    I really wanted this to be a great meal from a stylish spot and welcome a new "go to" spot to Wimberley. Unfortunately, it fell short. I look forward to trying it again to ensure it's not a fluke. But for now, it's just an Ok place. We came at about 5:00pm on a brutally hot summer day. Easy to get parking and, unsurprising, no one outside. They have a ton of outside seating under cover & fanned that looked enticing. I'll wait for fall when the temp is below three digits. I can easily see this as a great place for an after hours drink and listen to some live music in cooler weather. Inside was sterling. They did a great job designing and styling the inside. Almost all the tables were either 2 or 4 chairs, so if you come with a crowd it might be tough. Unless of course you all sit at the ginormous bar! They had two initial touches that really started to make me excited about a good meal. First off, plenty of staff. In a world of underpaid folks, they don't seem to have any problem finding people and that's a great leadership sign. And they all seemed happy, motivated and very competent. Most importantly - water! My pet peeve is never seeing the waitress and not getting your refill until the meal is over. They started with a nice large bottle of water for the table and refilled it when it went empty. GREAT measure of a waiter/waitress's skills. Unfortunately, the food didn't live up to the style. Either the chef was off or needs more focus on flavor. It looked great! But I thought I was eating at my in-laws on a low flavor diet. It started off with the Burnt End Rangoons. If it were advertised as Cream Cheese Rangoons, it would be closer to the mark. No smokey or savory taste at all. The thing looked great, but even the dough was dull. I did taste a lot of mint/ginger, but in the center of the cosmos when it comes to "Hill Country BBQ" - why even advertise Burnt Ends unless it's all hype. For the entree, I had the Fish & Chips. My deepest concerns came true: the lack of rich flavors didn't end with the Rangoon. The dish looked great but that was the most boring cornmeal crusted catfish I've ever had. I don't recall asking for no/low sodium or no pepper or no any seasoning or flavor, so something wrong there too. I have never added salt to a dish, but I was thinking of breaking precedent with this one. Even the tartar sauce was meh-ok. Add some pickle relish perhaps? The coleslaw on the other end was just so over spiced that I couldn't eat more than one bite. And I like some spice/heat. It's just that the entire thing was so over done. Maybe I was supposed to eat a little bite with each piece of catfish. Maybe I shouldn't have eaten the polar extremes separately! Lastly we had a side of green beans and blue corn grits. Usually I balk at that as a trend to monetize customers (aka, dig customers for more money). In this case, there was a TON of it. So, if you go, there's plenty to share. Likely each will serve 2-3 people depending on appetite. The green beans were very good. It had a nice flavor hit of garlic and were likely the best dish we had. The blue corn grits were very solid and the goat cheese (?) on them really added a great twist. I'm looking forward to going again to try something different in hopes of some solid flavoring, but this one didn't work as well as I had hoped.

    Excellent decision to stop and try this place out! The guys ordered the Hildee's Burgers with tots. The ladies ordered the Hill Country Cobb Salads. Hildee's Burger 9/10 - they are: DOUBLE PATTY, 1/2LB. TEXAS WAGYU, SMOKED CHEDDAR, TOMATO AND SMOKED PORK JAM, LTO, HILDEE SAUCE, POTATO BUN. Wow! Pretty good overall, however mine needed a little salt and pepper to make the flavor pop. The included Tater Tots were excellent. A little crispy, like Hashbrown Tots. Hill Country Cobb Salad 10/10 - they are: FARM GREENS, NESTFRESH EGG, SMOKED PORK AND CHICKEN, HOUSE PICKLES, FETA CHEESE, GREEN GODDESS DRESSING. The ruling on these were they were extremely good. Reminded my wife of the epic salads at Supper at the Pearl. Definitely a must try! Service 9/10 - Zoey L was our server and did an excellent job. She was friendly, attentive and helpful. Thanks for the guitar decal Zoey!! Atmosphere 9/10 - place seems pretty new. It's clean, nice vibe and has a fun feel. Overall 9/10 - the only real con might be the limited menu items. I'd definitely recommend to try it out!!

    The food was superb. A small group of us got together for a late lunch today and selected this place as it was new and had lots of great reviews by our neighbors. It was spot on. The only misfortune, but still not a bad thing, was that the dining offerings were limited to a lunch menu. We had all shared the menu ahead of time and were excited to taste different things, but were narrowed down to only those on the lunch menu. As an appetizer we had the cornbread - candied jalapeno cornbread with house made pimento cheese. It was so different and refreshing. We all loved it. Each got something different for lunch and each raved about how good their selection was. Chop Beef brisket was sweet and tasty. Fried Pork Sandwich looked as good as our friend said it was. Hildee's Burger & Tots was a tad salty and though the tots were good, sneaking chips from the other plates made you wish the burger also had the house chips. All choices were good and without a doubt made us think that no matter what we selected, we would have not made a bad choice. We topped our meal off with a shared Peach cobbler cheesecake among the 5 of us. It was so delicious and plentiful that each of us was able to take a few spoonfuls 2-3 times around. What a tasteful experience. We loved it so much, we requested the Pastry Chef to come out and talk to us. Caroline joined us and shared some of her recipe with us as well as secrets to her talent. She was a delight and truly has a passion for what she does. That is evident in the pastry results. This place is a winner and I encourage everyone to try it out.

    I took away one star only because the prices felt a bit high for the amount of food received, but everything tasted good. I think we just had higher expectations. We ordered the cornbread & pimento, burger & tots and chicken fried steak. The burger was a tiny bit greasy, and the chicken fried steak felt so small for something you usually get the size of your face in Texas. The restaurant is also superrrrr casual for the price point, and the indoor seating area really small for how big it looks outside. However, our server was really great. Attentive, nice and made great recommendations!

    The food was excellent but the service was a little slow. However, overall this place is great. The cornbread and house made pimento cheese was delicious and the same goes for the balsamic reduction fried brussel sprouts. The ribeye cfs was thick and tender with no shrinkage. I should have ordered it extra crispy because I like the crust to be crunchier, didn't get a pic of the blueberry olive oil cake with toasted buttercream icing was to die for. Maybe the best cake of my life. Their a/c needs some help is my only criticism. Try them out!!

    Very nice atmosphere/space. We used the online waiting list on their website but I don't think it was necessary. The inside tables were still going to be a half hour wait so we sat at one of the open outdoor tables. It was super hot but the fans did a decent job. The only reason I had to knock off one star was the steak :/ I always have high expectations when ordering a steak... I at least expect it to be cooked the way we asked. But I also expect certain cuts of meat to not be served to customers at all... We were pretty surprised when it came out and it was very well done (not what we ordered) and very fatty as well. Hardly any meat. It sucks bc the other food and cocktails were great- yummy burger, creamed corn, tots, rangoons, lavender lemonade, and margarita! The steak just really kinda ruined it for us. But I will definitely go back to try other things on the menu!

    Hildee's is an awesome casual eatery located conveniently along the Blue Hole Trail and away from the congested downtown section of Wimberley. The restaurant features both indoor and outdoor space, and there are live music performances offered at times in the patio. The restaurant uses many ingredients sourced from Texas including locally raised beef that is either a blend or hybrid including Wagyu. The food trends toward what I'd call new American, with refined versions of pub cuisine on the menu. We started with the chilaquiles verdes, featuring fried pork belly and a spicy tomato salsa, all served on fried tortillas. The level of spice was perfect with a bit of heat. We also enjoyed the smoked salmon, served with capers, soft boiled egg, and a tangy lemon dill sauce along with toasted baguettes. The burgers were excellent too, a bit overdone for my taste but still excellent with the smoked cheddar and Hildee's sauce on a potato bun. We also enjoyed the fried chicken thigh and honey butter biscuit sandwich, just oozing with that honey butter. The biscuit was very light and fluffy and the chicken was cooked just right and was juicy and flavorful. Dessert consisted of the peach cobbler cheesecake, with a very tender cake more like a mousse consistency and not your typical firm cream cheese. The cake was topped with a crunchy crumble and the fresh peaches were well carmelized and very delicious. I appreciate that the dessert was not overly sweet so you could enjoy the flavor of the peaches. We ate on the patio but the interior has a comfortable seating area and a long bar as well. Service was excellent with the server making many trips to clear plates, refill the water bottle and making sure that she took care of our needs. Prices were on par with other local establishments. If you are hankering for some local eats away from the crowds, this is the place to be. Recommended.

    I guess you would just call this place expensive. The interior is very pretty and well designed but you are going to pay for it. I had lunch there with a friend where we had one drink each the bill came to $65 and then you're expected to pay another $10 for a tip of course. $75 for lunch. Yes the mixed drink was nice and the beer was a beer but the meal was tiny and almost 20 bucks each. Everything about this place is good it's just really expensive to the point it almost feels like a violation.

    This is the Texas Sheet Cake. Sounds plainer than what it really is. The pecans are brittled & crunchy. Super good!

    Came here for the Chicken Fried Venison. It was served with mashed potatoes & creamed gravy. Husband really liked it. It's the only places that serves it & it didn't disappoint. I ordered the pork steak, green beans & peaches. It was good. I do have to brag about the dessert, pretty, delicate & tasty. A chocolate lovers dream. Yum!

    So I finally made it to Hildee's! You know these are just good folks and also happen to be our neighbors. Food was awesome awesome. My friend had Texas fried catfish and I had the new menu item, tasty Steak Tostadas. I really went today for the Chicken Fried Venison, but those tostadas just waylaid me! Ryan, the owner, also recommended the homemade pimento cheese and jalapeño corn muffins. What can I say. Not a crumb was left! No room for dessert this time but I've sure heard good things about their pastry chef! Next time, y'all!

    Hildee's was fantastic! Super warm and welcoming atmosphere with live music and happy vibes. Service was on point and very attentive. Excellent place for families or a date night. Food was delicious, wings were TOP notch, and that bbq sauce was sooo good. Also enjoyed a beet salad and a meaty, flavorful burger. We found the portions to be perfect and pricing to be very reasonable. We will definitely be back again with friends and family!

    The food was okay (we had the cornbread, farmstand sandwich, and burger) but the service was absolutely horrific. Our plates were never cleared, iced teas never refilled, we were never asked if our food was okay, and we had to chase down someone to ask for our check. We were seated inside and our waitress was young. She just sat there and stared at us.

They actually have a parking lot even though it is small but we were able to find a parking space. I would come back if back in the area.

My brisket on the other hand was very thinly sliced and while I asked for lean brisket, which I routinely get from other barbecue places, and I am very happy with, that was not the case here. The brisket was very dry, and there was very little if any flavor at all to it. Because it was like so deadly any bark that was on the edges was pretty much gone, which is OK if they dream the fat, but it just really left it flavorless and I needed to slather on the sauce in order for it to really be enjoyable. Speaking of the sauce that was pretty black cluster as well if they seem to be mustard based and the peppery one was really the only flavorful sauce. the other milder one was pretty bland. Unfortunately, the blindness doesn't end there. I felt like the potato salad consisted of what you typically find in a breakfast taco type of potatoes and the coleslaw with a vinegar based, but it was also pretty flavorless. Fortunately, we opted for the split cobbler and got half peach half blackberry topped with ice cream and that dessert was absolutely amazing! I would likely not go back here though, and probably wouldn't take anyone specifically for this barbecue. The venue is really nice though and it has a nice ambience so if you're looking for that and OK Ish barbecue then this would be your place.
