Really good tasting food! Some seating areas there so you can eat them fresh off the grill. I'd see it as a bit more upscale/urban than usual Mexican places. Recommended!

Quesadilla

Always so busy whenever i drive by so i thought i would give it a try. I ordered shrimp tacos and a quesadilla with carne asada. Shrimp taco was very loaded and the flavor was just ok. My quesadilla was HUGE but when i took my first bite i bit into what was the nastiest piece of just like pure beef fat or something. It really ruined my appetite so i ended up removing all the beef because it grossed me out so bad. A lot of the cheese wasn't fully melted and there was more meat in it than cheese so I didnt even bother eating the other half. The service was good it was a bit of a wait for my food since there was a bit of a queue ahead of me. Unfortunately i dont think i will be back

Wow, this food truck is so popular! My husband and I got dinner for a Tuesday trivia night at Burke-Gilman Brewing, which is next door. My husband ordered a chicken quesadilla with chicken and veggies, which was HUGE! (He ate it over three meals) He said he would definitely order it again. I got two tasty tacos, the chicken mole and the grilled fish, which had good flavors and textures. You can order at the window or pre-order food online, which I highly recommend due to popularity, but considering the number of people ordering, the wait was reasonable. The guy taking orders was considerate and communicative; we totally understood the wait when he said he would be right with us as he quickly sent the previous order. Though they were slammed, orders went out with impressive ease. When we got food, we chose from a wide range of salsas, from no spice to very spicy. The non-spicy aguacate and mild verde I tried had great flavors and consistencies; my husband really liked the roasted and medium red salsas. There is a covered seating area with string lights near on each end of the food truck. Although rustic, the areas were comfortable, clean, and tidy. Great prices for tasty food made with good quality ingredients

I've been coming here for years and I love it! Their food is consistent, their prices are good for the amount of food you get, and you can tell they use high grade ingredients. The employees are always super friendly and the seating area is always clean. 10/10

I came here because a friend recommended it, saying it was one of the best Mexican food trucks around. As a true food lover, I had to see it for myself and I can honestly say it exceeded my expectations. I ordered the chicken quesadilla and my friend got the Mexican plate no joke, it was possibly the best Mexican food I've ever had in my life. So flavorful, fresh, and well prepared. I'll definitely be coming back!

I was hoping to order the deluxe, but they WILL NOT omit the mayo. I went with the cheeseburger with ketchup and mustard. They wouldn't even sell me a small handful of lettuce so I could dress myself. Unfortunately, the kids cheeseburger at McDonald's is better than this. The fries would have been good had they not been so soggy, limp, and barely warm. As for the service...they simply took my order and firmly advised me that everything is premade and you get the burger the way it comes. Period. No niceties for a new consumer or welcome of any kind. This was not during a busy time at all. I realize this is a hometown Seattle favorite and more power to the die hard fans that love it. It's just not for me. I'm sure Dicks could care less about my comments. I wish them continued success in the generations to come.

The first thing that stand out to me is the tortilla which is a yellow crispy consistency. It is delicious and it looks like it could be a buttery crisp French pastry of sorts even though I realized it was most likely just crisped up. The burrito I ordered is very interesting. It tasted more like a chicken pizza or a Mexican style fry bread. The burrito has feta and mozzarella tasting cheeses and the burrito is less burrito tasting and more cheese forward. The inside of the burrito is shredded chicken and whole beans which makes this burrito filling and the portion is generous. I don't mind this as I'm taking this place as fusion. If you look at the menu they specialize with Birria and this makes sense if it's the same tortillas used. The options are odd but they are eye catching like ramen birria. I look forward to trying their specialty soon. The salsas are really nice and mild and they give the right amount of kick. Seattle prices are astronomically high. Even for a burrito it came out to $19 with tip. Nothing to do with this food truck but it's getting crazy out in PNW. Service was fine and quick. The ambiance is more of a grab and go and not somewhere where you want to eat in a parking lot. It's is way better than burrito California on the ave and a refreshing departure from corporate burrito flavors at Chipotle.

I ordered two sides and a rice bowl with carne asada with a Korean twist, and after tip it was $35 and change. I'm so pleased with the easy ordering at Project 9 Brewing. They have tablets to order from, QR codes, and of course you can order straight from the food truck. I really liked how the tablets also offered common modifications, so the egg on mine was easy to order fully cooked through. I didn't love how buttery the caramelized kimchi was. It completely takes away from the flavor, so all I really could taste was butter. Kimchi aside, there are so many generous toppings and it really compliments the salty meat and seasoned rice. They also have a big condiment tray so you can even top your food with extra pickled veggies, sauces, and the like. My kids devoured the rice. Their packaging is fully compostable or recyclable. Wonderful addition to a fun, family friendly brewery!

Toss in some kimchi, rice, and cheese and you got yourself a fantastic meal. I was blown away by the sauce bar. They have your classic green and red salsas, but then they have an ultra spicy mayo sauce that is meant to be smothered on a burrito. The pickled cabbage is a must-add to your meal, and there are also these tiny little diced up caramelized onions that are PACKED with flavor. And they're giving those thangs out FOR FREE! I feel like I could create an entree just with items from the sauce bar. The symbiotic relationship between food truck and brewery has to be an ideal pairing, otherwise it just won't work. Mexican Seoul and Project Nine are meant for each other. But I wouldn't be surprised if this little food truck emerges from its cocoon to become a full fledged butterfly eventually. More people need to know about this gem.

Not a casual yes but not a "cancel your other plans" yes. - Chicago pizza: came with 6 slices for 2 people. Tapped out at 4.5 and entered a mild food coma so we went for a walk afterwards. I was starving going in (like thinking-about-food-for-2-hours starving) and still got humbled. This pizza is THICCKK. Chicago with green pepper = elite decision, an unexpected vegetable moment that felt almost...responsible. Mid-slice meh. Corner slice = main character energy, crispy edges, structurally superior, spiritually fulfilling. - The "green on green on green" salad surprisingly huge portion - chips and dip: literally chips. lots of chips. dip was fine. idk if i would order again. got the #3 sampler here, which included 1 quesabirria taco, 1 regular birria taco, and 1 mulita…read more This was my first time trying birria tacos, so I was pretty excited to try these out I thought these were pretty fantastic Out of the three, I thought the weakest one was the regular birria one. This one was pretty much just a regular soft taco with beef inside. I wasn't a huge fan of the taco shell, as it was a little soft. In terms of the filling, I did really like the amount of beef in there, but I thought it was kind of dry and chewy. The beef being like this was something I noticed in all 3 tacos - but it was the most noticeable in this one I really liked the quesabirria taco - that extra layer of cheese did so much for the flavor. For one, it provided another layer between the taco shell and the cheese, and second, the cheese itself was really good and there was a lot of it. Because of this, the beef inside just tasted better than the regular birria - and the shell on the outside didn't feel as soft as the first one. My favorite of the three was the mulita, which came as two small tortillas with the filling inside. the reason I liked this the most was because it was the crispiest of the three - there were actual crunchy parts to this tortilla that weren't there in the other ones. This one also had cheese like the birria, but due to the slight advantage in crunchiness it's my favorite Of course, what really brings this entire meal together is the consommé. This is just absolutely fantastic - and is the best part of the meal by far. The broth is salty, flavorful, and just adds so much to everything it coats. When dipping one of the tacos in it, I would let the consommé wash over the beef that remains, essentially liquidifying it, and this made the beef so much juicier and changed it from dry to flowing with the juices of the broth. It's hard to describe how much this enhanced the two tacos and the mulita. There's also a pretty generous amount of it Another thing I have to mention is the spicy salsa - which was incredibly flavorful. really loved that The only thing I would really say as a negative (other than the beef that I mentioned before) is that these tacos/mulita really aren't crunchy at all. I wish the tortillas would've been fried more to really get that crispiness that I prefer in tacos - an oil coating on the outside would've also helped. I also usually don't mention this in my reviews, but the person at the front desk was amazing! For the price of about 15 dollars, I would say this is relatively decent - however, while the portion size looks big, it's not really that filling

I'm usually a fan of a smaller, curated menu because it suggests care in sourcing and execution. But for us, the execution just didn't land. Everything is served family-style, but the portion sizes didn't justify the price point. We started with the sourdough and butter spread, and it was a letdown right away. The bread was hard as a rock, and the butter--while sounding interesting--came slightly burnt and didn't feel worth $11 for two pieces. Next was the albacore tuna tostada. As someone who travels to Mexico City often, I was genuinely excited for this. But it leaned heavily on avocado, with barely any tuna to balance it out. For $25 and only two tostadas, it felt pretty stingy. The rapini quesadilla sounded promising but ended up tasting mostly like broccolini and mushrooms--nothing that really stood out or justified the dish. We finished with the 21-day dry-aged steak, which, at $59, felt like it should've been a highlight. Unfortunately, it missed the mark. It came out essentially raw, which I didn't mind in theory, but it was incredibly chewy and lacked flavor. It was difficult to cut and even harder to enjoy. The tortillas were nice, and the demi-glaze had potential, but overall it just didn't come together. Even the refried beans on the side were underwhelming--something you could easily find done better at a casual spot. On the bright side, the mezcal margarita with a tajín rim was excellent--well-balanced and probably the highlight of the night. And the service was warm and attentive, which I appreciated. But overall, for the prices and the hype, this place just didn't do it for me. Maybe we ordered wrong, but I've had much better elsewhere. I hate to say it, but I probably won't be back.
