You tell them what you want, they grab the appropriate size ball of dough and ask you what kind of meat. The funny thing is, the person pulling your tortilla off the cast iron comal is not the same person rolling out the dough. So you always get asked twice what kind of meat. I have no clue why the first person asks what kind of meat since they don't let the person 6' away know what kind of meat I would like.  That being said, go there for the tortillas if nothing else.
