Overall, a decent place. There was a good variety on the menu, it was clean and not terribly noisy and the staff was nice. I had combo (beef and chicken) fajitas and the beef was good (a little on the dry side) and the chicken left a lot to be desired. The chicken was as very thinly sliced white meat = dry and rubbery, hard to chew and no real flavor. Hubby had the beef quesadilla, it looked good and he said it tasted good too. Why have the name Don Carbon if it's not what you serve? Carbon - food should have a flavor of either charcoal or mesquite. Heck any type of wood. But the food is clearly cooked on a griddle. I really like this places food. Today I tried their chicken fit bowl. It has assorted veggies in it and comes with a "sauce" that smells amazing and a little citrusy. It goes very well together. Their menu seems to have something for everyone. The only reason I gave it 4 stars is they have a habit of waiting to clean tables off making the place look dirty and 3 of their foundation drink flavors have been out for months. I feel like they should be able to fix it or change the layout. Overall, I will totally eat here again..just know if you come they will clean the tables, it just takes time. read more

So I been debating going here for YEARS... But I wasn't sure I'd like it and didn't wanna spend money and hate it and the thing is most places I get grilled chicken is WAY over cooked to the point of burnt and I just didn't wanna risk it. But I love grilled bone in chicken. My dad used to make one or two chickens a weekend over charcoal and wood chips on a barrel Bbq pit and we'd have chicken all week. Not a lot of seasoning needed, just salt and pepper and smoke and fire. But could a "fast food" type place capture that same essence and cure my cravings?? Well I'm here to say Don Carbon Mesquite Grill CAN and did. I've been back a couple of times now. Turns out they have a ONE PIECE BREAST, for $5 with tax. Comes with salsas, tortillas, and a toreado. (Is that right?? It's a roasted jalapeno) the Chicken Breast is a really nice size, no scrawny bird. Good smoke and char on the skin and part of the meat. I got one that was about over charred, and very BLACK and toughened that area of meat but the next time I went the chicken was perfect. I wouldn't call it juicy, it's not, but it's not DRY. It's a nice tender chicken, helped by being on the bone and basted by the melting fat from the skin. There doesn't appear to be a bunch of seasoning that I could see or taste. The Mesquite wood fire and slightly smokey flavor is all this grilled bird needed anyway. The salsas are a red fiery hot one similar to Valentina Hot Sauce. Too hot for me! But the Green Salsa is a fresh crushed jalapenos and tomatoes and cilantro salsa. Depends on the jalapenos on the heat level apparently because one time it's super hot and another one its not nearly as hot but super flavorful. The third "salsa" is just a weakly pickled red onions. They could use a bit more vinegar in their pickle brine, but they are ok. And the roasted Jalapeno, has not been hot any time I've gotten it, which is fine with me! It's like having a bit of green chile to eat along with your bird. You also get about 4 warm SQUARE CORN TORTILLAS. I guess this is so you can tear your bird apart and make tacos with the salsas. That's fine I guess, but I just put butter in them and are them with my bird, as I tire pieces of it off and dipped in the salsas or added a bite of roasted jalapeno. In any case, for $5, this is a perfect lunch or quick meal for one. They have a combo meal with 3 chicken pieces, two sides, all the salsas, the toreado, the tortillas and a drink for $12.97 + tax. Now thats not bad, but that's really all for an individual. All other combos and the way they sell their sides is large family size meals. They also have fajitas, beef and chicken and some sandwiches and things but I think their mesquite grilled chicken is the main draw, and it's on point. And they have a drive thru so it's a quick fresh meal and you never leave the car. I just think they need to sell individual sides as well as the family size ones. They have rice, beans, macaroni salad, and others. An they need to watch not over charring that chicken just a bit... I'll definitely be back thru .... read more

And clearly I'm not the only one who was ready to relieve their Don Carbon frustrations because this place has been freakin jam packed, you literally have to park in an adjacent empty dirt lot because there's almost never any parking. 2 Stars for my 2 Pieces of Chicken Usually you hear about "2 for the price of 1" but in Don Carbon on Gateway East, you get "1 for the price of 2"... I was stoked when I drove by the place and it was not packed, ordered what I got before, the #4 - two piece combo with two sides and for some reason i wanted to try out their burgers and Tres Leches cake. I requested to have my chicken with all white meat and I requested for chicken breast, the girl made sure I know there will be an EXTRA CHARGE, it's understandable and to be expected, what chicken joint don't do that? The bill came out to be about $22, and when I got home I realized why they had to charge me extra for my request. Apparently at Don Carbon they painstakingly take 1 piece of chicken breast and cut it exactly into 2 symmetrical half and served it to me, JUST TO MAKE SURE I had 2 pieces of chicken breast, exactly how i wanted it. With this lesson learned, I wouldn't want to trouble the restaurant to go out of their way for me anymore even though I paid extra for this delicate request process. read more

As always, this locally owned business hits it on the nose. The chicken is ALWAYS delicious on point. The charro beans and French fries are worth the visit alone and I've never eaten anything that wasn't good enough to order again. The family, with the dad and his food recipes and the brilliant daughter with her amazing design and well thought out layout of the restaurant make this one of my favorite places in town. Areas of improvement imo? 1) Better parking (which they are working on, but I had to park across the street at Circle K because of the full lot and when I came inside half the tables were empty) 2) Speed of service at the Point of Sale is always terrible and slow. If they could make it somewhat more efficient that'd be awesome. 3) That drive through should be solely for pick up orders. I've called ahead before and been stuck sitting behind someone in the drive-thru without the employees in the window asking the person in front to pull around while they finish making an order. Just a thought. (Or maybe have a designated parking spot for orders that'll take longer like McDonalds) 4) Don't change anything about the food and decor. I ordered the mixed fajitas , mediocre and honestly taco tote and taco cabana are 5 star plus in quality and product compared this franchise tasting food. One never wants food to remind them of that word franchised... but this plaCe tasted franchise. The rice the charro beans same . Taco cabanas rice is way more authentic in taste texture and appearance. The square corn tortillas nothing more than slide of hand from the mediocrity of the Meal. Ok so I kept hearing how great this place is and luck would have it I was passing by and my tummy was growling! Drive thru it is. Although everyone raved about this place no one ever told me what they recommended. I decided to get a 3 piece with 2 sides. What sides?! I went safe and asked for macaroni salad and fries. The wait takes a while but all the signs tell u that it'll be a bit of a wait bcz they're making it as u order. Got home and got a fry yum! Seasoned fries not fresh but frozen but they were ok and plenty. The macaroni salad is macaroni and peas with corn it was good but needed some kind of seasoning. The chicken? Now that was goood! I liked the grilled flavor and the seasoning was finger licking yum. The salsas were just the right amount of spicy and those pickled onions added the right amount of wow this is good. The tortillas were square whaaat?! That was different and they were good they didn't tear up or get mushy. Will I be back?
