I don't know the new ones much yet but so far they are very nice. We stopped in for an early dinner pizza. Thankfully the crust is the same! And it was hot and delicious. A couple of things are different now, they use more sauce and slightly less toppings. Fine by me. I like the sauce it's flavorful and yummy. As for less toppings I'd like to see another handful on there but all in all I'm cool with it. I'd ask for most next time when I order if I feel the urge. Cheers!

Someone in that truck has lost sleep over dough hydration and fermentation times, and you can taste every obsessive hour. The complex, yeasty chew doesn't lie. That leopard-spotted char happens in all the right places, and the bubble structure? You don't get that from quick-rise dough some guy mixed three hours ago. The sauce has this vinegary kick that'll probably make a Neapolitan purist clutch their pearls. But honestly? Sometimes tradition needs a little deviation to keep things interesting. It cuts through the richness and wakes up your palate instead of just sitting there like most tomato sauces. Inside Bravo, it's relaxed without being boring. Lively without trying too hard. They let you bring in glass-bottled Cokes from The Sticks, which seems like a small thing until you realize how many places would've made that weird and complicated. These folks get it. I watched the staff make pizzas and bake pizzas in their Italian wood fired pizza oven. My pizza was really great, which was topped with plenty of toppings including pepperoni, sausage, onions, red peppers, mushrooms, red sauce, and melted cheese on a firm thin crust with slightly charred edges in true CT fashion. The chicken parm is adequately portioned/meaty and the fries are decent although I prefer some skins on mine. I can't speak to the fried clams etc because I don't eat that stuff, but my understanding is that it's the same as what Lindy's serves. I'm not sure if it's always the same person that answers the phone and retrieves your order, but I've had the same one all three times and she is friendly, enthusiastic and helpful. To me there's nothing worse than calling a place that does only takeout and the person on the other end being cold and unreceptive.
