We had to cancel our original vacation plans due to COVID-19, so we instead we are visiting towns we like and having a really nice dinner in each town. I really hope Waco has better to offer than DiamondBack's. My husband ordered his steak medium-well. The first clue to the chef and the waiter should have been the blood on the plate when it was served. I saw it and immediately said, your steak is not cooked properly. They took the steak back to cook it more and it still came back medium (though parts were still too rare for him to eat). The "charred" broccoli did not have any char. It seemed to be steamed, and not very steamed at that. Much was almost raw. The five cheese macaroni and cheese had very little flavor and was dry. The best part of the meal was the rosemary popover bread. For a meal that was over $200 I expected much more. read more

We decided to try DiamondBacks's for our anniversary and we weren't disappointed! I was able to easily make a reservation online. I had notated it was for our anniversary and they had a card and a rose waiting at our table. We had the gulf shrimp appetizer which was perfect for 2 people. The herb crusted prime rib was AMAZING and cooked to perfection. I was hoping to get a glass of Merlot with my dinner, but that wine is only sold by the bottle and I don't need that much wine. This place is AWESOME!! Let's start with the location - beautifully lit brick and mortar strip of restaurants in central Waco. You walk inside and it's romantically lit with the most comfortable booth chairs ever. It's perfect for a fancy date!! We didn't want to break the bank so we ordered a small appetizers of fries. I got the California roll and my boyfriend got the Mixed Grill. The fries were perfect - crispy and well seasoned. It was a huge serving too! The complementary bread was delicious too. It had rosemary and a to-die-for crust on the roll. I wish I could have taken a dozen home. My boyfriends salad was small but good. Now we get to the best part. His Mixed Grill is absolutely what you should try! The salmon was glazed well, the filet was a perfect medium and super tender and the venison wasn't gamey at all. My sushi was "ok" but honestly everything else made up for it. I would recommend the sushi artist include more avocado but I loved the consistency of the rice and the amount of crab. Our waiter - Kobe - was a perfect gentleman. Got us everything we needed but gave us our privacy to enjoy our date. He was personable and shared a little bit about himself too. He's a great guy!! Amazing food! The hotel recommended this place and is literally right across the street. The staff is accommodating and the food was on point. I had the fish, house salad that felt like a premium one to be honest, and some truffle fries. My friend had the venison and lobster bisque. Salads and sides were excellent as was the service. The manager came over and made sure everything was A-OK. The So-So: The bartender served shots which were deadly accurate, and by that I mean exactly one ounce. He might as well have been using an eye-dropper. I'm used to a slightly heavy pour when ordering at a class restaurant. Warning: The place is very expensive, especially for Waco standards. I love this place for everything but the sushi. Was super excited to try the sushi here for the first time due to the half off specials on Wednesday. I was surprised to discover that they had no salmon on the menu but I settled on a California and a tuna based roll (diamondback roll.) I did read on the menu that the diamondback roll was going to be deep fried. However, I did not realize how much the fried flavor would resemble funnel cake at the local fair. The flavor profile of the tuna was obliterated by the amount of cream cheese the chef crammed into the roll. Furthermore, I could tell that the tuna was not cured properly as it smelled and tasted off (I know my fish and sushi as I worked at the finest Japanese fish market in LA). The California roll was alright but it was not blended polluck which I personally was hoping for. I would not recommend the sushi. I would however recommend the main menu as it has a southern fine dining flair with elegant entrees, side dishes, dessert, and phenomenal old time atmosphere. For an appetizer we had the Deep Fried BBQ Oysters and lets say delicious. I had the Pecan Crusted Red Snapper topped with crab and OMG amazing. We had heard great things about this restaurant and were excited to give it a try on a recent midweek trip to Waco. We arrived without reservations and had a wait as we expected. We spent our time in the bar and had a top notch experience with the bartender. I wish I had gotten his name. Truly top notch. Once we were seating at our table in the restaurant, things went down hill quickly. Our server was inattentive and slow. He seemed completely bothered by us. We were not in anyway difficult with very straight ahead orders and drinks. The restaurant was busy for a week night but by no means crazy. The food itself was delicious and prepared wonderfully. We have been going here for the last 20 years and have enjoyed the experience. Although I do think asking you to pay for sides when your entree is so expensive in the first place is a bit rich. We ordered cocktails and an appetizer an entree each and the house salad to come with the entree. We got our cocktails followed by this lovely puff cheese things that were very reminiscent of Yorkshire puddings then our entree. Half way through our entree the house salad came. We have always loved their house salad. Not this time. Talk about hunt the blue cheese. I think we each found one tiny piece each , a bunch of greens two thin slices of apple some walnuts and dressing. Very disappointing for a restaurant of this caliber. Had party of 15 last night-December 5. Everything was first class- from the greeting by hostess and introduction of our wait staff at arrival of our party. No detail was overlooked by Michael and our server Kaley. We could not have asked for better service! The food-from appetizers to desserts- was amazing! Kudos to the chef. a week agoNEW I am more than willing to pay for a great meal and service, but Diamondbacks is far from either. Extremely overpriced and ridiculously bad service. The order was incorrect, not very well prepared, and the service was abysmal. To start, The server brought the wrong drink order. We had one Maker's Mark and one dirty Stoli martini with extra olives. What was brought to the table was to well martinis with no extra olives, and as they took one of them away, we grabbed an olive. We were charged for that extra olive that we grabbed from a martini that was more than likely poured out. I then found out that they charged extra for the martini because it was extra dirty.... All that means is more olive juice. WE WERE LITERALLY CHARGED A SIX DOLLAR UPCHARGE FOR MORE OLIVE JUICE! I was at a chain steak house a week ago that was infinitely better across the board. I would not recommend this place. Their representative responded on Google reviews. He is either not truthful, or his staff is not very knowledgeable. When we asked the waiter about the ridiculous price of the martini, he literally responded that it was because we ordered it, "We ordered it extra dirty." As far as it being Titos vodka, really not being truthful. What little bit was in there was not definitely not Titos and certainly not worth 20 bucks. read more

Great service, nice ambience, and good quality if a bit overpriced steaks. We happened to be in Waco on my birthday this year and this was a solid option for sure! My big criticism is that the wine list was ridiculously overpriced. Normal restaurant markup is always expected, and I've ordered plenty of nice bottles at nicer steakhouses all over the US, but I've never seen $45 bottles (Moët or Veuve) marked up to 4 or 5x the retail price, which is just plain disrespectful to customers in my opinion. Adjust prices to a more industry-standard markup and you'll probably start selling a lot more wine. $12 bottle of Kim Crawford for $75 was honestly hilarious. Cheers. read more

I've always loved the decor at Diamondbacks, and at Christmas time it's extra special. Ron was our waiter & did a great job. I met my friend in the bar and we began our evening with drinks and happy hour appetizers. Those are usually a good deal. We had the beef ribeye nachos and the California roll. Both were very good. We each had the Caesar salad. It was OK. Rosemary Popover Rolls-maybe just not my thing. My friend had the Sea Bass which was excellent . Moist, perfectly cooked, really,really good. Highly recommended. I had the Jumbo Lump Blue Crab Cakes. They were not too bad. Small for the price. Not much Jumbo Lump. Spicy, but tasty. We shared the truffle fries & they were tender inside, crispy, cooked perfectly!! They were on the happy hour menu. All in all, it was a good dinner. Shared a 12oz filet stuffed with crab and lobster on a bed of asparagus, topped with lobster and jumbo shrimp. Good steak and prepared correctly and toppings were great. Good wine selection. Excellent service! Steer clear of the Brussels sprouts (too much vinegar) and the chocolate blossom dessert (unless you are a choc-a-holic). All in all not gonna make my top 10 prime steakhouses because of the value but a solid steak in Waco! read more

3.5 Stars THE GOOD. The atmosphere and decor in Diamond Backs is excellent, it caters to a very nice date night. They also have a very impressive wine selection. Off the bat I will say this a place that you need to visit, I am bummed that I wasn't able to give 4-5 stars for a hometown restaurant but it is definitely a restaurant you need to try for yourself and I will be going back to explore some more menu items. Service was top notch, they could not have gotten much better. The lobster mac and cheese is simply amazing. Everything that you want in mac and cheese with good lobster on top. Very creamy, very indulgent, I would seriously just order a lobster mac to go and eat anytime without breaking the bank. My wife ordered the salmon and she said it was very good, I do not have a taste for salmon so I will take her word for it. Probably my favorite thing was the savory turnovers that they gave us for a free app. They were little pockets of rosemary and a melted white cheese, I would assume Mozzarella and Parmesan. I would also come back just for these and a glass of wine. Mashed potatoes were also delicious, and if you were wondering yes we over ordered and were only able to eat 3-5 bites of everything. THE NOT SO GOOD. Here is the reason they lost some stars...and if this was not a $50-75 dollar a person restaurant I would not be this hard on them. I ordered pecan crusted red snapper with lobster on top. The fish was well cooked, the topping was well done but the fish was just not seasoned. This unfortunately made the whole dish fall a little flat. Such a bummer because red snapper is such a good fish. I was excited about the calamari, I really like the way they present it; simply fried with lemon to squeeze over. However it come out with a very soft crust that is not adhering to the fish which makes this very unpleasant. Any fried item is ruined when it does not come out with a crispy crust in my opinion. HUGE props to the restaurant here though, the waitress saw that we did not eat much of the calamari and I told her about the mushy crust and the restaurant removed it from the ticket. I do not send food back on small things like this because I understand the work that goes into this so I really appreciated the service here. Overall I recommend this restaurant, I really want to go back and try the country fried venison. From the beginning of our dining experience, this was a 5-star night! We arrived a few minutes before our reservation and were promptly seated. Our server was on the ball, and we were ordering drinks and salads within minutes. The salads were delicious (one Caesar and one House) and perfectly dressed. The main courses were ready at a great pace from our salads. My wife had a petite Filet, and I had the New York Strip. They were cooked perfectly to order and seasoned amazingly!!! We also enjoyed the Au Gratin potatoes and the Green Beans, topped off by the Red Velvet cake dessert. If we make it back to Waco, we will definitely be back! Took my wife there for our anniversary, and from making the reservation to dessert, the service was excellent. We both had an appetizer, ribeyes, salads, sides, drinks from the bar, and dessert. All of the food was very good. They weren't the best steaks I've ever eaten in my life; however, I'm a total steak snob, and that's why they got only 4 stars(cost vs value), but they were better than a vast majority. The total bill before tip was a little under $400. Our waiter was a badass, and definitely justified a 20% tip. Sadly, I don't recall his name. First visit to this restaurant. Found it to be "decent". Food was good, not excellent, service was competent and courteous, and ambiance was okay, but not luxurious. We live in the Dallas area and frequent MANY high-end steakhouses and fine dining establishments when home, so maybe not an entirely fair comparison, but when the prices are the same as many of the best Dallas-area steakhouses I'm going to hold them to the same standards. For Waco, TX. I don't doubt that is one of, if not the finest restaurant in town, but they fall way short of a four or five star Dallas area steakhouse. Three stars in my opinion. read more

I sincerely don't understand some of the poor reviews. My husband and I went last night for a drink and appetizer. We sat at the bar, where the bartender was warm and friendly. I tend to ask a lot of questions about the menu and he answered them all patiently and honestly. I got a specialty drink and my husband beer. The drink was delicious!! We ended up splitting a meal of chicken fried venison that came with a spinach stuffed enchilada and a side salad. It was all wonderful!! Delicious, well cooked and beautifully presented. We finished with a dessert that although seemed a weird little concoction, was amazing - red velvet cake ball with cheese cake and cookie crumble. We were a bit skeptical, but tried it on the recommendation of the bartender and couldn't have been happier!! It was luxury in every bite.
