We were seated right away in an open format atmosphere with the best balance of light and dark. The bar across from us looked fantastic. What we noticed right from the start is how well the staff works with and for each other to bring guests the best dining experience possible. Maddie was our server. She was kind, professional, patient, and knowledgable about both food and drink on a grand scale. Her recommendations were stellar. I had a refreshing gin and basil martini as well as their beef carpaccio, which was absolutely fantastic. My girlfriend started with their beef stew, which was thick and satisfying. It was so delicious, she almost canceled her entree to have more. She went with the home cooking route and indulged in their meatloaf with green beans and mashed potatoes. Although she loved that as well, half had to come home with her, which made for an excellent lunch the next day. I went with the raw of it all and got their spectacular tuna tartare with asparagus, radish, and rice. Usually, the tuna is cut into strips but this tremendous block of gorgeous fish knocked me out. Absolutely fantastic from presentation to flavor. For dessert, we got their brownie with ice cream and this was all upper level in taste and texture. I would be shocked if their ice cream hadn't been made in-house. We loved our first experience with Apollo and we look forward to our next visit, which is hopefully sooner than later.

Thank goodness we planned some flexibility after the meal before our show started. But the real downer of the meal was Alison. Our server had such an attitude... while the food was pretty good, she was not. The place was also too loud and had no vibe. The bar crowd spilled into the seat area and looked messy. Wouldn't go back.

We ordered the Caesar salad (phenomenal) The steak tartare, just divine perfection The waitress heard me talking about the sweat breads from the chicken dish (that I wasn't ordering, I'll explain shortly) and said the chef could do them as a side dish, DELICIOUS!!! My husband got the world's largest most delicious pork chop. Now, my meal. I ordered the halibut and recognized that perhaps it wasn't for me, but I ordered it it was my choice I wasn't going to send it back. Our waitress took note that I wasn't eating and told me that simply would not do and hustled to the kitchen to come out with the chicken dish, I was so appreciative of her noticing and accommodating this, truly, amazing service and that chicken was succulent beyond words! We also got 3 of the desserts, the seasonal eggnog bread pudding, the cinnamon raisin bread pudding which was insanely delicious as I personally am not a huge bread pudding fan but if every bread pudding was this? That would be my go to! And of course the butterscotch pudding which better never leave the menu because it is lick your plate delicious!!! I also enjoyed a hot cocktail which on a cold night was heavenly. Bolete is such an incredible culinary journey that we specifically go there from our home state because we know it will always be inviting, delicious and warm with heart and soul from the chef and staff.

Their farm-to-table approach means a rotating menu and selection of curated ingredients that make up stunning dishes. From appetizer to dessert (which sadly we didnt have room for) the menu is thoughtful and intentional. Starting with cocktails - the famous Sleigh Bells Ring (featured on the cover of Edible Magazine) was perfection. Not too sweet, warming and tart with the mescal and boozy cranberry sauce- and incredible concoction. The Dark Love Story was equally seductive with a vodka base and aperitif blend with red wine reduction. The thought they put into their menu doesnt just stop at food! We were torn between starters but the Tartare was our pick and an excellent one. The egg was golden, the capers crisp, and the truffle aoili was never overpowering. The housemade crisp chips were a welcome change from the often offered toast bites while still being an elevated dish. The potato crsted cod was served beautifully with a lobster broth poured table-aide and was accompanied by fresh clams, shrimp, and mussels- honestly not a critique to be found. The grilled Chipotle flank steak was cooked to perfection and the hen of the woods mushroom was a showstopper. All in all I struggled to not make a reservation for every night I was in town because it is a must to go back. The decor and staff arw welcoming and as thoughtful as the meals served with mushrooms present all throughout complimenting the Bolete name. 10/10 all around.

I mentioned this and was told that's because many of the same craftsmen worked on this place too. Made me feel smart! If you go. Do yourself a favor and walk around a bit. The food was very tasty I think it is the only restaurant I've been in locally that didn't use excessive amounts of salt. A big plus. The mixed drinks were interesting and reasonably strong. I usually quaff mine down fairly rapidly, savoring the buzz during dinner and still safely driving home after. I had potato soup, which was very good, and Ming had Beet Carpaccio, which was thinly sliced seared root veggies with seasoning. I only had a bite because she wanted it all! Then came dinner. I had the ribeye, which was done so that it was seared one the outside to keep the flavor in and red (while being cooked thru, not an easy feat) and it's was flavored but not overly salty, were unusual. I ordered my usual Worcestershire sauce to clean off the extra salt, but hardly used any. Ming had the crab cake, which was the only negative of the meal. While not overtired or salty, there was a bit of a fishy smell. Not terrible, but off putting. Luckily for me, I don't like crab anyway so I didn't have any. The desserts were good, with a tasty chocolate cake and a peach cobbler that was good but could have had a bit of peach goo to moisten it a bit. We stayed in the premier king with soaking tub room and everything is described to perfection from the spacious bathroom with the soaking tub to the separate get ready changing room. The overall room and establishment decor is one thing, but what elevates this establishment are the personal human connections with the attentive staffs. A huge shoutout to both Sundiata and Lou for their graciousness and hospitality skills. They along with the restaurant bartender tonight, Ashlynn, continue to make us feel like a home away from home. Having been here a few times and been to their restaurant, we highly recommend this place to both locals and visitors.

It's great for dates because this is where my girlfriend and I had our first dinner together in 2021. Veronica, our incredible server, took care of us. She fielded any questions with ease and her recommendations were exceptional. My girlfriend loved her cosmopolitan and my martini with blue cheese stuffed olives was phenomenal. The artichoke and spinach dip was both plentiful and flavorful. The tuna tartare was a bit dry yet delicious. But that grilled octopus was on a completely different level of flavor and texture. I had the pasta primavera and it was rich and delectable. I added shrimp which were perfectly cooked. I didn't think I was going to finish it but I did. My partner enjoyed his chicken panini. The fries were excellent. We both want to return on our next Bethlehem trip to try the pierogi and some cocktails. I also think their salad options look good. Twisted Olive is a great option in Bethlehem.

Great service, great food…read more The person who booked our dinner reservations did not know this was a cigar bar so we were a bit shocked walking in, but we were seated downstairs at the farthest away table so we thankfully didn't smell much smoke. Service was great, our waitress was very attentive and friendly. For apps we did the pirogies which were some of the best I've ever had, the red wine sauce was amazing!, as well as the shoulder lean which was good. For an entree, I did the Jimmy Pesto wrap. Good flavor and massive portion, but the chicken was very dry. Husband got the What's the Dilla, which was great and again a massive portion. We also enjoyed most our cocktails.

And then there's the mac and cheese... absolutely to die for. Even the children's mac and cheese is ridiculously good. Creamy, cheesy, comforting, exactly how mac and cheese should be. Their salads deserve their own shoutout too. The goat cheese salad with pickled eggs is perfection, and the Caesar with cornbread croutons? Genius. It's the kind of detail you don't expect but end up craving every time you think about it. But of course, the real star of the entire place is the cornbread. Truly heavenly. They serve it warm, and the whipped butter melts right into it, it's honestly dangerous how good it is. I could eat the entire dish by myself without hesitation. The service is always great, quick, friendly, and welcoming. It's one of those places where the vibes feel just as good as the food tastes. We waited over an hour and fifteen minutes for our entrees, even though the restaurant had basically emptied out by then. When the food finally arrived, some dishes were cold and others were dried out from sitting under a heat lamp. For a place charging these prices, this is unacceptable. What made the experience worse was management's complete lack of accountability. The GM never came over to apologize, acknowledge the delay, or offer any form of compensation, nothing, despite us being patient, polite, and spending over $400. At that price point, basic service recovery should not be optional. This was a frustrating and disappointing experience from start to finish. There's clearly a reason reservations were easy to get during the height of the Christmas season. We will not be returning.

I asked to speak to the manager and promptly was greeted by Lee. He immediately said they were waiving the minimum as it wasn't entirely clear on the reservation system. He was awesome and took feedback from my wife and I. That's what great customer service is all about. The only thing keeping this from being a five star was the risotto was a bit bland. My girlfriend got a couple of small plates and she loved her meal as well. In the morning, we returned for brunch, which usually wasn't as good in the past. My girlfriend wanted scrambled eggs and bacon and fries. Since I was starving, I indulged in the beef poutine with onion gravy over fries and with an egg -- as well as the blistered tomatoes. Absolutely phenomenal (along with a great cappuccino). The flavors were truly incredible. Kimberly, the server who may be the best in town, took care of us, which only added to our experience. She is a stellar ambassador to ZEST. Reservations were fast and easy. Upon arrival (both times) we were seated immediately. The only strange thing had nothing to do with ZEST: Even within the restaurant, if you search for "brunch near me" or "breakfast near me," ZEST does not come up at all.
