Today is my 61st birthday. I came with my son to have a wonderful dinner at the bar. I requested the sommelier to come over to recommend a nice bottle of wine to accompany our steak dinner. The bartender said he refused to come over because he only speaks to large parties. I was willing to spend $600 on wine and dinner tonight. I have traveled the world over and my wife and I have eaten at Michelin rated Restaurants. I have never had a sommelier refused to come to my table. Maybe because I had on a cowboy hat and jeans. I was willing to tip him well!Welcome to Texas! I paid for my drinks with no tip and left. Service was very marginal at the bar. The restaurant was virtually slow and so was the service. I lived in Waco 40 years ago going to college. It seems it has changed like the rest of the world. Service sucked! The bartender told me he was training another sommelier. Hopefully he did not teach the trainee this method of taking care of your client that pays your bills. Hopefully the new trainee will take his job.! Our server Addie was wonderful! My husband and I orderoff the Featured Steaks that were Aged. My Bone-In Filet was excellent! My husband ordered the Ribeye. He described it as ' nothing special'. Our salads and side were really good. We each had a cocktail, and a bottle of wine with our meal. Are you ready for this? My husband glanced at the bill when we got home. We were actually charged for the two olives in my Martini. Never in our travels have we been charged for olives in a Martini. I guess there is a first for everything. read more

The server presentations were great but and a very big but she took 20 plus minutes to take our order. Then I ordered the dry aged ribeye and half of it was burnt to a crisp. Come on now if I am going to pay that much for a dry aged steak at least it should be cooked properly. Had a Texas size ' "Beef. It's what's for dinner." ' moment and needed a great steak. Reservations at DiamondBack. Without a doubt this was a five star experience. From ambience to food to service, it was all excellent. Lobster Bisque and House Salad for starters. Split a Bone-in Cowboy Rib Eye with Au Gratin Potatoes and Brussel Sprouts as sides. All delicious. But that steak! Holy moly. Perfectly cooked to medium temp, tender, juicy. Wow. We were absolutely stuffed, but every time that damn dessert cart went rolling by, we rubber necked to see what was on it and what each table ordered. We split the chocolate tower that was a three layer monstrosity that included mousse and cheesecake all covered in dark chocolate. Another big, wow. And our server, Tyler, was terrific. First i would say that the service was wonderful. The ambiance was also fairly nice. However, the food was nothing to write home about. They started by telling that the steak was their specialty. I always think it's funny when places want you to make a reservation and you get there and you still have to wait and then they walk you to your table and there's tons of empty tables. I get it, there might not be enough servers but that's the scheduler's fault. You know they can afford to put more servers on the schedule. We had the Calamari appetizer, I've had better. The batter wasn't cooked all the way and fell of the squid. The side Caesar Salad was extremely small but tasty. The Wedge Salad was good. For entrees we had Sushi, Chicken Parmesan and Chicken-Fried Venison. They were also good. We had a glass of wine and beers. A place like this, I think should have tap beer but they only had bottles. We didn't have desert but they looked good and all of them were really big portions. Service was good. We of course considered having steaks since it's a steakhouse but they were so expensive, we got other items. I get it, it's a high end steakhouse but come on, between $60-$140 for a steak, only, please. Especially, since I can buy grass fed meat myself. I know you're also paying for the ambiance and service too, so I can see going to a place like this every once in a while. A Texas style steakhouse- solid steak and a jumbo baked potato side. Both of our steaks were cooked perfectly with a nice char to them. The mushrooms were well seasoned but a little overly buttery for my taste. We tried the pressed sushi roll and it was okay... kind of large pieces that feel apart when you tried to eat it. Dinner at DiamondBack's was one of the best meals I have ever had, which is really saying something coming from a vegetarian at a steak place. The cold heirloom tomato soup was drizzled with a delectable pesto olive oil, perfect on a hot summer day. I had never heard of carrot soufflé before and it was amazing. Think of the creaminess of mashed potatoes combined with the fresh taste of carrots, topped with sage butter. The charbroiled broccoli was good, but the star of the show was my husband's garlic asparagus. My husband enjoyed his wedge salad and thought his summer steak was just the right size steak for the end of a busy day and a big meal. Even though I couldn't imagine eating another bite, I'm not sorry we ended the meal with the warm, gooey goodness of the chocolate lava cake. So many times I anticipate making do with a baked potato or side salad when I take my hubby out for his meat fix. I could not have been more delighted with Diamondbacks. To start we ordered the colossal shrimp cocktail & they were so good. The wine menu is brought to you on an iPad so you can get a little information about each one. Some really great choices. The puff pastries with rosemary and butter were to die for. Please get the lobster bisque & dip the pastry in it. Those 2 belong together. The wedge is kinda half a wedge really but the house made blue cheese dressing was delicious. I ordered the petite steak burrata and the steak was perfectly cooked & seasoned well. Had to end with bananas foster being from Louisiana but omg this bananas foster will give Brennans a run for the money. It's a little different and I loved it! From our server grabbing the last 4 gluten free dinner rolls just for me to the manager going down half of the menu advising me on what to order, my dinner was fantastic! The steaks looked beautifully cooked as well and my mom said she loved the lobster bisque. Drinks were excellent (I had the Autumn Fizz), sushi appetizers were huge and we weren't rushed through our meal. Dined at 4:30 on Saturday. Six adults. Our waitress, Olivia was such pushy always upselling with subtle pressure. While a restaurant may like this, it soured all six of us to ever return, btw, out bill was near $900. The food was awful. Two of us had the lobster tail, which arrived cold, not even room temperature, cold, although it was supposed to be grilled. The person who order very rare filet, received medium, the person who ordered the rib eye said his steak was very tough although it also was supposed to be rare. The person who ordered the salmon said it was fine. Not a single side was delivered warm; the meal was awful! The alcoholic drinks were fine. Most miserable meal that lasted 3 hours. Miserable.
