The smoke ring on both of them was perfect and gave it perfectly good smoked flavor throughout. Hopefully it won't take me another 35 years to swing through Bishop to try this again! Popped in for dinner and ordered the sampler platter. Tried 3 different meats: brisket, tri tip, and the regular sausage. For sides, I ordered baked mac and cheese and the beans. The meal also came with a piece of cornbread. The cost of the sampler is $28. Brisket had a decent bark, although im not certain both sides of the brisket was seasoned but it was pretty tender. The smoke on the brisket was pretty aggressive, leaving ALMOST a bitter taste. Thankfully, I like a pretty aggressive smoke. Nice smoke flavor on the tri tip but also seemed to lack seasoning. Was otherwise pretty good. The sausage ended up tasting pretty good! The beans might have been ever so slightly undercooked, but otherwise tasted good. The mac and cheese says it is baked, but honestly, its hard to tell aside from the burnt cheese on top. Other than that, it was alright. The best part of the experience was the servers. We were in Bishop around dinner time looking for somewhere to eat. We looked on Yelp and saw this BBQ restaurant had pretty good reviews. I love good BBQ and it's hard to find in California. My sister lives in the south and they have great BBQ, but we noticed they have tri-tip on the menu which is not a cut you find in the south, so we decided to try it out. There was a line to the door when we walked in. The line moved fairly quickly and we were still deciding what to order when we got to the front. My son only wanted Mac N Cheese. My sister and I decided to split a sampler with tri-tip, brisket, and hot link with mac N cheese, cornbread, and a baked potato. We found a seat and there a few BBQ sauces on the table. Our food came out within 5 minutes. The food looked great. My son who really only likes chicken for protein saw the tri-tip and thought it looked great. My son ended up eating as much as we did, he loved it. The tri-tip and the brisket were perfectly seasoned and smoked. They were some of the best I've had. The hot link, was good, but not my favorite thing. It was quite spicy which was fine, I didn't love the texture as much. The mac N cheese was good. The bakes potato was over cooked and the skin was a little tough and not edible. The cornbread was good. The sauces were quite tasty. I liked the spicy and even my picky son loved the spicy. We stopped here on a whim during our drive home from Death Valley when we were craving some BBQ. Upon arrival we were greeted by staff and placed our order. We got two of the platters where we got to choose three meats and two sides for each. As a family of four (kids aged 5&9)this was enough to fill us all up. We had tri-tip, brisket, chicken, and mild sausage with Mac N Cheese and beans and two giant thighs of cornbread. After placing our order we picked out seats. Due to weather (it was about 26° out and had snowed in the days prior) we sat inside where the decor was what you'd expect from a Texas Style BBQ restaurant. The mountains surrounding the area were an amazing backdrop as they were beautifully covered in snow. Overall the food was good... tri tip and brisket were amazing. The feel is definitely comfortable and casual, as rolls of paper towels are used for napkins. If you ever go to Bishop, go here at least once. Food was so tasty and filling. Even though the interior was small, service was still so nice to us. Recently we were in Bishop after going to Manzanar and having to stop by Eric Shat's but wanted some dinner before driving to Palmdale. We browsed on Yelp for something for two adults and a teen to eat and came across Holy Smoke. It looked very good so we decided to go. My nephew as being a typical teen and wouldn't help decide what to eat so we ordered him a large side of mac and cheese and then got a sampler with three meats, mac and cheese, cornbread and beans. We asked for more of the tender/fatty brisket and it was lovely. They had a few sauce choices on the table and I liked their original house sauce. got the Longhorn (smoked brisket), for 28 bucks. I am carnivore so I am more used to big portions. I always find it funny if I want to oder a dish without any sides, but still pay the same price without the options to have more of the main course. a few slices of bisket. IMHO a very steep price for the portion. But maybe i am too frugal for today's eating out. My kids gotten the dish with three different meats. chicken, pulled bork and ribs. all the meat was pretty dry, especially the pulled pork. the chicken skin was really hard, like leather. I know a restaurant needs to prep things ahead of time a bit, but the food came out right away almost and tasted way overcooked and dry. We all had some unsettled stomach after, tho we are very used to eating fatty meats. I personally won't go there again, i also haver very high standards. read more

The cashier asked for which side and charged me $1.75 extra for the salad. It should come with it, since I didn't get any bread. The brisket was really juicy and tender. Hurts to say it because the staff (when we finally got their attention) were friendly and helpful, but this is genuinely the worst barbecue I think I've ever had. After a long day of skiing, I ordered a sampler platter with brisket and pulled pork, with mac & cheese and potato salad as my sides. It also came with complementary corn bread. No joke, the "brisket" they served me was all of the scraps from the actual slices of brisket they gave other customers. It came in these tough gray leathery overcooked pieces the size of dog kibble, swimming in grease. The pulled pork they served me was literally inedible because it was so dry. The mac & cheese was this flavorless, congealed ooze with a weird chewiness to it. The potato salad was weirdly soupy. The cornbread only tasted edible when smothered in honey and butter. And so I know which ribs are those prepared to a level of ~holyness~ that can hardly be described in a mere yelp review. And yet here I am, attempting to describe such feat. These ribs come to mind quite often. They are my go to post climb meal, which indubidably makes them better, however the fact the meat falls off the bone is proof enough of their worth. I've never walked out of here unsatisfied. While I get the ribs every single time I gander to this heaven of a spot, my friends have ventured elsewhere in the menu and have similar reviews of 10/10 satisfaction.
