I have never really been into ramen - nothing specific about it, but for some reason it's always been to heavy for me. Flame ramen changed my mind. Killer Bao buns, excellent vegan ramen options, and some yummy yakisoba. Service is always quick and polite, and the atmosphere is just right for a ramen restaurant. Ordered belly bao ... pretty good. Had the Ichiraku and Premium miso, both are pretty good. First, the parking is awful here. If I hadn't ordered my food ahead of time, I would've left. The location is in a tight spot for a city that depends on cars as primary transportation. But before then, I called before 5 and was not greeted properly, they just answered and said "we don't open until 5". I called back and placed my order without issue though, but the first call to them was off putting. So they did call when the order was ready, which was great. The inside is really cute, looks like other ramen places I've been to. Now the ramen I ordered was the tan tan. It was good, but wayyy to spicy for me. Very flavorful, but it was hard to get past how spicy it was, it didn't compliment the dish; it overpowered it too much to my liking. I had to dilute it with a little water. The noodles and everything else were perfect. Ill order a regular dish next time & I'll go back under very intentional circumstances, like when it's not busy around their location. Stopped in here on a mini Girls Night Out! LOVED the food and LOVED the quality of service. Everybody in the restaurant is so kind and welcoming, especially our waiter named Ming. Not only was the main course (Vegan Paradise Ramen) excellent, but the Green Tea Cheesecake was to die for! I loved that both vegan and vegetarian options were offered. My girlfriend and I have been to Flame several times now, and every time it is exceptional. Staff and service is always so friendly and kind. The food is exceptional. We've had a little bit of everything on the menu and have thoroughly enjoyed all of it! We love the bao and the veg gyoza. So so tasty. We've had a couple of the ramen bowls, yakisoba, and donburi and every dish has been incredible. Unfortunately, some of the worst customer service I have had in Memphis. I ordered food online to pick up and deliver for a meal train. Tried calling 4 times with no answer then placed an order through Door Dash. When I arrived, their machine was dead to receive the order. The restaurant was not very busy at all. No apology or remorse and they exclaimed they were super busy so couldn't answer the phone. Then they said the order would only take 10 minutes because they were, in fact, not very busy... I then proceeded to wait for 20 minutes for a to go order I had placed online 45 min prior. They were unkind the majority of the time and we were very late to delivering meal train food to some friends with new babies. Do not place a to go order here. read more

It is a new place and they were definitely understaffed, but that's totally understandable and the people working were all really kind and responsive. What was so disappointing was that first sip of ramen broth. If you love ramen, then you know a flavorful broth is the key component of good tonkotsu.
