Fast forward to the next day, sore legs and all, I still wanted this as my post-race meal, so I placed a to-go order knowing that this would be the best option for me to get food right away. When I got to the Thousand Oaks area, I wish I had more time to have my meal properly, sitting down at the restaurant, but I took my order back to my car and chowed down quickly so I would have enough time to get to the airport. My vegan chicken and waffles were essentially a Belgian waffle topped with fried oyster mushrooms, accompanied with syrup and a side of mixed fruit. I couldn't stomach the fruit, but I the oyster mushrooms posing as chicken were delicious!! Especially with syrup on top. The waffle could have been thicker and crisper, as the one I was trying was soft in texture like a thawed out frozen waffle. Next time I am in Cali, I would love to stop by and have a sit down meal properly inside the restaurant. It was such a gorgeous day for brunch and while I couldn't take in the full experience, I am glad I enjoyed a delicious meal.

We'll definitely be adding this spot to our regular rotation!
