Dined at 4:30 on Saturday. Six adults. Our waitress, Olivia was such pushy always upselling with subtle pressure. While a restaurant may like this, it soured all six of us to ever return, btw, out bill was near $900. The food was awful. Two of us had the lobster tail, which arrived cold, not even room temperature, cold, although it was supposed to be grilled. The person who order very rare filet, received medium, the person who ordered the rib eye said his steak was very tough although it also was supposed to be rare. What a wonderful place for a romantic date night. The Old Basil cocktail was so refreshing and delicious. The steaks were perfectly cooked, tender, and full of flavor. My husband had the Akaushi New York Strip served medium rare with Peppercorn sauce, creamed spinach and brussel sprouts. The sides were so delicious! I had the Petite Steak Burrata presentation and taste were great! The service was second to none which created a wonderful dining experience. went here while in waco, it was awesome! we got the shrimp cocktail for an appetizer, one of the best in my life, they have specials, i was tempted to get the ribeye, but i did not. they gave us these fried hollow bread pieces with butter on the side, they were so good! ordered ravioli, and a 8 oz steak. + truffle fries, waited an hour and a half for our food, it was worth it, the ravioli was awesome, it even had caviar on it, my steak was so good, i was tempted to get that banana thing that they cook in front of you, i was way too full. service was awesome and nice. prices are...lets not talk about it, would definitely recommend this place for special occasions! read more

Walked in after reading reviews, to realize I have been duped! DiamondBack's is attempting to be a steakhouse, seafood restaurant, sushi restaurant, and casual restaurants all at the same time!!! They fail in everything! Literally I have never dined in a restaurant that wants to cater to just about every market segment until DiamondBack's. You can snack on sliders and drink beer for under $10. You can also eat sushi for under $20. One can also order Italian dishes for $20-$30, or fish for $30-$40 and steaks for $50-$60. The problem-well there is no dress code. You might be in shorts, hat and flip flops while next to you person will wear a suit or wrangler jeans with suspenders! That kills the idea of fine dinning! Second, the quality of dining experience is lost when you cater to broad audience. Bread is not served unless you order an expensive entrees, and appetizers are made sloppy as the end customer is not known. Calamari plate was half calamari half fried peppers!!! Third, the restaurant tries to keep down its inventory, so for example they only use red wine glasses. Red wine-you get the correct glass. White wine the same type of glass as red wine. Water-the same type of glass as red wine. My waiter ended up pouring water into my white wine as he could not tell the difference. If you spend $20 that might be fine, but if your bill is in hundreds of dollars such things are not acceptable. All in all, perhaps there is no market in Waco for a separate steak house, but the idea of Diamondback's is worthy of a cartoon movie!!! read more

Called to make a reservation and the recorded message instructed you to visit the website to make a reservation. I then went to their site and went through all the steps of creating account for their reservation system, selected a time and number of guests, and then sent to a page that showed the previously entered info. At that point I thought we were all set. Get there and no reservation in their system. I explained the copious amount of steps I went through to setup the account and reservation. They acknowledged the long setup process, yet there was nothing they could do. Apparently there were even more steps after all those I had already done to officially confirm the reservation. I suggested they consider a different reservation system because it's not very user friendly. The response was, "Yes, this situation happens to us at least 3 times a week. Sorry we're full". The restaurant looked lovely and smelled wonderful, so if you are interested in eating there learn from my mistake make sure you get a confirmation email. We had recommendations about this place and we're in town for family weekend in Baylor. We had a reservation so we sat down quickly. The Caesar salad was really good as was the bread that she brought to the table. I got the lobster bisque. It was good, but could've had more lobster for the price. My son and I shared the Wagyu ribeye that was really really good. I asked the waitress if the fries were freshly cut and she said yes, but that was not true. The fries had to be from a frozen bag. Hello Yelpers! My wife and I are on our 25th year of wedded bliss. This year we're traveling to different places we've thought would be fun, so off we go to Chip and Joanna land. Waco Texas! I figured my dear wife could use a good steak and Margarita. Hence Diamondback's! Nice location, located on Mary street, with excellent parking. Step in the doors and it's dark, and nicely private. We had arrived almost an hour early, and were rather surprised and delighted to be offered early seating by Laura (we figured we'd sit at the bar)! Jesse, our most excellent server, offered us our choice of waters, asked about food allergies (!) and made suggestions. They brought us a rather comprehensive spirits list, and took our orders. We each had our preferred beverage, and they were delicious. We started with the Nueske's Bacon with Balcones Whisky Reduction, and the jumbo blue crab cakes. Goodnight. I'm full already. We each ordered the slow roasted prime rib, and then the bread arrived... my wife is gluten free and they offered gluten free bread! I forewent the popovers... ok I had 2 bites. They are great, but then I tried the gluten free rolls. Woah, nelly. Most gluten free bread is like choking down slightly damp sawdust. These are awesome! Nice touch of salt, very tasty, and good flavor! The salad starters were amazing, house for her, wedge for me. We easily polished those off. Oh. My. Sweet. Aunt. The steaks arrived and seriously drool worthy. We have arrived. Clouds opened, angels sang... its fantastic. The sides of Yukon Gold Potatoes and the bacon green beans are out of this world. We went to Diamondback's right at opening on a Saturday afternoon. The waiter was very knowledgeable and helpful with recommendations. Shared some interesting anecdotes about famous people that have been through the restaurant. We had the bacon appetizer which you should definitely order. Slab of bacon with a glaze of some sort drizzled on top. Excellent option. Steaks were well seasoned and cooked perfectly. Sides were really good especially the au gratin potatoes. Bar tender was attentive, friendly, knowledgeable, and makes great drinks. Sides where large portioned but well made. The BREAD was worth coming back for all by itself! The staff was friendly and the food was all-around good; however, It is definitely on the over-priced side which is likely the reason as to how we were able to get in on traditionally one of the busiest nights to find a table. Such a beautiful restaurant with Edison style lighting and a lot of dark wood features. We made a reservation to play it safe on a Friday night and we got a big booth table that was so comfortable and romantic. Our server seemed off and we were wondering the whole time what was going on with him. He was very nice and informative, but he seemed like he was either overwhelmed or got thrown off by us being in his section. It made it a little uncomfortable and a constant wonder throughout our dinner service. Our food was delicious! I had the prime rib and my husband had a ribeye. Both were delicious, tender and clearly very high quality. The Cesar salad that came with our entree was good, croutons were very good and the pop overs that came with our salads were divine! We also ordered one of the steakhouse sides, mashed potatoes, and they were very creamy and flavorful. With that said, it was very expensive! I was turned away at the door several weeks back because of "IT issues" and "only the ability to seat those with reservations" when the restaurant was at half capacity. I wrote a negative review and someone immediately reached out to me to attempt to make it right. I was impressed with the promptness, I wasn't asking or looking for anything and was offered a gift card. I (without being ask) was compelled to delete my negative review. However the gift card never showed up so now they let me down twice! I was in town seeing my kiddo at Baylor a few days ago and they wanted "steak" and it made me think of this place. I was visiting from out of town with some of my girlfriends. The atmosphere was quite nice and the hospitality was awesome. I do feel like it was a tad overpriced. The truffle fries were $16. I ordered the miso salmon on a bed of crab rice. The salmon was cooked perfect and the rice could have had more crab. When my food came out the rice was not hot, but the salmon was. I didn't complain as I was enjoying the company of my friends more. The salmon also was a little too sweet for my liking and I requested a side of siracha. The drinks are strong and good. read more

The steaks were "ok," but we've had better at Texas Roadhouse. The salmon, which is chef 101, misses the mark twice. The crab fried rice...the crab is canned crab and had crab shells in the rice. The venison was mediocre. The sea bass was the best dish and would recommend it. The ambiance is really nice, but the non stop "birthday" sparklers was tiresome and interferes with the mood in the room. Premium price, but mediocre food... good service though read more

Greetings Waco Diners. I am local and have greatly enjoyed Diamondbacks a number of times over the past few years and I know times are difficult due to COVID so I will try and be sensitive to that. This review is intended to motivate improvement. I saw the Tuna Tower was back in the menu and decided to take my wife back to Diamondbacks for a romantic birthday dinner. We sat down, ordered drinks and a Tuna Tower. The drinks were perfect and have always been great, however the Tuna that was brought to the table was simply brown in color and did not smell fresh either. We love Tuna and are very familiar with what fresh Tuna looks and smells like. I have read other complaints on Yelp about the Sushi here and mine seems to match (though it has been great in the past). So of course we decide to send it back and try something else. It is visually obvious the Tuna did not look fresh at all and our waiter (who was amazing) said no problem and decided to take the Tuna over to the manager who proceeds to walk the dish back over and tell us that the Tuna was fresh and that it was the color it was supposed to be and he had eaten it himself for which my wife feels the need to apologize to him and explain herself to him why she does not want to eat brown Tuna. I think you get the point. And then in the middle of * my wife's * apology and explaining why she won't eat it he decided to simply walk away. So we are sitting there for about 10 mins with fresh drinks with another appetizer ordered trying to determine is if there is another place in Waco we can get a steak. We typically really enjoy this place, we don't even expect every dish to be a 10 but this experience was a real bummer and the blame seems to be on the management. The sea bass was very salty, and the steaks were just ok. I've had similar if not better at Outback, tbh. Upon receiving the bill, I realized that I was charged $11 for the two olives in my martini, which was mostly vermouth. For the price, I cannot say it was worth it.
