typing this at 2:46am because i can't stop thinking about dinner. we are always on the hunt for quality sushi around town and we've come across a couple places that have taken our breath away. but this place took our sushi virginity away again. it gave my husband chills and my face was cramping with fish in my cheeks because i was smiling so hard. so listen up, my sushi connoisseurs, this one's for you: i'm talking about fish & rice imported from Japan. soy sauce is THEIR soy sauce not like store bought kikkoman. fresh wasabi grinded from the wasabi plant right before your eyes (our first time seeing that). i had to stop mid conversation just to watch. we eat SO MUCH fish and we also love to try new things-- with that being said Chef Jae introduced us to an eel called anago NOT unagi LOL. phenomenal. we didn't even know we ordered it. our waitress said "today's special" and we said "yeah let's do it". the atmosphere, service, and food was truly exceptional. we got one app, one roll, and the rest were nigiri. Chef Jae prides herself in offering quality EVERYTHING. we sat at the bar, which we highly recommend so you can witness the level of care and passion she has for what she does. that also goes for the rest of the staff. they displayed better service than many fine dining places on the strip. from the moment we walked in the door, we felt welcomed. prices may catch you off guard at first but when you take that bite, you know exactly why. thank you for introducing yourself and sharing your origin story! we will be back Chef! read more

Absolutely loved our experience here! The restaurant itself is beautiful, with a modern, upscale atmosphere that feels perfect for a date night or girls' night out. It definitely feels more elevated than your typical sushi spot, and the service was amazing from beginning to end. We ordered the miso soup, crispy Brussels sprouts, wagyu beef tartare, crispy rice with salmon, Treasure Box, and Beyond Rainbow Roll, and everything was delicious. You can really tell Chef Jae put a lot of thought into designing each dish, not just in terms of flavor but presentation too. Everything that came to the table felt intentional. The Treasure Box was the star for me. The presentation is gorgeous and it really feels like an experience when it arrives. I will say that it was quite a bit smaller than I expected based on the photos I had seen, so keep that in mind if you're ordering it to share. That said, it was absolutely delicious, beautifully presented, and still one of the highlights of the night. I also loved the Beyond Rainbow Roll, especially the real blue crab in the center. The fish tasted fresh, the different flavors worked really well together, and it was such a pretty dish. And then there's the lychee martini... dangerously good. We chose one close to the sushi bar so we could watch the chef work. We reviewed the menu and picked a few items. My wife went more Al a carte while I chose the premium sashimi platter I started with miso soup, and the presentation is really cool, comes in a little egg bowl. My wife got several pieces of sashimi, including the golden eye special, wagyu and yellowtail. We split the king crab roll. The premium sashimi platter is 6 different fish, 3 pieces each. It was all very good and included some fatty tuna. The crab roll was amazing, may be one of the best things I've ever eaten. So soft and delicious The uni toast was to die for. Just incredible Wife loved all her sashimi, everything is prepared perfectly and looks like art. For dessert I got the viral strawberry shortcake and the mochi dessert. Ice cream on an Oreo covered in a mochi blanket! Both were delicious Have a limited bar menu, wife got the wagyu old fashioned and I got a saki Only negative was service at the end. We were in the Southwest area and in the mood for sushi so, we went to Doanburi. Uni Toast: 2 pieces, housemade brioche, crème fraiche, chives. So creamy without tasting briny. 5/5 Salmon Crispy Rice: 6 pc, sweet soy glazed, spicy aioli, garlic chips. You can get other crispy rice variations: avocado or tuna. The rice seemed sticky. 3/5 Jewelry Box: Chef's choice of sushi so, what kinds of sushi you get is always a surprise. For mine, I got nigiri: ama ebi, salmon, otoro, scallop, yellowtail; tuna roll; castella cake; wakamomo. The common issue was the rice - it was falling apart. 3/5 Japanese Wagyu Nigiri: It's not the most tender wagyu I've had, honestly. I didn't get the fatty mouthfeel and flavor. 3/5 Surf and Turf Roll: Lobster tempura, asparagus, wagyu on top, and chimichurri aioli. It has a nice smoky flavor. Personally, I don't prefer restaurants that serve food similar to other restaurants but arranged artfully and priced higher. As a result, Doanburi is not for me. But it could be for you. I think you will love it if you are willing to pay for artistic presentation. If you are not, you will likely find it quite good but overpriced. I did not like sitting at the drink bar. The seats are high end and very comfortable. I looked at the sushi counter but decided against because I wanted to sit higher. I sat at the far left side of the bar. This was a big mistake. There was a napkin folding station out of sight in front of me so the waitstaff could not really get to me easily. To my left there was some kind of electronic station set up that made me feel a little like I was sitting in a staff area. I think I just happened to pick the one place in the restaurant where no one should sit. I also picked the bar because I like having an ever present bartender. But this bar didn't have one. The staff just rotated through. I was the only person at the bar, and the staff really did a good job of rotating through. But it felt a little dead. I think Doanburi is doing exactly what it has set out to do. It's a really good restaurant for customers who will appreciate the artistic elements and happily pay for them. After seeing the prices on the menu, though, I can understand why a certain level of service is expected. I prefer a more welcoming atmosphere, and this felt a little too stiff. Perfect spot for date night when she can wear her tallest heels since there is plenty of parking out front. Seabass lettuce wrap- what a creative and tasty way to use those ingredients! Get this as a starter for sure. Truffle Wagyu gyoza- thin wrapper and juicy meaty filling. My husband said it's the best gyoza he's had in a while, perfectly crispy on the bottom. Tiger roll with the tempura shrimp- I get some form of this roll everywhere I go. This is the first place where the shrimp in the middle came hot and stayed crispy! The roll is so perfect with small bite sized pieces, how sushi should be and not these burrito sized rolls people try to pass off as sushi . Crab roll in soy paper - I would pass on this next time. The nigiri rice was hard, unlike the sushi rice, so we stopped ordering after the foie gras, ikura and aji. However the protein was all fresh and high quality. Such fresh fish and fantastic execution on the food! The treasure box was amazing. All the cuts felt like they just came out of the ocean. The raw shrimp, toro, bits of pickled daikon, small flowers, iruka, tamago pieces, perfectly prepared sushi rice all coming together in delicious spoonfuls. We inhaled that lickety split. The scallop roll was so balanced from the butteriness of the avocado to the ratio of rice on the roll and the yummy scallops. The seabass butter lettuce cups were a great starter. You can feel all the textures and delicious seabass. I would love to come back to try more appetizers and rolls, while getting another treasure box. The wait for food was longer than we typically expect during non peak meal hours but the food was well worth the wait. For reference, we arrived at 3:45 pm on a Friday and our treasure box didn't arrive until 25 minutes after we ordered. We did the get the appetizer before that. We also finished inhaling the treasure box before our roll came. It's a fancy feel in the restaurant so I can understand relaxed dining pace. Service was great. The setting and atmosphere at Doanbui are absolutely gorgeous--the ambience is definitely 5 stars. The staff was also attentive and welcoming, which had me looking forward to an amazing meal. Unfortunately, the food was just okay and nothing particularly stood out to me, especially considering the price. I also feel the menu could offer more variety. If you're dining with friends or family where some people may not eat fish or have seafood allergies, there aren't as many options as I would expect from a restaurant this popular. I always want to see local restaurants do well and support our local businesses, but I think this place could use some improvement in the food, add a few more protein for those with allergies and overall value. So....uh..... this is the best sushi I've ever had. Normally I'd write a longer review but simply but this sushi is really, really amazing. Every piece of sushi I had put in my mouth tasted like it was carefully prepared, particularly the quality of the ingredients. Each piece of fish tasted like it just came out the sea, every bite of rice had the perfect resistance and amount of vinegar. If you normally go to places like Sapporo sushi or ayce sushi you end up thinking paying anything more than $30-40 a person is enough and sushi doesn't get much better than that. You would think $80 is kind of steep if you're used to regular sushi spots in vegas, but if you want a delicious experience that can make you breathless for a second, come to Doanburi. Well it does. My wife and I were very excited to try this new spot for her birthday! Luckily when we came it was a week day night and not super busy. For starters the ambiance was very relaxing, and welcoming. We were immediately welcomed in and seated right away by our server Robin. We started with the Beef Tartare and Tuna crispy rice. First off the freshness of the beef tartare and the tuna right off the bat was phenomenal. You can tell they use fresh and quality ingredients. We ate so many different nigiri pieces as well as a few rolls. This was easily the best rainbow roll I've ever had. The fish on it was top tier. They have plenty of tables and bar seating available. We came for a 3pm reservation and here's what we ordered and what we thought! Jewelry Box: SO good!! Every piece of nigiri was so flavorful and fresh. Everything about each nigiri was perfect, chef Jae definitely picks a great cut of fish. I loved the wakamomo that came with as well, so addicting. Wagyu beef tartare: Personally, I would skip this next time. Could not really taste the wagyu at all. The peaches added a nice texture to the dish though, and I did enjoy the nori chips. Shiromi carpaccio: SO good!!!! The yuzu vinaigrette made the greens so delightful, and paired excellently with the fish. Sea bass butter lettuce wraps: SO good as well. I could've ordered this twice. The sea bass has such great flavor in this dish. Crispy rice w/ salmon: These were good, pretty standard as far as crispy rice goes. The other two apps above were my favorites for sure. I really wanted to love this place. It's a newer restaurant and the space is beautiful. You can tell a lot of thought went into the design. The food presentation was also really nice, especially the chirashi. For me, though, the price just didn't match the overall experience. The portions were pretty small, the menu felt limited, and the sushi rice could have had more flavor. At this price point, I was expecting a little more. I also wish there were more variety and options on the menu like mocktails, a better tea selection, some salads, and a few more protein dishes would have been nice. And with donburi being part of the restaurant's name and concept, I was surprised there weren't more creative donburi options. There's so much competition in the area, so having a few really unique or signature bowls could help give this place its own identity and make you want to come back specifically for something you can't get elsewhere. As for the price, I typically don't mind paying more. However, usually at a higher price point, you're also paying for the atmosphere and that feeling of being somewhere you'd want to go for a birthday, date night, or special occasion. The restaurant wasn't very full when we went, so it felt a little quiet and was missing some of that energy. Since they're still new, I think there could have been little things they could do to make the experience feel more personal too. Even having the chef come by the tables or sharing a little about the story behind the restaurant and the concept would add something special. I really do hope they succeed because the space is beautiful and there's definitely potential. I just left feeling like the food, portions, menu selection, and overall experience didn't quite justify the price yet compared to other restaurants in the area. read more

We stopped here for a quick bite of sushi on the way home from the airport, and what a great find! This place was definitely happening on a Friday night. The service was fantastic, and the quality of the fish, along with the beautiful presentation, was equally impressive. They're definitely doing it right here.
