the young gentleman working flipped the sign to CLOSED in my face. I signaled to him to open the door and asked if I could get an order to go. He said they had put all of their food away already. I asked why they didn't have any food available a full half hour before closing. He said "we close a half hour before closing". He made no accommodations, despite there being 3 people actively still eating in the restaurant. This was rude, and closing at 7:30pm (dinner time) on a Thursday during one of the busiest nights in town seems senseless for a newer business. read more

Same as Chipotle, I chose a bowl with the pita on the side! The toppings here are unlimited but a few are at an additional cost. The olive hummus is fantastic and highly recommended. It may seem a little costly but it is very filling - I got two meals out of one bowl! They also have some tasty lemonades - my favorite was the jalapeño. Definitely a solid option in Morristown. Nice set up with a station of fresh ingredients to choose from, while you build your mix. I had the chicken shawarma bowl. Chicken was tender and had a nice spiced flavor. The couscous had a great flavor, and the feta humus was rich and awesome. Lemon oil dressing very fresh and vibrant. Could have had a heavier hand on the spinach, but nonetheless, a very very good experience. Also, the turmeric and ginger beverage is outstanding. A warm pita was also a nice addition. One small issue was there were numerous flies hanging around the counter station, and most of the ingredients were uncovered. However, it was an 83 degree day on Saturday, so I am sure the door had been left open at some point to perhaps bring in deliveries, etc. minor complaint, and hard to control. Anyway, I would absolutely recommend, and will 100% be back to try other options, as well as grab another beverage. Good stuff. Oh, and the servers / employees were super nice! read more
