The two problems with this specific location are: the staff and handling of foods with allergies. I'm giving grace on these things because most of the workers were young and it seems liked the one guy was new. They were very loudly talking about various places they vacationed while also helping customers. As for my allergy, they handled it like every other shop - wiped down the machine and the areas around the line, they also put my bread on a different paper, and changed gloves. Where the issue happened was that the newer guy used the mayo that was on the line, which the knife was on non-gluten bread so cross contamination happened. This is just a good relearning moment on allergies for your staff. Every other Jersey Mike's uses the squeeze bottles for allergies.
