I got there around 11:40 and was seated quickly but by 12 it started to get a little more active which is understandable. The service was good. Everything came out quick! The ingredients seem to be very fresh! I don't know how to describe it, but you can just tell. I ordered the Tan Tan and the Pork Chashu Bao Buns. The servings are big so I had left overs which I'm so happy about because I think that when the flavors settle in the ramen it's going to be explosive! The wifi thing gave me a little pause I needed it because I wanted to pay via the QR code but my cellular service was sketchy and the app wouldn't load. Me: "Can I use the wifi?" Now we even get ramen in Memphis? And real ramen at that? What a world we live in! We ordered way too much (delivery), in the hopes of finding a great dish. Happy to report, we found several. About the only thing we didn't appreciate was the tan tan version. It was so tasteless (not sure what happened there). But vindicated by a very good tonkotsu entrant. This had been our favorite ramen spot. And the food is definitely still very yum - but dang, the price has gone way way up. No toppings are included in the basic price, and some, like bamboo, are 3$! that's for like. 1/2 cup of bamboo. My bowl of ramen with four toppings total came to 20$! Yikes. And then at one point one of the chefs used the back door to have a smoke and left it cracked open. Both his smoke and the frigid air blew in on us for like 3 minutes. Really messed up our vibe. Flame is pretty easy to find as it is right on a corner. The problem is parking. I was lucky and pulled in right as someone was leaving. I'd say they only have about 10 spaces on the lot. If you can, please back into your parking spot as I had someone park behind me and blocked me in. It was not fun getting out at all. Now to the restaurant experience! Flame opened at 5:00pm and I arrived at 5:10. The hostess took my number and told me she'd give me a call because there was already a 30 minute wait. Once they called me, we were seated at the bar. One of the waitresses brought my friend and me a glass of room temperature water, which was disappointing. I did ask for ice later on. The appetizers were really good and flavorful! I ordered the chicken gyoza and my friend ordered the Bao. They were both really good. I'm wishing I'd ordered these as main dishes. As my main dish, I ordered the Tan Tan ramen bowl. The presentation was amazing. Super cute in the bowl! However, no flavor at all. It was so unfortunate. I poured the juices from my gyoza into it to try to add a little flavor. Also, plan to dress light. This place is very hot and on top of that, you're eating hot ramen dishes. I'm assuming the air was out or something. I was extremely uncomfortable. Had to visit Memphis and found this absolute gem. The place has some rough parking, but that is where the bad ends and the greatness begins. I've had lunch here twice in two days and regret nothing. The first meal was a recommendation by the server and absolutely FIRE. The black and red bowl with kara-age and a curry bun were more than enough to keep me full and a blast of flavor to boot. On the second trip it was the Shoyu bowl with the chicken chashu. A delicate, well balanced bowl perfect to not weight you down too much. Add to this impeccable service and a nice, clean spot with perfect style and you get a top class place. I was pretty excited to try out this spot! Was a bit disappointed as they were out of the takoyaki and the baos by the time we got seated around 8pm (recommend to get there earlier so food doesn't run out). The seafood fries and dumplings were our second pick. Fries could have been a bit crispier as the seafood mixture does make it a bit soggy but You can't really go wrong with fries! The dumplings were good but not knock-your-socks-off kind of dumplings. Now to the main course, this is probably one of the better ramens that I've had in Memphis as the broth was pretty clean and didn't feel like I was licking a salt brick. Been to a few places that the broth was SUPER salty and had to water it down. They have chili oil at the table that provides the broth a bit of spice but tbh it's not spicy at all. Just a "flavor enhancer." The pork was pretty good too. They rendered the fat out really well in the pork belly. The Memphis mystery is a chef's choice kind of ramen. It also had chili oil in the broth that I was first concerned would coat my tongue with oil and was really surprised with how "light" it came across! Service was pretty decent even as they were pretty packed but the parking is small (5-6 spots in front of the restaurant). You'll probably have to find parking across the street near the starbucks or next door jewelry store. Overall, would come back again to try a different ramen and other apps! read more

Flame ramens atmosphere inside is very nice and pleasant, the shop was busy so it was a bit hot with the amount of people inside, and the kitchen is open, so the heat is probably just making the restaurant that way, however the takoyaki was very good! The ramen I had on the other hand, the 7734, tasted like pure chilli oil and was quite bland once I got to the soup. Aside from that the food overall was okay. I wouldn't go out of my way to try it again, but I will in a couple months to see if anything has changed and re-review, hopefully the broth will be a bit more flavorful next time. The staff seemed a bit understaffed but I think it's still a new opening, so in time both these things should get better. Wait time and flavor will improve hopefully. read more

A nice little place in Memphis Tennessee to charge up on some very tasty Ramen. The broth was delicious the noodles were very tender and the pork was melt in your mouth tender. The little bit of fat on the pork was very tasty, kind of like a meat jelly. Very pleasant flavor surprise. I asked for spicy broth but my idea of spicy has a bit more heat involved. Adding flakes after the fact is not the same as simmering the heat in. All in all I'm not hating the place and I will return and try another delicacy from the menu. I was in town on business and trying to find a vegan restaurant for dinner. I tried two other places - only to find they were closed - before coming here. It was exactly what I needed to find. I chose the Vegan Paradise dish along with some edamame to start my meal. The edamame was dusted with a spicy flavor that was phenomenal. It took edamame from yum to deeeeeelicious. The vegan paradise dish was exploding with flavor. Vegan food doesn't have to be boring and this dish proves it. It was exactly what I needed for dinner before I had to leave Memphis the next morning. If you're looking for vegan or vegetarian options, I highly recommend heading here. Ordered 3 items for delivery as my family are all sick with a cold. 30 min later only 2/3 items were delivered. We tried calling but they had their phone lines turned off. We decided to give them the benefit of the doubt and split the ramen with chicken loin that we ordered. I finally got the chance to eat here and it was a 5 star experience all the way around. The chashu bao buns that we started with were some of the best I've eaten anywhere. Such a pretty dish too. The buns were steamed to perfection, fluffy, warm, and were filled generously with such flavorful braised pork. There were some perfectly roasted garlic cloves in the bowl with the bao buns and they were sweet and creamy like butter and did not go unnoticed by us. YUM! I went the "build your own" pho route. You select your broth, protein, noodle type, and FOUR additional ingredients. Our server was super helpful and after he answered a few questions I built my creation: creamy pork bone soup base, straight noodles (gluten free were an option), pork belly for my protein, dumplings (2 count as just one of your four add in ingredients), bean sprouts, wood ear mushrooms, and scallions. I opted to add a soft boiled egg. You select your heat level too. The end result was DIVINE. The dish was so richly flavored without being salty, the heat level was spot on, and the noodles were the exact right texture. Everything was FRESH and it looked like a work of art too. Really this food is five stars and the service too! Those bao buns were definitely the star for me. They added a slice of lemon on the side and it really balanced the salty of the chicken and sweetness of the bun. A perfect mouth combo! The ramen lunch combo was HUGE! You could totally share this between two people. I had mine for lunch, dinner, and still have a portion to take for lunch tomorrow. Those wood ear mushrooms are so delicious and chewy they are a delight! There isn't a ton of seating in here so once it gets full that's it. Beautiful atmosphere and simple decor. Flame Ramen is a brand new joint opened on a busy Union Avenue and let me tell you, Memphis needs a whole lot more Ramen!! This is one of the few good ramen places in Memphis. They opened during covid and have picked up business quickly. I love their Vegan paradise ramen which has perfect blend of spices and tons of vegetables/tofu. Their veggie dumplings are absolutely delicious. The Yakisoba noodles have the classic stir-fry flavor which makes for a great meal on a rainy or cold day. The kitchen and sitting area are next to each other, so it can tend to be warm in summer. However, that ends up being a great plus during cold winter nights. Food didn't take too long, but they didn't bring any silverware or refill my water (that has been empty). Again, I had to continuously stare and try to wave someone down to ask for a spoon (and they didn't fill my water up after I asked that as well...just a spoon was brought.) After I ate about half of my food I started to do my usual of waving someone down to get a to-go box for my items. It's not like I was in the back either, my table was right in front by the cash register! I really wanted to try the Red Bean Taiyaki + Mocha Green Tea Ice Cream but with how awful the service was I didn't want to stay any longer. Honestly, If I go back I don't think I can do it alone. The ramen has DUMPLINGS, mushrooms, corn, tofu, green onions, bean sprouts, seaweed, and the menu says it should have broccoli... Mine does not. Nonetheless, this ramen was very delicious! The noodles are thin, but a very good texture! I really love that they don't give you an overwhelming, huge portion size like a lot of ramen places. The tofu was the perfect firmness! The dumplings were AMAZING! They definitely have some type of meat substitute in them, even though the menu describes them as "vegetable". My only complaint about this place is that the ramen broth was a bit too salty. However, I love that they provide chili's on the table so that you can make your ramen as spicy as you'd like! Went for the 1st time with a friend last week & honestly I was blown away. We tried several things but our favorite was the pork bao. They were absolutely amazing! The takoyaki were delicious as well. The ramen was very good from what we could taste past the spice but that was our own fault lol. The waitress did warn us that if you think you're ok with a certain spice lvl then to probably go down a lvl but it was still yummy. Memphis definitely needs a good ramen place, and unfortunately this ain't it. We had the tonkotsu and the 7734, and they were simply not good. The tonkotsu was literally no flavor, it was water with things added. The 7734 was just a bunch of oil and pepper flakes. Sorry, but if they have not learned to make a good broth by now, they never will. On top of that, the actual noodles were terrible: all stuck together, hard, impossible to slurp. Anybody that had real ramen anywhere in the west cost will be sorely disappointed. Prices are quite high too, and the service was lacking. I have never really been into ramen - nothing specific about it, but for some reason it's always been to heavy for me. Flame ramen changed my mind. Killer Bao buns, excellent vegan ramen options, and some yummy yakisoba. Service is always quick and polite, and the atmosphere is just right for a ramen restaurant. Lunch time is my favorite time to go, and it's a little less crowded than the dinner hour. A happy addition for Memphis restaurants. :) read more
