We've been here a few times recently, and somehow it gets better every time. The service is honestly impeccable--whether you're at the bar or seated, they really don't miss. The grilled artichokes are in season right now and absolutely live up to the hype. The French dip is easily the best I've had in Denver--genuinely unreal. I also tried the sushi for the first time and was surprised by how good it was. The dirty martini with gin and goat cheese olives was perfect. It is busy, so definitely make a reservation and expect a bit of a wait even when you get there--but once you're seated, it's 100% worth it. Such a solid spot. read more

Hillstone is always a great place for a great dining experience. The wait staff are always very friendly and we enjoyed our food and experience here. It can be challenging to get a reservation and as most places in Cherry Creek, expect to have to pay for parking. We came here on Sunday evening, with a reservation. Every table was full and glad that we decided to plan head. They did validate our parking, which by the time our meal was over was $10 for the parking garage. We started off with the spinach artichoke dip, this has always been a favorite 9/10. They were nice enough to fill back up our salsa, so we could enjoy the remainder of our chips. We also had the coconut shrimp sushi was pretty good, great variety of things inside 7/10. I also had the nice little house salad which had a really good dressing and I was very happy with this 9.5/10. For entrees we both had the Hawaiian ribeye, mine was cooked perfectly medium rare but my partners was a little underdone for medium, 8/10 on the steaks. I am disappointed that they no longer serve this with baked potatoes as the fries leave something to be desired. The fries were a little bland and some were a little over cooked 5/10 on the fries. For additional sides we had the bell pepper with French feta, delicious 9/10 and the braised which is always a favorite of ours 8.5/10. We look forward to making it back again soon! read more

Hillstone is a very busy restaurant and reservations are a must. BFF and I decided on Hillstone before a show downtown. They have a parking lot in the back which is a huge benefit. We were seated right away because we did have a reservation but people who didn't were quoted up to an hour wait. Our server was Hailey, who was training a newbie, Sarah. Hailey was upbeat but seemed very distracted. When we ordered we specifically told her we were splitting the chicken sandwich and the noodle salad. We opted for the grilled peppers instead of cole slaw with the sandwich. When our food arrived the sandwich was cut in thirds. We asked Hailey about that and she said it always comes out like that. She said we should have asked if we wanted it cut in half. We had no idea that was a thing - she knew there were two of us and we were sharing. It wasn't that big a deal but it was very annoying that she tried to turn it around on us. I guess it's an example of "you don't know what you don't know". Our food was really good and the menu had a great variety but we did feel rushed because our plates were taken away as we were eating the last bites. I've been to Hillstone many times over the years and can always say that when you go there you'll receive good/great food. This visit did nothing to persuade me from saying that again. When talking about price everybody will feel my pain in that many restaurants that raised their prices during Covid have continued to keep their prices up with Hillstone definitely being one of these restaurants. I was actually pretty surprised that the famous French dip wasn't into the $30 range yet :-) When we arrived this time, we waited in line for quite a while and when finally next we were told that, yes, we were checked in, but to wait. At this point, it would be helpful to let the people know how long they will be waiting so they can decide whether to try to get a drink at the incredible busy front end of this restaurant. Service which has always been prior to my more recent visits has been excellent. It seems as though service is starting to drop at Hillstone. I remember my last visit here walking away with a disappointing feeling towards their service. This visit resulted in us having three different servers, and when my wife and our friend received their wine, and it was warm, the server replied "I guess that wine is popular. " this was a chance for her to do her job and say what can I do to fix this? I will probably still go here, but it will be less often because "I ain't got time for bad service!" read more

One of my favorite restaurants in Denver and my go to for a reliable meal. Service is always incredible here, with attention to the small details. Really can't go wrong with anything on the menu. You have to order the crisp martini because it is perfect. Our go to's on the menu include any of the sushi items, we love the tuna tartare and the pressed sushi roll. For entrees we love the crispy chicken sandwich, the cheeseburger, and the Hawaii ribeye. What can I say...it's a bar! Came in for drinks on a work trip and had a couple of tasty cocktails. This is the kind of place I would bring somewhat bougie clientele, and the space is loud...so, it's a vibe for a certain kind of person, and in this 'hood (Cherry Creek), I think that vibe will fit for a fancy night out. There's no happy hour here, the music is fairly bland, and there were a couple of corporate groups drinking near my end of the bar. It's a short walk from some nicer hotels, so as a change-up from drinking only at my hotel, Hillstone seems like a solid choice...even though I would never choose a bar like this back in Chicago! read more

Great place! Came here with a friend while traveling on business. Could see this being a cute date night place, too. Nice outdoor patio with a fireplace. Highly recommend reservations. We still had to wait about 20 minutes after our reservation time, but was well worth the wait. Awesome waiter-- even apologized for the wait and surprisingly offered an appetizer on the house to compensate. Wide variety of options on the menu to meet everyone's cravings! We started with grilled artichoke for an appetizer. Would not be normally something I'd pick, but really liked it. I had the rotisserie chicken-- super tasty and juicy. We had a wonderful dinner at the Hillstone! We made reservations for a Saturday night just hours prior. Definitely recommend doing this as there is usually a wait. We were seated promptly. To start we ordered the fries & deviled eggs. I was hoping to get their amazing artichokes but they're out of season! That's ok - next time! Our main dishes were the Caesar salad and the French dip. Everything was delicious. Our server noticed we waited quite a bit for our starters and decided to comp them - amazing service! Already looking forward to our next visit. read more

I had the pleasure of returning to Hillstone Denver this week. Our waitress Keller was fantastic. The service at Hillstone is the best I've experienced in Colorado. Hiring the new Manager Jaclyn Sanett was a coup for Hillstone. We eat out 4 to 5 times a week at great restaurants and Hillstone is certainly a "great" restaurant; it has it all; food, service and ambiance with top notch management with Jaclyn. My wife's delicious filet with broccoli and potatoes was cooked to perfection and my French dip was the best I ever had; the bread they use compliments the dish and absorbs the "au jus" and horseradish so well that my sandwich spoke to me "o Mon dieu" (oh my god). Yes, it's that good. The hostess helped us change our 8:00 pm reservation to a 4:30 walk in and gave us a great table. We wish Jaclyn well At Hillstone. Takeout has been incredibly important for us, and Hillstone was one of the few places where even the takeout experience felt just as thoughtful and high quality as dining in. I was really disappointed to learn that takeout is no longer offered. I completely understand wanting to protect the in-restaurant experience, but for longtime guests like me, this change makes it much harder to continue supporting a place we truly love. "Dress Code Theater at Hillstone Denver" Hillstone Denver delivers its usual decent food and service, but be prepared for a side of arbitrary fashion policing. I was asked to remove a "jersey-style" shirt -- not a sports jersey, not fan gear, not sloppy -- but a high-end designer shirt with large numbers on the back. Apparently, numbers themselves are now incompatible with the ridiculous shiny polyestery black shirts and ties they make their staff wear in the middle of the day. The irony is rich: the shirt was well-tailored, clean, and clearly intentional -- and an overcoat to A $1900 Prada tshirt - I think far more refined than half the outfits I saw around me. Yet Hillstone's dress code seems less about elegance and more about enforcing an outdated, vague aesthetic that mistakes control for class. If the goal is to maintain ambiance, perhaps the rule should focus on presentation and quality, not whether a garment resembles something a referee might wear if you squint hard enough. Certainly the shiny ugly black server outfits do not fit the casual look and ambiance of the place Goof food and atmosphere. But the dress code enforcement feels performative and borderline absurd -- like being denied entry to a museum because your glasses are too modern. The soft drinks are bottled & poured onto glass w/ ice, which is honestly annoying to me but I guess that's how some upscale restaurants are. The French dip comes rare & it's best served that way. The bread looks hard from photos but it's actually very soft and easy to chew. I added Swiss cheese on mine. It all just melts in your mouth when you dip in the au jus! We went to Hillstone over Labor Day weekend to celebrate my birthday. The staff was very accommodating, service was excellent, and food was very delicious. We arrived a little early, so we took drinks on the patio - my only note here is there needs to be additional service - there were quite a few old cups and plates around that needed to be bussed. But the setting despite the flies, cups, and plates was very nice. The hostess and everyone involved in the service was nice and accommodating. For drinks we got the crispy martini - deliciously perfect. I did try the vodka grape drink but I sent it back - it tasted of pure sugar and no grapes. For food we started off with the osaka press and we really held back from getting a second order of it - we love this "roll". Then we had the spinach and artichoke dip, it was so good - I am still thinking about it. Then we got the iceberg wedge, that salad is so good. My husband got the french dip, he really enjoyed it and I got the tuna tartar and it was just ok, needed salt and less onions. But we were already stuffed by then. Hillstone is an upscale chain restaurant. You would never know it unless you've been to other ones around the US. This place is a great place for a nice date night or dining out with friends. Guys please note no hats in the dining room. Not sure if you can wear them at the bar or not. The service is top notch! They really do not miss a beat at all. We started with spicy tuna roll, spinach artichoke dip, and a Cesar salad. All very good and my favorite of the 3 was the artichoke dip. I forgot to take a photo of my French dip , but that's my go to. It comes with plenty of meat on it and great to dip in the sauce and the horseradish. I had a 4:45pm reservation for myself and two clients who I was meeting in person for the first time. I arrived early, around 4:30, to ensure I was there ahead of my guests and checked in with the hostess. I politely asked to be seated in a booth in the bar area, as it appeared to offer a nice setting to get drinks with some clients. Despite the bar area having multiple open booths, I was informed that they do not seat incomplete parties...I understand that many restaurants do this however, I explained that I would appreciate being seated ahead of my clients' arrival, given the nature of the meeting. After some time, another staff member approached and offered me a seat at a distant communal table, which felt unsuitable for a business engagement. I reiterated my request to sit in a booth and was told that they were reserved for "diners only." I assured her that I was more than willing to order food if that was a requirement to sit at that table. Eventually, I was seated in a booth, and I took out my laptop to prepare for the meeting--only to discover that the restaurant neither offers Wi-Fi nor permits laptop or tablet use...I get it if it is disruptive to other guests but I can't be the only one who had ever been here for a business meeting...interesting but that wasn't the worst part. When one of the hostesses (who I had previously interacted with) brought waters to the table, she spilled all over and walked away without an apology or an attempt to clean it up...making it feel very intentional, especially because I had my laptop out on the table. I don't know why the employees here feel so high and mighty and exhibit such rude behavior but I do not recommend this place for any occasion.
